Isaiah's Tasty Reduced-Fat Tuna Salad image

Less fat and more flavor! My favorite way to serve this sandwich is with a slice of tomato, a slice of avocado, and some lettuce, on toasted rye bread. The pickles and dill are key to the fabulous taste - The more sour the pickles the better (cornichons are great for this). You can try substituting a smaller amount of dried dill if you don't have access to fresh herbs.

1 (6 ounce) can solid albacore tuna in water
1 stalk celery
2 tablespoons finely diced sour dill pickles
1 1/2 tablespoons mayonnaise (real mayo, preferably Hellman's)
1 tablespoon lemon juice
1 teaspoon Dijon mustard
2 teaspoons fresh dill, minced
fresh ground black pepper (generous amount)

Steps:

  • Drain tuna. With a fork, break it up in a bowl into the size and texture you prefer (I like to leave some chunks - others prefer it totally mashed).
  • Add all the other ingredients and stir until fully combined.
  • Serve cold, in a sandwich or over a green salad.

1/4 cup chopped onion
2 tablespoons sweet pickle relish
1/2 cup finely chopped apple
1/2 teaspoon tarragon
2 teaspoons Dijon mustard
1/4 teaspoon black pepper
1/4-3/4 cup mayonnaise, use whatever amount to taste

Steps:

  • Place tuna in a large bowl and flake well with a fork.
  • Add all remaining ingredients (start low with the mayo and work up to desired amount.
  • Mix well.
  • Chill for at least 2 hours for best flavor.

Even with all the great Tuna Salads on Recipezaar, I did not see this one. My husband raves about it, and I do too. We eat this on toasted bread and lettuce, as well as on crackers; it would also make a great filling for pita bread or wraps. Hope you like it.

2 (6 ounce) cans chunk light tuna, well drained (or white albacore)
2 1/2 celery ribs, with leaves finely chopped
1/2 medium red onion, chopped fine
1 tablespoon dill relish (rounded)
1 tablespoon sweet pickle relish
1 lemon, zest of, very finely chopped
3/4 cup mayonnaise
1/8 teaspoon liquid smoke (very scant, I use Wright's Hickory Seasoning Liquid Smoke)

Steps:

  • Note: do not pour the liquid smoke directly from the bottle into the tuna mixture, as it comes out quick and is very concentrated (and will easily ruin and overpower your tuna salad) The smoke flavor is meant to be very subtle.
  • Be sure to drain your tuna well.
  • Mix ingredients together and serve as sandwiches or spread on crackers (I like Triscuit or Ritz).
  • Refrigerate any leftovers.

1 cup chopped canned artichoke heart (or use marinated artichokes)
1/2 cup chopped ripe olives (black or kalamata is good)
1/3 cup mayonnaise (to taste)
2 teaspoons lemon juice
1 1/2 teaspoons chopped fresh oregano (1/2 teaspoon dried- or try thyme for a change)
1 tablespoon chopped fresh parsley (optional)
sliced tomatoes (otpional)
lettuce leaf (optional)

Steps:

  • Combine tuna, artichokes, olives, mayonnaise, lemon juice, oregano and parsley, if using, in a medium bowl. Stir to mix well.
