COFFEE CAKE
1 c all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
!/2 c sugar
1/2 stick butter, unsalted
1 egg
1/4 c plain yogurt
1 tsp vanilla extract
2 c thinly sliced peeled cooking apples
TOPPING
1/4 c all-purpose flour
1/4 c brown sugar, firmly packed
1/2 tsp cinnamon
1/2 stick butter

Steps:

  • 1. Preheat oven to 400 degrees. Spray 8' sq. pan with cooking spray.
  • 2. In a small bowl combine 1 cup flour, baking powder, baking soda, and salt; mix well and set aside.
  • 3. In a large bowl combine 1/2 stick butter and sugar; beat til light and fluffy.
  • 4. Add egg and vanilla and blend well.
  • 5. Alternately add flour mixture and yogurt to butter mixture, beating well after each addition.
  • 6. Spread batter in sprayed pan. Arrange apple slices over batter.
  • 7. In a small bowl, combine all topping ingredients. With a pastry blender cut in butter until crumbly.
  • 8. Sprinkle topping evenly over apples.
  • 9. Bake at 400 degrees for 25 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes. Enjoy!
