I'm not a fish eater but many of your seem to like salmon. So here is an Irish version of Salmon Cakes.

Number Of Ingredients 15

1 lb yukon gold potato, peeled and cut into 2-inch pieces
1 lb salmon fillet
1/4 cup milk
1 teaspoon dried tarragon
1 teaspoon fresh parsley, chopped
salt & freshly ground black pepper
1 egg, beaten
flour, for dredging
1/2 cup plain breadcrumbs, for dredging
1 egg, mixed with
1 tablespoon water
vegetable oil, for frying
lemon slice, to garnish
parsley, to garnish
sour cream or creme fraiche (to garnish)

Steps:

  • Put the potatoes in a large saucepan, cover with salted, cold water and bring up to a boil.
  • Cook until tender, 12-15 minutes.
  • Meanwhile, put the salmon in a large, shallow skillet, season lightly with salt and pepper, and cover halfway with water or white wine.
  • Bring to a boil and reduce to a simmer to poach.
  • Cover with a lid.
  • Turn one time when halfway through cooking, and cook until opaque in the center.
  • Remove from the pan and set aside until cool enough to handle.
  • Remove skin (if it is on) and any bones.
  • Flake the fish into medium-size chunks.
  • When the potatoes are cooked, drain and return to the pan.
  • Mash with milk while still hot to a fluffy, even consistency.
  • Add tarragon and parsley.
  • Fold in the salmon.
  • Season to taste.
  • Once cooled, add the egg and mix again. Chill for at least 10 minutes before forming the patties.
  • Shape the mixture into 8 to 10 evenly sized cakes.
  • Lightly dredge in flour, pass through the egg wash and then dredge in the breadcrumbs.
  • Heat the oil over medium high heat in a large, nonstick skillet.
  • Add the patties, being careful not to crowd them, and cook in batches.
  • Turn when cooked to a golden brown.
  • Count on about 3 to 4 minutes per side. Drain on paper towels and serve immediately, garnish with lemon slices, parsley and a dollop of sour cream or creme fraiche.

2 slices bacon, chopped
1/2 lb white potato, washed but not peeled
1 cup cheddar cheese, finely shredded
1/2 cup quick-cooking oatmeal
2 ounces smoked salmon, diced
2 teaspoons horseradish
salt & pepper
1 egg, beaten
1 whole wheat flour, for dredging
oil (for frying)
1 cup whipping cream
2 -3 tablespoons horseradish

Steps:

  • In small pan, cook bacon until lightly browned but not crisp, approx 3 minute
  • Coarsely grate potatoes into large bowl.
  • Add the bacon, cheese, oats, salmon, horseradish, and salt & pepper.
  • Add egg and stir to bind together.
  • Form into 8 small potato cakes and dust with flour.
  • The recipe does not call for them to be pan fried, however my sister did.
  • About 5-10 min each side, then served with sauce.

1/4 pound speck, or bacon, cubed
4 large russet potatoes
1 tablespoon chopped fresh thyme
Freshly ground black pepper
1 tablespoon all-purpose flour
Vegetable oil, for frying
2 tablespoons butter
Salt
12 slices smoked salmon
Salad, recipe follows
4 tablespoons creme fraiche
1 teaspoon honey mustard
1/2 lemon, juiced
1 teaspoon grated horseradish
1 tablespoon minced fresh cilantro leaves
1 tablespoon minced fresh chives
2 cups mixed salad greens, such as dandelion, radicchio, and rocket
Freshly ground black pepper
Lime wedges, for garnish

Steps:

  • Heat a large non-stick skillet over high heat. Add the speck, or bacon, to the hot pan. The pan needs to be very hot so that the speck is crispy. When cooked through and crispy, remove the speck and let drain on paper towels.
  • Grate the potatoes on a mandoline adjusted to the julienne setting. Do not grate them ahead of time, or they will turn color. Wring the potatoes out with your hands to get rid of excess moisture. In a medium bowl, combine the shredded potatoes, thyme, pepper, and speck mixing with your hands. Add flour to the mixture to bind it. Form the potato mixture into 4 patties.
  • In the same skillet, add enough oil for frying, plus the 2 tablespoons butter. Heat over high heat until oil is very hot. Add the potato cakes, making sure there is at least 1/2-inch between them. Cook for several minutes on each side, until golden brown and crispy on all edges, and cooked through in the middle. The amount of cooking time will vary based on the thickness of the potato cakes.
  • Remove potato cakes from oil and let drain on paper towels. Season with salt while hot.
  • In a medium bowl, whisk together the creme fraiche, honey mustard, lemon juice, and horseradish. Add the cilantro and chives, and stir to combine. Just before serving, add the salad greens to the bowl, and toss.
  • To plate, put 1 potato cake on each of 4 plates. Top each potato cake with 3 slices of smoked salmon. Add a pile of greens with dressing on top of the salmon. Sprinkle salads with pepper, and garnish with lime wedges on the side.

Delicious salmon cakes made with potatoes and the added color of red bell pepper and green onion. I enjoy a simple garlic mayonnaise to accompany the cakes but you can pretty much use whatever you desire. These turned out great and definitely became an all-time favorite.

3 medium potatoes, peeled and shredded
2 eggs
salt and pepper
1 teaspoon italian seasoning
1/2 lb cooked flaked salmon
3 green onions, chopped
2 tablespoons capers, drained
1 red bell pepper, seeded and chopped
3/4 cup chopped canned banana pepper
3/4 cup sliced fresh mushrooms
3/4 cup dry breadcrumbs
1 cup oil (for frying, or as needed)

Steps:

  • Squeeze as much liquid from the potatoes as you can, and place in a large bowl. Beat the eggs with salt, pepper, and Italian seasoning, and mix with the potatoes. Mix in salmon, green onions, capers, red bell pepper, banana peppers, mushrooms and bread crumbs. Form into about 12 patties about 3/4 inch thick.
  • Heat 1/4 inch of oil in a large heavy skillet over medium-high heat. Fry the patties for about 3 minutes per side, or until golden brown.
  • Drain on paper towels quickly before serving.
  • Try to fry all the patties at one time, otherwise the mixture becomes stiff.

POTATO'N SALMON CAKES

Quick easy recipe to make after a hard day's work. For the mashed potatoes use plain cooked potatoes mashed with no added ingredients. Just cook extra potatoes the night before and take out what you will need for this recipe. If you want a little spice add 1/2 tsp hot pepper flakes I like a bit of Tartar sauce and a green salad along side or a couple of steamed vegetables. Great summer dish. This recipe goes a long way from one small can of salmon. I would like to stress use leftover cooked potatoes not left over mashed potatoes that already have got a lot of extra ingredients in them!

1 (213 g) can salmon, skin & bones removed (I prefer sockeye but in this recipe pink is fine too)
1 1/2 cups left over mashed potatoes
1 egg, beaten
1/2 cup flour
salt & pepper
3 tablespoons parsley, chopped
4 tablespoons onions, minced
3/4 cup fresh breadcrumb (Panko are best)
vegetable oil cooking spray, for frypan (or if you wish use butter mixed with oil for really crisp cakes but watch the calories go up)

Steps:

  • Mix all the ingredients except the bread crumbs, stir well.
  • Form into 6 cakes.
  • Coat with crumbs.

You could substitute the potatoes with carrots, beets or other root vegetables, or you could play around with more tender vegetables like zucchini or fennel, though you'd need to slice them more thickly and reduce the cook time in Step 1. Likewise, halibut, cod or another white fish can be used instead of salmon. The bright horseradish sauce keeps the salmon moist and gives this dish verve, pairing horseradish's peppery punch with tangy sour cream and fresh herbs.

  • Heat oven to 400 degrees and liberally grease a 9-by-13-inch glass baking dish with butter. Slice the potatoes paper-thin (less than 1/8-inch thick) and line the dish with the potatoes, slightly overlapping them as you arrange them in an even layer. Season generously with salt and pepper, dot with the shallots and bake until the potatoes are almost cooked through, about 20 minutes.
  • Meanwhile, prepare the horseradish-tarragon sauce: Add the sour cream, prepared horseradish, 2 tablespoons each tarragon and chives, white pepper (if using) and 1 teaspoon salt to a medium bowl and stir to combine. Refrigerate. (This makes about 1 1/3 cups.)
  • Sprinkle the salmon with the paprika and season with salt. Remove the dish from the oven and gently place the salmon on top of the potatoes. This is a Mrs Dash recipe and they are quick & easy to prepare. I made them in the morning and put them covered in the fridge all day. I cut back the Mrs Dash spice to 1 tbsp. They are very tasty - I used fresh new peas instead of frozen - they give a nice texture. and served them with Tartar sauce Fried them up 10 minutes before serving A very inexpensive recipe
