IRISH KERRY CAKE (ZWT3)
A simple, delicious cake for you to bake for your family from County Kerry, Ireland. From "The Good Housekeeping International Cookbook Official World Fair Edition (1964)". May be made early in the day or at least 1 1/2 hours before serving.

Steps:
- Preheat oven to 375°F.
- In a large bowl, cream butter and sugar.
- Beat in eggs, one at a time.
- Stir in lemon rind and diced apples.
- In a small bowl, sift together flour, salt and baking powder; fold into butter mixture until well blended.
- Grease an 8x8x2 inch baking dish.
- Pour batter into prepared baking dish.
- Bake about 30 minutes or until golden, and cake tester, inserted in center, comes out clean.
- Cool, cut and serve.
- Nice served slightly warm with vanilla ice cream.

Steps:
- Melt the butter and mix into the potatoes with the salt.
- Work in the flour quickly but thoroughly and knead lightly.
- Divide in two and roll out each half on a floured board to form a circle about the size of a large dinner plate.
- Cut in quarters (farls) and cook for about 3 minutes on each side in a heavy frying pan in a little bacon fat.
KERRY APPLE CAKE
I went to a luncheon today with a St. Patrick's Day theme and the hostess made this wonderful apple cake. Her Irish daughter-in-law provided the recipe.

Steps:
- Cream the butter and sugar.
- Add eggs, one at a time, beating well after each addition.
- Add vanilla Fold in flour.
- Grease and add parchment paper to a 9 x 13 pan.
- Peel and slice the apples.
- Place apples in rows on the batter.
- Bake at 350° degrees for 25-30 minutes.
- When cool, sprinkle with powdered sugar.
- Serve with whipped cream.
