Dubliner Stuffed Chicken With Irish Bacon and Cabbage image

8 ounces dubliner cheese
4 boneless chicken breasts, with skin
1 cup plain breadcrumbs
1 tablespoon italian seasoning
salt & freshly ground black pepper
2 eggs, beaten
6 slices traditional irish bacon, cut into 1/4 inch strips
2 tablespoons cooking oil
2 onions, sliced
2 cloves garlic, finely chopped
2 cups shredded savoy cabbage
2/3 cup chicken stock or 2/3 cup canned low sodium chicken broth
2 tablespoons light cream or 2 tablespoons half-and-half
10 tablespoons kerrygold irish butter

Steps:

  • Preheat oven to 400°F Grease a baking sheet.
  • Grate half the cheese and cut the rest into thin slices.
  • Gently lift the skin from each chicken breast and insert the slices of cheese under it.
  • Press skin down to seal.
  • In a bowl, combine the bread crumbs, seasoning, salt, pepper, and grated cheese.
  • Place the beaten eggs in a shallow dish and dip the chicken breasts into it.
  • Dredge in bread crumbs and bake on prepared baking sheet for 35 to 40 minutes, until lightly browned.
  • Meanwhile, in a medium skillet, cook the bacon over medium heat until crisp, 5 to 7 minutes.
  • Drain on paper towels.
  • Reserve.
  • In a medium saucepan over medium to low heat, heat the oil.
  • Sauté the onions and garlic until the onions are translucent, 3 to 5 minutes.
  • Add the cabbage and mix well.
  • Add the stock or broth, bring to a boil, and cook, stirring frequently, until the cabbage is tender.
  • With a slotted spoon, transfer the cabbage to 4 heated plates.
  • Keep warm.
  • Boil the cooking liquid until reduced by half.
  • Add the cream or half-and-half and cook to reduce by half again.
  • Whisk in the butter, Strain the sauce and add the reserved strips of bacon.
  • Slice the chicken breast onto the cabbage and pour the sauce around it.

4 large potatoes, peeled and chopped
1 tsp dried thyme leaves

12 oz guinness stout
1/2 lb mushrooms, small whole

Steps:

  • 1. Heat oil in a large skillet over medium heat until hot. Add onion, celery and garlic; cook and stir 3 minutes or until tender. Remove vegetables with slotted spoon to a small bowl.
  • 2. Arrange chicken in single layer in skillet. Cook over medium-high heat 5 minutes per side or until lightly browned.
  • 3. Add onion, celery, garlic, carrots, parsnips, potatoes, thyme, salt and pepper to the skillet. Pour stout over chicken and vegetables. Bring to a boil over high heat. Reduce heat to low. Cover and simmer 35 minutes.
  • 4. Add mushrooms and corn to skillet. Cover and cook 10 minutes. Then uncover skillet; increase heat to medium. Cook 10 minutes longer or until sauce is slightly reduced and chicken is no longer pink in center.

2 ½ teaspoons paprika, divided

3 (5 ounce) skinless, boneless chicken breasts, cut into chunks
2 tablespoons olive oil
1 (8 ounce) package sliced portobello mushrooms
1 medium onion, chopped
5 medium potatoes, quartered
5 medium carrots, cut into 1-inch pieces
2 stalks celery, cut into 1-inch pieces
3 cloves garlic, whole
1 (16 ounce) can lager beer
1 tablespoon Worcestershire sauce
1 (14.5 ounce) can chicken broth
4 ounces tomato paste
1 tablespoon poultry seasoning

Steps:

  • Mix flour, 1 1/2 teaspoons paprika, salt, and pepper together in a medium bowl. Coat chicken with the flour mixture, reserving 1 tablespoon for cooking.

1 average sized russet potato, peeled and diced
3 stalks of celery, minced
5 oz crimini mushrooms, cut into quarters or eights
1 medium onion, minced
1/3 cup fresh Italian Flat Leaf parsley, minced
1 lb boneless, skinless chicken thighs
vegetable oil for frying
3 Tbsp. butter
1 pinch salt
1/2 cup flour
3 cups chicken broth
2 tsp. chicken bouillon
1 tsp. fresh ground black pepper
1/4 tsp. white pepper
1 cup cream
2 sheets of puff pastry, 1 box
3-4 Tbsp. melted butter for brushing pastry
11 mason jars (1/2 pint size wide mouth)

Steps:

  • Set the sheets of frozen puff pastry out to thaw on a floured board. Cut carrot, potato and celery into small bite sized pieces. Place in a tall microwave safe bowl and add enough hot water to cover by about 2". Microwave on high for about 15-18 minutes or until the veggies are fork tender. Drain when cooked and set aside. Meanwhile prepare the rest of the ingredients: Cut the mushrooms into eights. Set aside. Peel the onion and dice it. Set aside. Mince the parsley and set aside. Wash the chicken. Trim any large chunks of fat off and discard. Cut into bite sized pieces. A kitchen scissors works well for this. In a 10 cup capacity skillet (preferably cast iron) cook the chicken with some oil on medium-high, stirring frequently until the pieces are cooked through. Set aside in a bowl. Preheat the oven to 400 F. Add the butter, onions and pinch of salt to the skillet and cook on medium-high for about 3 minutes until golden, stirring frequently and adding oil as needed. Turn the heat down to medium. Add the mushrooms and cook an additional 3 minutes, stirring often. Add the drained veggie mixture and the flour. Cook for 1 minute stirring continuously. Stir in chicken broth, parsley, chicken, black pepper, white pepper and chicken bouillon. Bring to a boil stirring continuously and continue to cook until mixture has thickened slightly. When the mixture has thickened, turn off the heat and stir in the cream. Taste and adjust salt and pepper as desired. Use a mason jar to cut out rounds of puff pastry: Place the jar upside down on the pastry and press down firmly. Move the jar back and forth rapidly until a circle of pastry is cut out. Repeat until you have 11 circles. Use a sharp knife to make an air slit in the pastry circles. Use a measuring cup to scoop ⅔ cup of filling into each jar. Wipe any drips off the rims of the jars with a wet cloth. Top each filled jar with a circle of pastry. Brush the pastry with melted butter. Place jars in a large casserole dish (my big rectangular Pyrex is perfect) and fill the dish with water about 1" deep. This is the correct way to bake in mason jars. Bake in a preheated oven for 25-30 minutes until the pastry is slightly brown and the filling is bubbly.

1 pastry for a 9 inch single crust pie
1 (4 pound) whole chicken, deboned and cut into bite size pieces
4 slices cooked ham
4 leeks, chopped
1 onion, chopped
salt and pepper to taste
1 pinch ground mace
1 ¼ cups chicken stock
1 tablespoon milk
½ cup heavy cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a 1 1/2 quart casserole dish, layer the chicken, ham, leeks and onion a couple of times each until the dish is full. Season each layer with a little salt, pepper and mace. Pour the chicken stock over the layers, and dampen the edges of the dish.
  • Roll the pie pastry out large enough to cover the top of the dish, and place over the top. Crimp the sides down with a fork, and trim the excess from the edges. Cut a round hole in the center of the pastry. Roll dough scraps out and cut into strips. Use the strips to form a design, and place lightly over the hole. Brush the entire top with milk.
  • Bake for 35 to 45 minutes in the preheated oven, until chicken is cooked through. If the top crust is getting too brown, cover it with parchment or aluminum foil. While the pie is baking, heat the cream over low heat. When the pie is cooked, remove from the oven, and carefully remove the design from the hole. Pour the cream into the hole, and replace the design. Let stand for a few minutes before serving.

Then cut up once they are lightly cooked -ie not pink! 2)Steam 1-2 cups Broccoli, steam until al dente Arrange chicken and broccoli in dish (a small lasagna pan will work or cake pan). Mix 2 tins Campbell's mushroom soup into a bowl and add 4 tablespoons of mayonnaise. If you don't have mayo, add a little flour, marg and mik. Add teaspoon of mild curry powder, 2 teaspoons of lemon juice and add some milk. Mix it together (should be consistency of soup) and then pour over chicken and brocolli. 5 (5 ounce) skinless, boneless chicken breast halves
1 cup coarsely chopped bacon
5 slices provolone cheese
3 tablespoons water
8 red potatoes, cut into 1/4-inch thick slices
⅔ cup heavy cream
½ pound shredded mozzarella cheese
5 slices bacon
1 ½ pounds fresh green beans, trimmed
2 fluid ounces Irish cream liqueur
¼ cup heavy whipping cream
½ cup chopped peanuts
1 tablespoon butter
1 (6 ounce) package sliced fresh mushrooms
5 fluid ounces Irish cream liqueur
⅔ cup heavy whipping cream

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Slice a pocket in thick side of each chicken breast.
  • Spoon about 2 tablespoons of chopped bacon into the center of a provolone slice; fold cheese around bacon and stuff into a chicken breast. Repeat with remaining chicken breasts.
  • Arrange stuffed chicken breasts on a baking sheet and sprinkle with water.
  • Bake in the preheated oven until the chicken meat is no longer pink inside, the bacon is cooked, and the provolone cheese has melted, about 1 hour.
  • Cover potatoes with water in a saucepan and bring to a boil. Cook over medium heat until potatoes are tender, about 15 minutes. Drain well.
  • Heat 2/3 cup heavy cream in a saucepan over low heat; stir in mozzarella cheese and melt. Pour mozzarella cheese mixture into the saucepan with potatoes and toss to coat.
  • Place 5 slices of bacon into a skillet over medium heat and cook, turning occasionally, until bacon is just starting to brown but is still soft, about 5 minutes. Drain fat; transfer bacon to a plate and allow to cool until easy to handle.
  • Wrap 1 bacon slice around 10 green beans and secure with a toothpick; repeat with remaining bacon slices.
  • Place green bean bundles in the skillet and cook over medium heat until bacon is browned and crisp and the green beans are tender, about 10 minutes; turn often.
  • Pour 2 fluid ounces Irish cream liqueur and 1/4 cup heavy whipping cream into the skillet with green bean bundles over low heat; spoon over green bean bundles. Sprinkle with chopped peanuts.
  • Melt butter in a skillet over medium heat; cook and stir mushrooms until most of the liquid has evaporated, about 10 minutes.
