BAMI GORENG (INDONESIAN VERSION OF LO MEIN)
My grandmother was born in Indonesia and growing up we awaited the next time she would make Bami Goreng- "Fried Noodles." She made it with pork, but since I no longer eat pork I substitute chicken here. This is the basic version. You can add any vegetable you like. I add tiny frozen peas and carrots for color, or red or yellow bell pepper thinly sliced using a mandolin.

Steps:
- Stir fry chicken in wok in oil on medium-high heat.
- Add leeks beansprouts and cabbage. Stir fry until cabbage wilts. Add next 7 ingredients.
- Simmer until it comes together and enjoy the smell. In the meantime, fire up a pot of boiling water and prepare spaghetti.
- Throw noodles into chicken mixture. Mix and add more ketjap and/or sambal to taste. Top with fried onion (optional).
- NOTE: A tablespoon of pepper seems like a lot, but it gives the dish a nice zing!
THAI STIR-FRIED CABBAGE
I first made this because it sounded so unique. But I'll make it again and again because it's so full of flavor! My meat-and-potatoes husband doesn't like it, but I guess that leaves more for me! The recipe calls for unsweetened coconut, but I haven't been able to find it, so I just used a little less of the sweetened.

Steps:
- Mix together the lime juice, fish sauce, and red pepper flakes, set aside.
- In a wok or heavy-bottomed skillet, heat a few tbsps of oil over high heat.
- Add cabbage, scallions & garlic, & stir-fry for no more than 5 minutes, or until the cabbage is hot through.
- Add the mixture from step 1 to the cabbage, and stir to coat. Let it cook just another minute, and stir in the coconut.
- Serve topped w/ peanuts.

STIR-FRIED SPICED CABBAGE (LA-PAI-TS'AI)
This is an easy stir-fried vegetable dish that can be prepared ahead. My DH and I love its flavor and the cayenne pepper gives it a nice "kick"! Originally from the Time-Life Foods of the World Series, The Cooking of China.

Steps:
- With a sharp knife, trim the top leaves of the cabbage and wash them.
- Cut the cabbage into 1 by 2 inch pieces.
- In a small bowl, combine the sugar,vinegar,soy sauce,salt, and cayenne pepper and mix thoroughly.
- Heat a wok or large frying pan over high heat for about 30 seconds.
- Pour in the oil, swirl it in the pan, and heat for about another 30 seconds.
- Turn the heat down to moderate, add the cabbage, and stir-fry for 2-3 minutes.
- Make sure all the cabbage is coated with the oil.
- Remove the pan from the heat and stir in the soy-vinegar mixture.
- Transfer the cabbage to a serving platter and let cool to lukewarm before serving.
- May be served chilled, if you prefer.

Steps:
- Remove out leaves of cabbage. Cut in half and take out inner core. Slice quarters into 1 cm shreds.
- Place wok on high heat. Add oil, swirl around.
- Add ginger, garlic and chilli quickly stirring for few seconds.
- Add cabbage. Stir-fry briskly for 3-4 minutes.
- Add soy suace and balsamic and stir-fry few seconds longer.
- Serve immediately.
