Tandoori Shrimp - perfectly marinated and grilled Indian Tandoori shrimp skewers. Super easy recipe that yields the most delicious shrimp ever!

1 lb. (0.4 kg) shrimp, tiger prawn preferred, shelled and deveined, tails on
bamboo skewers, soaked in water before using
oil for basting
1/2 tablespoon chopped cilantro
1 lime, cut into wedges
1/3 cup Greek yogurt
1 teaspoon finely minced garlic
1/2 teaspoon garam masala
1/4 teaspoon chili powder
2 tablespoons lime juice
1 tablespoons oil
1/2 teaspoon salt or to taste
1/4 teaspoon turmeric powder
red coloring, optional

Steps:

  • Mix all the ingredients of the Marinade in a bowl. Stir to combine well. Add the shrimp to the Marinade and marinate for at least 30 minutes, or best for two hours. Thread the shrimp onto the bamboo skewers, set aside.
  • Grill the shrimp on a grill on both sides, until they are cooked and slightly charred on the surface. Baste with oil while grilling. Remove from the grill, garnish with chopped cilantro and serve immediately with lime wedges.

1 tablespoon tomato paste
½ teaspoon salt
1 teaspoon white sugar
1 teaspoon garam masala
½ teaspoon ground cumin
⅛ teaspoon ground red pepper
3 tablespoons finely chopped fresh cilantro
1 fresh jalapeno pepper, chopped
1 tablespoon fresh lemon juice
1 cup coconut milk
3 tablespoons vegetable oil
1 teaspoon black mustard seed
3 cloves garlic, minced
1 ¼ pounds medium shrimp - peeled and deveined
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • In a medium bowl, stir together tomato paste, salt, sugar, garam masala, ground cumin seed, ground red pepper, cilantro, jalapeno pepper, lemon juice, and coconut milk. Set coconut sauce aside.
  • Heat oil in a wok or frying pan over medium-high heat. When oil is hot, add the mustard seeds, and cook until they begin to pop. Immediately stir in garlic, and cook until garlic begins to brown. Add shrimp, and cook until shrimp is opaque; this should take only a minute or two. Pour the coconut sauce over the shrimp; cook until the sauce begins to simmer. In a small bowl, mix together cornstarch and water; stir into the sauce, and continue cooking until thick.

1 lb chicken, cut into 1 inch strips
1 1/2 cups sliced okra (can use frozen or fresh)
1 1/2 cups bell peppers, strips
3 tablespoons tandoori paste
2 tablespoons cilantro leaves, chopped

Steps:

  • Heat oil in a large, nonstick skillet until hot. Add chicken and stir-fry 2 to 3 minutes until cooked through. Remove from pan.
  • Add okra and peppers and fry 2-3 minutes until cooked tender-crisp. Add sauce and chicken and heat to simmering.
  • Serve with basmati rice.

1 cup plain yogurt
1 bunch cilantro, stems removed
6 garlic cloves, peeled
1 3-inch piece fresh ginger, peeled and cut into chunks
1/2 medium onion, peeled and cut into chunks
3 tablespoons garam masala
Juice of 3 large limes
Salt and pepper to taste
2 pounds lamb chops, chicken breasts (cut into 1-inch pieces), or shrimp (peeled and deveined)

Steps:

  • 1 In a blender, puree the first 8 ingredients until they form a paste.
  • 2 In a large bowl, toss your protein with the marinade. Chill for at least 4 hours or overnight.
