INDIAN BUTTER CHICKEN NAAN PIZZA WITH LIME & PEANUT SLAW



Indian Butter Chicken Naan Pizza with Lime & Peanut Slaw image

Naan serves as the crust for our Indian Butter Chicken pizza. We slow cooked the toppings and then added tangy slaw on top.

2 tablespoons butter
2 tablespoons vegetable oil
1 medium onion, chopped
2 tablespoons grated gingerroot
2 tablespoons finely chopped garlic
1 teaspoon ground cardamom
2 teaspoons garam masala
1 teaspoon chili powder
1/2 teaspoon ground coriander
2 dried bay leaves
1 can (6 oz) tomato paste
1 can (14 oz) light coconut milk
2 lb boneless skinless chicken breasts, cut into bite-size pieces
1 container (6 oz) Greek plain yogurt
1/4 teaspoon salt
8 to 10 naan breads
Shredded mozzarella cheese
1 bag (16 oz) coleslaw mix (8 cups)
1 1/2 cups roasted peanuts
3/4 cup chopped fresh cilantro
1/3 cup lime juice
3 tablespoons olive oil
1/4 teaspoon coarse sea salt

Steps:

  • Spray 4-quart slow cooker with cooking spray. In 10-inch skillet, melt butter with vegetable oil over medium heat. Add onion and garlic; cook about 5 minutes or until onion is softened.
  • Stir in cardamom, garam masala, chili powder and coriander. Cook 2 minutes longer, stirring frequently.
  • Stir in tomato paste and coconut milk. Heat until thoroughly blended. Pour mixture into slow cooker. Add chicken, yogurt and salt; stir to mix.
  • Cover; cook on Low heat setting 6 to 8 hours (or on High heat setting 4 hours).
  • To make pizzas, set oven control to broil. Place naan breads on ungreased cookie sheet. Top each with desired amount of chicken mixture. Sprinkle each with mozzarella cheese.
  • Broil until cheese is melted.
  • Just before serving, stir together all Slaw ingredients. Top pizzas with slaw.

WHITE PIZZA WITH INDIAN SPICED GREENS



White Pizza with Indian Spiced Greens image

1 to 2 tablespoons canola oil
3 cloves garlic, thinly sliced
1 large bunch greens, coarsely chopped (Swiss chard, spinach, or any combination - I used Swiss chard and removed the stems)
1 bunch fresh mustard greens, coarsely chopped
1 to 2 teaspoons hot curry powder (can use more, depends on how spicy you like it)
Homemade pizza dough or 1 (16-ounce) store-bought dough
Olive oil, for grill
8 ounces fresh mozzarella, shredded
3/4 cup shredded fontina cheese
1/2 cup goat cheese, crumbled
1/2 cup crumbled paneer

Steps:

  • Preheat the grill to 400 degrees F.
  • Heat the pan over medium-high heat and add the oil. Saute the garlic for 1 minute.
  • Add in the greens and saute until wilted. Add in the curry powder and continue to cook the greens until they start to get soft. Remove from heat and set aside.
  • Cut the dough into 2 (8-ounce) pieces. Stretch the dough out on a lightly floured surface with your hands. When the grill is at a consistent 400 to 450 degrees F (no hotter than 450), lightly brush the grill with olive oil. Place dough directly onto the grill surface. Close the grill cover and cook for 4 to 5 minutes. About 2 minutes in, open the grill and pop the air bubbles with a fork. The bottom should be brown with some charred spots but not burned or underdone. Close lid and continue cooking. Remove from grill and place on a work surface with the cooked/grilled side up.
  • Lower the heat on the grill to medium-low heat so that the cheese has time to melt and the bottom does not burn.
  • Spread equal amounts of the mozzarella and fontina on each pizza. Divide the cooked greens on top of the cheese. Place a few dollops of crumbled goat cheese over the top of the greens, then sprinkle with the crumbled paneer.
  • Lightly oil grill once more and carefully place pizzas, cheese side up, onto the grill.
  • Close the lid and let it cook slowly for another 5 to 10 minutes to allow the cheese to melt and so that the bottom does not burn. When the cheese is completely melted and the bottom is a nice even brown with some charred spots, remove from the grill to a cutting board, slice and serve.

½ cup tandoori paste
6 tablespoons plain yogurt
2 skinless, boneless chicken breast halves
6 tablespoons olive oil, divided
4 pieces tandoori naan bread
3 teaspoons spicy curry powder
1 teaspoon ground turmeric
1 yellow bell pepper, thinly sliced
1 large red onion, thinly sliced
4 (4 ounce) spreadable goat cheese
1 tomato, thinly sliced
4 ounces feta cheese

Steps:

  • Whisk tandoori paste and yogurt together in a large glass or ceramic bowl. Add the chicken and toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator for 8 hours or overnight.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Remove chicken from marinade, shake to remove any excess, and discard marinade. Cook chicken breasts in hot oil, turning occasionally, until no longer pink in the center and the juices run clear, 10 to 12 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken from skillet and shred using two forks.
  • Brush each piece of naan with about 1 teaspoon olive oil and sprinkle a pinch of curry powder over each; arrange naan on a baking sheet.
  • Bake naan in the preheated oven until toasted and fragrant, about 5 minutes.
  • Heat remaining 1/4 olive oil in a skillet over medium-high heat. Cook and stir yellow pepper, onion, 2 teaspoons curry powder, and turmeric in hot oil until vegetables soften, 5 to 7 minutes.
  • Spread goat cheese onto each naan piece. Sprinkle more curry powder over the goat cheese. Top with shredded chicken, pepper mixture, tomato, and feta cheese. Sprinkle a pinch of curry powder over the top.
  • Bake in the oven until feta is soft, about 20 minutes.

1 cup finely chopped white onion
2 to 3 serrano chiles with seeds, sliced (can use more depends on how spicy you want it)
2 cloves finely chopped garlic (about 2 teaspoons)
1 teaspoon garam masala
2 cups grape tomatoes or other, coarsely chopped and seeded
1 to 2 tablespoons fresh lime juice
1/2 cup coarsely chopped cilantro leaves
Salt and freshly ground black pepper
Homemade pizza dough or 1 (16-ounce) store-bought dough
Olive oil, for grill
8 ounces fresh mozzarella cheese, shredded

Steps:

  • Preheat the grill to 400 degrees F.
  • Heat the oil in a large saucepan over medium-high heat. Add the onions and cook until just translucent, about 2 minutes, Add in the chile, garlic and the garam masala, stirring constantly for a minute or so until the mixture becomes fragrant. Add the tomatoes and cook until the tomatoes have softened slightly, about 2 minutes. Remove from the heat and transfer to a bowl. Stir in the lime juice and cilantro. Season with salt and pepper, to taste, and mix until well combined. Reserve.

1/2 cup salsa
1/4 cup mango chutney
6 ounces baby shrimp (I prefer large chopped shrimp)
1 teaspoon curry powder
1 1/2 cups mozzarella cheese, shredded
1/4 cup cilantro, freshly chopped (I use parsley)
1 tablespoon of fresh mint, chopped

Steps:

  • Preheat oven to 425°F
  • Place naan or pita on parchment-covered baking sheet.
  • Mix salsa and mango chutney. Spread out evenly on naan or pita.
  • Add shrimp and sprinkle with curry.
  • Top with cheese and bake 15 minutes.
  • While pizzas are baking, mix together cilantro and mint; sprinkle over pizzas once removed from the oven.
