ICE-WINE SORBET WITH WHITE PEACHES



Ice-Wine Sorbet with White Peaches image

Number Of Ingredients 6

1 (375-ml) bottle ice wine (13 fl oz)
3/4 cup water
6 tablespoons sugar
4 firm-ripe white peaches, cut into 1/2-inch-thick wedges
Special Equipment
an ice cream maker

Steps:

  • Heat wine, water, and sugar in a 3-quart saucepan over moderate heat, stirring, until sugar is dissolved, then gently simmer 2 minutes. Transfer to a bowl, then set bowl in a larger bowl of ice water and stir until cold, 10 to 15 minutes. Freeze in ice cream maker. Transfer to an airtight container and put in freezer, at least 4 hours. (Texture will be soft.)
  • Serve sorbet with peaches.

Deliciously caramelized and juicy peaches with a hint of cinnamon and bourbon (or rum) make the dreamiest ice cream topping. Martha made this recipe on Martha Bakes episode 505.

4 peaches, halved, pitted, and sliced into 1/2-inch-thick wedges
Juice of 1/2 lemon
1/4 teaspoon coarse salt
Pinch of ground cinnamon
4 tablespoons (1/2 stick) unsalted butter
1/4 cup packed light-brown sugar
2 tablespoons bourbon or dark rum (optional)
Vanilla ice cream (optional)

Steps:

  • In a medium bowl, toss together peaches, lemon juice, salt, and cinnamon; set aside.
  • Melt butter and sugar in a large skillet over medium-high heat. Add peach mixture and cook, stirring occasionally, until caramelized, about 5 minutes. If using bourbon or rum, add to skillet, and cook until reduced, about 1 minute.
  • Serve immediately over ice cream, if desired.

From the television show "Man-Made Food" I was waiting for our fresh Ontario peaches to try this recipe and oooooh, how I enjoyed this wonderful dessert! Topped each dessert dish with a few leaves from my chocolate mint plant and served with some tiny crisp sugar cookies... hmm, hmm good!

6 fresh peaches, skinned, pitted and halved
1/2 cup sugar
1 cup ice wine
1 cup water

Steps:

  • In a sauce pan combine water, sugar and ice wine.
  • Simmer over low heat and until the sugar has dissolved.
  • Cook syrup for 3 additional minutes, take off the heat and set aside until needed.
  • In a glass bowl, place peach halves and pour ice wine syrup on top and refrigerate to allow the flavors to mix.
  • Serve chilled in a small bowl and garnish with a drizzle of icing sugar.
