Steps:
- Bring water to a boil, remove from heat and add tea bags. Steep for 10 to 15 minutes.
- Remove tea bags, add sugar and bring to a boil again. Refrigerate.
- To serve: add 3 to 4 parts water to 1 part concentrate (depending on how sweet you like it!).
ICE TEA CONCENTRATE
This is a recipe my Aunt Rosemarie gave to me when I was a teenager. I make this with all flavors of teas. Just make it and keep it in the refrigerator to make pitchers or to make one glass at a time!

- 1. Place water in microwave set to high. Set microwave for 6 to 10 minutes (depends on your microwave). Bring water to a full rolling boil. Remove from oven.
- 2. Remove tea bags from envelopes. Dip the tea bags into the hot water several times. Leave the tea bags sit in the hot water. Every few minutes re-dip the tea bags. You want to create a very strong tea concentration. Let cool. Remove tea bags.
- 3. OPTIONAL INGEDIENTS: Squeeze the juice from two lemons and add to the concentrated tea. Add sugar or artificial sweetner to tea mixture. Stir very well. Store in refrigerato with tight lid.
- 4. When you want a glass of tea or a pitcher of tea... place concentrate, water and ice into glass or pitcher in amount that appeals to your taste.
SWEET TEA CONCENTRATE

- Remove peels from lemons; squeeze fruit, reserving 1/3 cup. Save remaining juice for another use., In a large saucepan, combine sugar and water. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, until sugar is dissolved, 3-5 minutes, stirring occasionally. Remove from the heat; add tea leaves and lemon peels. Cover and steep for 15 minutes. Strain tea, discarding tea leaves and lemon peels; stir in lemon juice. Cool to room temperature., Transfer to a container with a tight-fitting lid. Store in the refrigerator for up to 2 weeks., To prepare tea: In a tall glass, combine water with 1/4 cup concentrate; add ice.

- Bring water to a boil in a large pot. Add mint leaves and steep for 15 minutes. Remove tea leaves from water with a slotted spoon, squeezing leaves to extract any additional liquid; discard leaves.
- Stir sugar into steeped tea; return to a boil and cook until sugar is completely dissolved and flavors combined, about 10 minutes. Pour tea concentrate into freezer-safe containers and freeze.
