1 tablespoon cornstarch
½ cup water
1 ¼ cups blueberries
1 tablespoon lemon juice
2 ¼ cups graham cracker crumbs

1 ½ cups white sugar
1 (3.5 ounce) package instant vanilla pudding mix
4 cups heavy whipping cream
2 cups milk
2 teaspoons vanilla extract

Steps:

  • Combine 1/2 cup sugar and cornstarch in a small saucepan; gradually stir in water until smooth. Stir in blueberries and lemon juice; bring to a boil. Reduce heat to low and simmer, uncovered, until slightly thickened, about 5 minutes. Cover and refrigerate until chilled, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine graham cracker crumbs, 2 tablespoons sugar, and cinnamon in a large bowl; stir in butter. Pat into ungreased 10x15-inch baking pan.
  • Bake crust in preheated oven until lightly browned, 10 to 15 minutes. Cool completely on a wire rack, then crumble crust.
  • Whisk 1 1/2 cups sugar, pudding mix, whipping cream, milk, and vanilla extract in a large bowl. Fill ice cream freezer cylinder two-thirds full. 8 cups whole milk
4 large eggs, lightly beaten
1 package (8 ounces) cream cheese, cubed

2 cups heavy whipping cream

Steps:

  • In a heavy saucepan, combine the sugar, flour and salt. Gradually add milk until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; cool slightly., Whisk a small amount of hot milk mixture into the eggs; return all to the pan, whisking constantly. Cook and stir over low heat until mixture reaches at least 160° and coats the back of a metal spoon. Stir in the cream cheese until melted., Remove from the heat. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Stir in vanilla. Press plastic wrap onto surface of custard. Refrigerate for several hours or overnight., Stir strawberries and cream into custard. Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer's directions. Steps:

  • Blend all ingredients until smooth. Chill ingredients for about 1 hour, or until cold.

Steps:

  • Make the cookie crust: Line 2 baking sheets with parchment paper.
  • In a large heatproof bowl, microwave ½ cup butter until melted.
  • Add the granulated and brown sugar, and mix with an electric hand mixer on low speed until well combined and creamy. Add the melted Breyers® Chocolate Ice Cream and mix until smooth. Add the egg, vanilla, baking soda, and salt, and mix until smooth.
  • Gradually add the flour, then the cocoa powder, beating until incorporated.
  • Using a 2-tablespoon ice cream scoop, scoop the cookie dough onto the prepared baking sheets, spacing about 2 inches apart. You should have 12 cookies per sheet, for a total of 24 cookies. Cover the baking sheets with plastic wrap and chill in the refrigerator for at least 1 hour, up to overnight.
  • Preheat the oven to 350°F (180°C).
  • Take the baking sheets out of the refrigerator and remove the plastic wrap. Using your palm, gently flatten the cookies slightly to about ¾ inch thick and no longer rounded on top.
  • Bake the cookies for 9-10 minutes, until set. Remove from the oven and let cool completely.

Steps:

  • Make the cheesecake bites: Toss the graham cracker crumbs with the melted butter and 1 tablespoon sugar in a medium bowl. Divide between two 1 1/2-cup bowls or ramekins; press into the bottoms and up the sides. Put the cream cheese in the medium bowl (no need to wipe clean); stir with a spatula. 2 egg yolks, beaten
6 tablespoons sugar
2 cups nonfat milk (or low-fat)
4 ounces light cream cheese spread
2 ounces mascarpone cheese
1 tablespoon raspberry jam (or cherry or strawberry)
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 teaspoon almond extract
2 tablespoons Amaretto
6 low-fat graham crackers, broken into small pieces (3 full sheets)
2 cups fresh cherries, stemmed, pitted, and quartered
1/4 cup toasted sliced almonds

Steps:

  • In a small bowl, add 2 tablespoons sugar to beaten egg yolks. Whisk well.
  • In a medium pot, combine remaining 4 tablespoons sugar with milk, and bring almost to a simmer over high to medium-high heat.
  • Scoop out a small amount of hot milk to temper the egg yolks (about ¼ cup); slowly whisk into egg yolks. Repeat this one more time.
  • Add egg mixture to pot of hot milk and whisk thoroughly. Cook, stirring constantly, over medium to medium low heat until thickens and coats the back of a spoon, about 3-5 minutes. Do not let mixture boil. Remove from heat.
  • In a large mixing bowl (an electric mixer works best), beat cream cheese and mascarpone until well whipped. Add jam, lemon juice, extracts, and Amaretto, and beat to combine. On low speed, gradually beat in hot milk mixture. Cream cheese will not be completely dissolved/smooth - that is OK.
  • Let mixture cool before chilling in the refrigerator. This takes about 10 minutes if you place the container in a bowl filled with ice and cold water. Chill in the refrigerator for at least 3 hours.
  • Stir mixture to re-combine and freeze in an ice cream machine, according to manufacturer's directions. In the last minute or two of freezing, add the graham cracker pieces.
  • Serve immediately or freeze for 1-4 hours, if a firmer consistency is desired. Top with cherries (and almonds, if using) and enjoy! This is best eaten the same day you make it.

3 graham crackers, crumbled

Steps:

  • In a bowl, beat the sugar and cream cheese until smooth and creamy; beat in the egg and vanilla; set aside.
  • Bring the milk to a boil in a medium saucepan; slowly beat the hot milk into the cheese mixture.
  • Pour the entire mixture back into the pan and place over low heat.
  • Stir constantly with a whisk or wooden spoon until the custard thickens slightly (don't let the mixture boil or the egg will scramble).
  • Remove pan from heat and pour the hot custard through a strainer into a large clean bowl.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 can (14 oz.) sweetened condensed milk
1/3 cup whipping cream
2 tsp. lemon zest
1-1/2 cups fresh strawberries
3 graham crackers, coarsely chopped

Steps:

  • Beat first 4 ingredients with mixer in large freezerproof bowl until blended. Freeze 4 hours.
  • Beat cream cheese mixture with mixer until creamy. Blend strawberries in blender until smooth. Add to cream cheese mixture; mix well. Stir in chopped grahams.
  • Freeze 8 hours or until firm.
  • Let dessert stand at room temperature about 15 min. before serving to soften slightly.

2/3 cup graham cracker crumbs (from 4 crackers), plus graham crackers for garnish
2 tablespoons unsalted butter, melted
4 tablespoons sugar
4 ounces cream cheese, at room temperature
1/4 cup heavy cream
2 teaspoons fresh lemon juice
1/2 teaspoon vanilla extract
1 pound strawberries, trimmed and chopped
1 tablespoon cornstarch
1/2 cup sugar
1 tablespoon lemon juice
8 ounces cream cheese, at room temperature
1 3/4 cups heavy cream
1 cup sour cream
1 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon freshly grated lemon zest plus 1 tablespoon lemon juice
Pinch of salt

Steps:

  • For the cheesecake bites: Toss the graham cracker crumbs with the melted butter and 1 tablespoon sugar in a medium bowl. Divide between two 1 1/2-cup bowls or ramekins; press into the bottoms and up the sides. Put the cream cheese in the medium bowl (no need to wipe clean); stir with a spatula. Add the heavy cream, lemon juice, vanilla and remaining 3 tablespoons sugar; mix until smooth. Spoon into the prepared bowls, cover and freeze until firm, about 2 hours. Remove the bowls from the freezer and run a knife around the cheesecakes; turn out onto a cutting board and roughly chop. Transfer to a plate, then cover and keep frozen until ready to use.
  • For the strawberry sauce: Meanwhile, toss the strawberries with the cornstarch and sugar in a medium saucepan, then add the lemon juice and 1 cup water. Bring to a simmer and cook, stirring occasionally, until the mixture is thick and shiny, about 30 minutes. (You should have about 1 2/3 cups sauce; cook slightly longer to reduce if necessary.) Transfer to a medium bowl and refrigerate until cold.
  • For the ice cream: Put the cream cheese, heavy cream, sour cream, sugar, vanilla, lemon zest and juice and salt in a food processor; process until very thick and fluffy, 1 1/2 to 2 minutes. Layer the ice cream mixture, strawberry sauce and cheesecake bites in a shallow 2-quart baking dish, reserving 1/4 cup of the strawberry sauce for serving. Cover with plastic wrap pressed directly against the surface; freeze until firm, at least 3 hours. Let sit at room temperature 20 minutes before scooping. Scoop into bowls and top with the remaining strawberry sauce and additional graham crackers.

6 ounces reduced-fat cream cheese
2 cans (12 ounces each) fat-free evaporated milk
1 can (14 ounces) fat-free sweetened condensed milk

  • Place strawberries in a blender; cover and process until smooth. In a large bowl, beat cream cheese until smooth. Beat in the evaporated milk, condensed milk, vanilla and pureed strawberries. Fold in whipped topping., Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. Refrigerate remaining mixture until ready to freeze. 1 cup milk
1-1/4 cups plus 3 tablespoons sugar, divided
3 egg yolks, lightly beaten
2 cups heavy whipping cream
2 teaspoons vanilla extract
2 packages (8 ounces each) cream cheese, cubed
1/2 cup peach nectar
4 teaspoons lemon juice
4 medium peaches, peeled and chopped or 1-1/2 cups frozen sliced peaches, chopped

Steps:

  • In a small saucepan, heat milk to 175°; stir in 1-1/4 cups sugar until dissolved. Whisk a small amount into the egg yolks. Return all to the pan, whisking constantly. Cook and stir over low heat until mixture reaches at least 160° and coats the back of a metal spoon. , Remove from the heat. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Transfer to a large bowl., In a blender, combine the cream, vanilla and cream cheese; cover and process until smooth. Add to cooled milk mixture. Stir in peach nectar and lemon juice. Refrigerate for several hours or overnight. , Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. Place peaches in a bowl; sprinkle with remaining sugar. Set aside, stirring several times. Drain and discard juice from peaches. I found this recipe in Family Circle magazine. I have not tried this recipe, but I'm posting this for safe keeping. I plan to use no sugar added vanilla ice cream and sugar free cherry pie filling.

1/4 cup I Can't Believe It's Not Butter® Spread, spread melted
2/3 cup sugar, plus
3 tablespoons sugar
16 ounces cream cheese, softened
1/2 teaspoon vanilla extract
1 1/2 quarts breyers all natural vanilla ice cream
21 ounces cherry pie filling or 21 ounces any pie filling

Steps:

  • In medium bowl, combine graham cracker crumbs, I Can't Believe It's Not Butter spread and 3 tablespoons sugar; press into 9-inch springform pan. Freeze 15 minutes.
  • Meanwhile, in large bowl with electric mixer beat cream cheese, remaining 2/3 cup sugar and vanilla until smooth; set aside.
  • Into springform pan, spoon Breyers ice cream, pressing to form an even layer. Evenly spread on cream cheese mixture. Cover and freeze 4 hours or overnight. Freeze serving platter 30 minutes before serving.
  • Top cheesecake with cherry pie filling. Dip knife or metal spatula in hot water, then wipe dry and run around edge of cake to loosen. Remove ring from pan. On chilled serving platter, arrange cake.

2 pounds cream cheese, room temperature
1¼ cup sugar
4 eggs
2 tablespoons lemon juice
1/2 teaspoon vanilla
For crust:
1 cup graham cracker crumbs
1/2 cup walnuts
4 tablespoons butter, melted
2 tablespoons sugar
1 half-gallon strawberry ice cream
1 basket fresh strawberries, stemmed and sliced

  • For cheesecake: Preheat oven to 275 degrees. Beat together the cream cheese and sugar with a mixer until creamy. Add the eggs, lemon juice and vanilla; pour into a 9-by-13-inch casserole pan and bake for 1 hour. Remove from oven and let cool. To make crust: Preheat oven to 350 degrees. Put all ingredients into a food processor and blend. Press the crust into the bottom of a greased 9-inch springform pan. Bake the crust for 15 to 20 minutes. Remove and let cool. Pie assembly: Alternate spooning strawberry ice cream and the baked cheesecake mixture into the pan until full. Freeze for a minimum of 2 hours before serving. Top with the fresh strawberries. 1/2 pint double cream (heavy)
1/2 pint sour cream
6 ounces cream cheese
3 tablespoons fresh lemon juice
3/4 cup granulated sugar
1/4 teaspoon vanilla extract
2 ounces grated milk chocolate

Steps:

  • Melt chocolate over double boiler or in microwave. Let cool at room temperature.
  • Place the cream cheese into a mixing bowl and beat until soft and smooth.
  • Slowly add the sugar and then beat in the sour cream and chocolate followed by the double (heavy) cream.
  • Add the vanilla extract and lemon juice and mix until thick and smooth.
  • Cover and chill in the refrigerator for 2-3 hours.
  • Take the chilled mixture and beat until creamy then transfer the complete mixture into an ice cream maker and follow the manufacturer's instructions.
