SHIRLEY'S ICE BOX FRUIT CAKE
I looked forward to having this every year when my partner's mother would come to stay with us during the holidays. She was a 'Paula Deen'-kinda woman, adding butter to everything, but everything was oh-so-delicious! May be sliced into any size serving. Keeps a good while, if your family doesn't eat it all right away!

Steps:
- Line a 9x9-inch dish or decorative container with waxed paper.
- Mix pecans, raisins, coconut, graham cracker crumbs, and cherries together in a bowl using your hands; stir in sweetened condensed milk. Press mixture into the prepared dish. Cover dish with plastic wrap or a tight-fitting lid. Refrigerate for 1 day.

Steps:
- Arrange pieces of graham crackers to cover bottom of 10×8 or similar pan. Mix all purpose cream and condensed milk in a bowl and mix to blend well. Spread a quarter of cream mixture on top of layered graham crackers. Arrange or scattered a portion of fruit cocktail over the cream. Cover with another quarter of cream mixture and spread evenly to cover the fruits. Arrange another layer of graham cracker on top of the cream mixture and cover it evenly. Then cover the top with another quarter of cream mixture, followed with fruits and lastly, cover with the remaining cream. Decorate your refrigerator cake with the remaining graham crackers. Crush remaining crackers and sprinkle on top and arrange fruit on top. Cover and refrigerate for about 4 hours or overnight, to set or firm the cake before you slice and serve.
ICE BOX FRUIT CAKE
Steps:
- Crush graham crackers into fine crumbs. Set aside. Discard the juice from 1 jar of cherries, save the juice from the other. Slice cherries into halves.
- In a large bowl, empty the entire bag of marshmallows and cherry juice. Microwave marshmallows & cherry juice until marshmallows resemble a thick paste. Stir marshmallow/juice mixture.
- Add the crushed graham crackers, sliced cherries & nuts. Using your hands, mix together until crumbs and nuts are all moist.
- Spread into a cake or baking pan with 2 inch sides. Freeze for 3 hours, or overnight. Slize & enjoy!! :) :)

This was my grandmother's recipe. Fast overnight and easy. No Bake! *CUT Gram Cracker Box- Cut down one side on top, across the top edge and down the other side toward the back for reuse later.

- Mash Gram Crackers with roller, set aside. In another large bowl drain cherries and cut in half. Add raisins, pecans and cherries to gram cracker mixture. Add eagle brand milk to mixture to pull it all together. Line Gram Cracker box with wax paper and put mixture into the box.
- Refrigerate overnight. Cut into slices to serve. (You can even freeze half of it, for a later time)

Steps:
- Crush graham crackers to meal with rolling pin.
- Melt marshmallows in milk over a double boiler, add vanilla.
- Pour over fruit, nuts and cracker meal. Mix well and pack in pan. Store in refrigerator.
- She doesn't say what size pan... sorry. I would have to guess a 9x13.
