1 cup spaghetti sauce, divided
1/2 cup mozzarella cheese, grated
1/2 cup sausage, cooked, divided

Steps:

  • Lightly toast split English muffins.
  • Top with 2 Tablespoons spaghetti sauce, 1 Tablespoon cooked sausage, and 1 Tablespoon cheese.

I make lots of different pizzas out of English muffin crusts. This recipe is especially delicious and wonderful as a side for soup or just anytime you want some pizza without ordering out.

1 package English muffin (I use whole wheat or oat bran)
3/4 cup ranch dressing
1 (14 ounce) can artichoke hearts, drained and chopped
1 (4 ounce) jar sliced pimientos, drained
1 cup shredded mozzarella cheese
3/4 cup grated parmesan cheese
red pepper flakes

Steps:

  • Cut the English Muffins in half and toast lightly.
  • Combine remaining ingredients, except for 1/4 cup Parmesan to sprinkle on the top.
  • Spread the cheese mix onto the muffin crusts and sprinkle the saved Parmesan on top.
  • Bake at 375 for around 15 minutes.
  • Let sit for 5 minutes before serving.

The Worst English Muffin Pizza -

So why are you even looking at this recipe?! It's the worst! My husband and I were talking about how even bad pizza just isn't that bad. He remembered his mom making the box of Chef Boyardee pizza and it being pretty bad. I said I could top that... my mom would make pizza with english muffins and ketchup. Both of our kids were screaming out of fear that I would actually make these pizzas for them. We decided to call it "the Saddest Pizza for One". I had a great time making these for myself when I was four years old. And when you are so desperate for pizza - this is an option. Just thought I'd share our great memories with you!

2 tablespoons ketchup
1 slice kraft processed cheese food

Steps:

  • Preheat your toaster oven to 350 degrees (or your Easy Bake Oven to full light-bulb strength). Take an english muffin half and slather with ketchup. Top with a square processed cheese slice (plastic wrap removed). Bake for a few minutes -- keep an eye on it - it burns easily! Nothing uglier than a black bubbly pizza! Enjoy!
