Authentic German apple cake called Apfelkuchen has a basic butter cake with fresh apple slices pushed into the top of the cake batter.

1 stick (4oz or 0.5 cup) butter (softened...[$1.00])
1 cup + 3 tbsp. white granulated sugar (...[$0.30])
2 large eggs (...[$0.46])
1 cup all purpose flour (...[$0.23])
1 tsp. baking powder (...[$0.04])
1-2 large apple (...[$0.50])
3 tbsp. powdered sugar (optional...[$0.06])

Steps:

  • Preheat oven to 350°F and grease 8 or 9-inch springform pan.
  • Cream butter and 1 cup granulated white sugar together until a smooth texture is reached.
  • While blending, add in eggs one at a time. Add flour and baking powder. Mix until smooth and uniform.
  • Spread cake batter in greased pan. The batter will be sticky so be careful.
  • Peel and slice apples and place on top of cake batter. Overlapping apples and pressing down into the cake just slightly. The cake batter will rise around the apples.
  • Sprinkle the extra 3 tbsp. granulated sugar on top of the batter, but don't mix in. This step is optional.
  • Bake cake for 40-45 minutes or until a toothpick comes out clean.
  • Remove baked cake promptly from pan and let completely cool before cutting into it. Dust with powdered sugar on top and enjoy.

2 eggs
1 cup vegetable oil
2 cups white sugar
2 teaspoons ground cinnamon
½ teaspoon salt
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
4 cups apples - peeled, cored and diced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch cake pan.
  • In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well.
  • Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners' sugar or with a Cream Cheese Frosting.

3 eggs
1 1/2 cups oil
2 cups sugar
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon
2 teaspoons vanilla
3 cups sliced apples
1 1/2 cups pecans, black walnuts, chopped
1 cup brown sugar
1/2 cup milk
1/2 cup butter
1 teaspoon vanilla
2 cups powdered sugar
1 teaspoon mayonnaise
1 teaspoon vanilla or 1 teaspoon rum extract
1 tablespoon milk
additional nuts (to garnish)

Steps:

  • Mix eggs, oil, and sugar. Blend well.
  • Sift flour, salt,soda and cinnamon.
  • Add to egg mixture.
  • Add vanilla, apples and nuts. Mix well.
  • Pour into a 9 inch bundt pan.
  • Bake for 1 to 1-1/2 hours at 350°F until cake is set in the middle and is golden brown.
  • Meanwhile combine brown sugar, milk, butter, and vanilla in a sauce pan and cook for 2 minutes.
  • Pour over cake while it is hot out of the oven (leave cake in the bundt pan).
  • When cooled completely remove cake to a serving plate.
  • For frosting, combine powdered sugar, mayonnaise, vanilla and milk until a smooth, slightly thick icing forms.
  • Once cake is cooled drizzle icing over entire cake.
  • Sprinkle with additional nuts and enjoy!
  • I have done several variations such as added raisins, mango, and even bananas with the apples they all have came out great!

1 teaspoon salt
1 teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Sift together flour, salt, baking soda, and cinnamon; set aside. Grease and flour an 8 inch Bundt pan.
  • Whisk together eggs, oil, and 2 teaspoons vanilla extract until smooth. Mix in sifted dry ingredients until moistened, then fold in sliced apples, pecans, and walnuts. Pour batter into prepared Bundt pan.
  • Bake cake in preheated oven until golden brown on top, and a toothpick inserted in the center comes out clean, about 1 1/2 hours. Stir together brown sugar, milk, butter, and 1 teaspoon vanilla extract in a saucepan. Simmer for 2 minutes, then pour over cake in the Bundt pan as soon as it comes out of the oven. Allow cake to cool in pan set over a wire rack until it is room temperature, about 4 hours.

2 cups sugar
1 cup vegetable oil
1 teaspoon vanilla extract
