4 cups whole milk
1 vanilla bean, seeds scraped
2/3 cup malted milk powder
1/4 cup packed light brown sugar
Ground cinnamon, for garnish

Steps:

  • Bring the milk and vanilla seeds to a simmer in a heavy medium saucepan. Add the malted milk powder and brown sugar to the hot milk, whisking until dissolved. Remove 1 cup milk mixture and puree in a blender, about 2 minutes. Divide the milk among 4 mugs and top with the pureed milk and a sprinkle of cinnamon.
  • BYOC: This is a perfect drink for after spending some time out in the cold. Make this for the kids and add a little light rum for the adults.

5 cups milk
3/4 cup malted milk powder
1/3 cup packed dark brown sugar
2 teaspoons vanilla
1/4 cup light rum (optional)
Freshly grated nutmeg

Steps:

  • Bring milk to a simmer in a 4-quart heavy saucepan and transfer 1 cup to a blender. Add malted milk powder and brown sugar to remaining hot milk, whisking until dissolved. Remove from heat and stir in vanilla and rum (if using).
  • Blend milk in blender at high speed until foamy, about 1 minute. Divide malted milk among 4 mugs, then top with foamy milk and sprinkle with nutmeg.
