SPICED NUTS



Spiced Nuts image

4 cups unsalted mixed nuts (such as almonds, walnuts, cashews, peanuts)
4 tablespoons (1/2 stick) unsalted butter
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
3 tablespoons brown sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the nuts out on a large baking sheet. Bake until the nuts are lightly toasted, about 8 to 10 minutes.
  • In the meantime, melt the butter in a small saucepan over low heat. Add the remaining ingredients and stir to combine. Transfer the nuts to a serving bowl. Pour in the butter and toss to coat evenly. Serve warm or room temperature.

1 tablespoon honey
2 teaspoons olive oil
2 cups walnut halves
2 tablespoons sugar
1 teaspoon coarse salt
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/8 teaspoon cayenne pepper

Steps:

  • In a large nonstick skillet, heat honey, oil, and 1 tablespoon water over medium heat. Add walnuts; toss to coat.
  • Sprinkle the sugar, salt, cumin, coriander, and cayenne over the nuts. Cook, tossing and stirring until the nuts are well coated and lightly browned, 2 to 3 minutes. Transfer to a baking sheet to cool completely.

4 cups California walnut halves and pieces
2 egg whites, lightly beaten
1/2 cup granulated sugar
2-3 teaspoons cayenne pepper

Steps:

  • Preheat oven to 350°F.
  • Toss walnuts with egg whites.
  • Mix sugar with cayenne pepper and toss with the walnuts and egg whites.
  • Spread walnuts on a baking sheet that has been sprayed with cooking oil.
  • Bake for about 10 to 12 minutes or until walnuts are crisp and caramelized. Let cool and enjoy.
  • Serve with Seared Filet Mignon with Blue Cheese or as an appetizer, snack or dessert topping.

1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper

1/8 teaspoon ground nutmeg
3 tablespoons unsalted butter
1 cup shelled walnuts
1 cup pecan halves
1/4 cup packed brown sugar
1 tablespoon water
1-1/2 teaspoons Worcestershire sauce
Dash Louisiana-style hot sauce

Steps:

  • In a small bowl, combine the salt and spices; set aside. In a large heavy skillet, melt butter. Add walnuts and pecans; cook over medium heat until nuts are toasted, about 4 minutes., Sprinkle with spice mixture. Add the brown sugar, water, Worcestershire and hot sauce. Cook and stir for 1-2 minutes or until sugar is melted. Spread on foil to cool. Store in an airtight container.

1 egg white (room temperature)
1 tablespoon water
1 tablespoon melted butter
4 teaspoons good quality cinnamon
1 1/2 teaspoons chili powder
1/2 teaspoon cumin
3/4 teaspoon cayenne pepper
1 teaspoon salt
4 teaspoons sugar
1/4 teaspoon allspice
1/4 teaspoon black pepper
1/8 teaspoon white pepper
1/8 teaspoon garlic powder
1 1/3 cups pecan halves
1 1/3 cups whole almonds
1 1/3 cups walnuts

Steps:

  • Heat oven to 250 degrees.
  • in medium bowl beat egg and water at high speed til stiff.
  • In small bowl combine melted butter, all spices, salt and peppers. Mix well.
  • Add nuts to egg mixture. Stir to coat well.
  • Add 1/2 spice mixture to nuts. Stir to coat.
  • Add remaining spice mixture. Stir till evenly coated.
  • Spread nuts evenly on cookie sheet that has been covered with aluminum foil.

8 ounces walnuts (2 cups)
2 tablespoons sugar
1 tablespoon vegetable oil
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon ground red pepper (cayenne)
1/4 teaspoon salt

Steps:

  • Preheat oven to 350*.
  • Place walnuts in a 15 1/2" x 10 1/2" jelly roll pan.
  • Toast walnuts in oven 20 minutes, stirring occasionally.
  • Meanwhile, in a small bowl, mix sugar, vegetable oil, Worcestershire sauce, ground red pepper, and salt.
  • Remove walnuts from oven, drizzle spice mixture over the nuts and toss until thoroughly coated.
  • Spread nuts in a single layer, cool completely in a pan on a wire rack.
  • Store at room temperature in tightly covered container up to a month.
  • Makes about 2 cups.
