Quick, simple, and an excellent offering for a Mexican-themed buffet or cocktail party. Serve with scoop-style corn chips. This makes enough for a crowd, but half can be frozen for later use.

1 cup yellow onion, chopped fine
2 tablespoons olive oil
2 lbs jalapeno-flavored white queso fresco
8 ounces cream cheese, softened
1 lb lump crabmeat
1 lb small baby shrimp, peeled and cooked
1/2 cup cilantro, chopped
1 (4 ounce) jar pimientos, drained
crushed red pepper flakes or hot sauce

Steps:

  • Saute onion in oil. Add cheeses and stir until smooth. Add seafood and seasonings, stir. Serve in a heated chafing dish with chips.

1 (8-ounce) package cream cheese, cut up
1/4 cup salsa
1 (6-ounce) can crabmeat, drained, flaked, cartilage removed
1 package Keebler® Wheatables® Original wheat cracker

Steps:

  • 1. In medium microwave-safe bowl combine cream cheese and salsa. Microwave on high for 1 to 2 minutes or until warm, stirring once.2. Stir in crabmeat. Microwave on high for 30 seconds to 1 1/2 minutes or until heated through. Garnish as desired. Serve with crackers.

1 teaspoon(s) canola oil
2 teaspoon(s) minced garlic
1/2 cup(s) light mayonnaise
1 - celery stalk, finely diced
1 - green onion, finely diced
1-1/2 tablespoon(s) lemon juice
1 teaspoon(s) dried parsley
2 teaspoon(s) fresh horseradish
2 teaspoon(s) dijon mustard
1 teaspoon(s) dried thyme
1 teaspoon(s) red pepper flakes
1 cup(s) crabmeat, drained, flaked
- salt and pepper to taste

Steps:

  • Heat oven to 450. Lightly spray a small casserole dish, set aside. In small skillet, over med-high heat, add oil, then garlic. Cook, stirring, until browned, about 2 mins.
  • Place garlic in medium bowl. Add mayonnaise, celery, green onion, lemon juice, parsley, horseradish, mustard, thyme and red pepper flakes. Mix well. Lightly fold in crabmeat. Season w/ salt and pepper to taste.
  • Spoon crabmeat mix into casserole dish. bake about 15 mins, or until light brown. Serve w/ crisp bread rounds, crackers and cut veggies.
