This is an old family favorite, handed down from my great-grandmother. The holidays officially begin with Christmas carols and my favorite hot spiced tea! Definitely a seasonal comfort beverage for me! I prefer to use fresh juices with pulp. The flavors are different. Canned pineapple in light syrup is best. Set the pineapple chunks aside for the rest of your holiday baking. Store leftovers in refrigerator and reheat as needed.

6 cups water
1 teaspoon whole cloves
1 (1 inch) piece cinnamon stick
6 tea bags (such as Lipton®)
¾ cup orange juice
½ cup white sugar
¼ cup pineapple juice
2 tablespoons lemon juice

Steps:

  • Pour water into a pot; add cloves and cinnamon stick. Bring water to a boil; remove from heat. Add tea bags to water and set aside to steep until the tea is to your preferred strength, at least 5 minutes. Remove and discard cloves, cinnamon stick, and tea bags.
  • Stir orange juice, sugar, pineapple juice, and lemon juice together in a saucepan; bring to a boil. Cook and stir the juice mixture until the sugar dissolves completely. Pour juice mixture into the spiced tea; serve hot.

Our family can't go through fall or winter without it! (The vitamin C, cinnamon, and cloves are all proven germfighters, too!)

20 ounces tang powdered drink mix (one full tub)
1/3 cup instant tea (I use the kind with lemon)
3/4 teaspoon ground cinnamon
3/8 teaspoon ground cloves
2 tablespoons granulated sugar (or 3 if you like it sweeter)

Steps:

  • Mix all ingredients thoroughly. A food processor makes this effortless, but I managed with a blender for years, and have even stirred it together by hand when necessary-- although it's not quite as pretty when done that way.
  • To enjoy: stir 2-3 heaping teaspoons into a mug of hot water and adjust to suit your own taste. Ahhh!
  • This mix starts to harden in the jar after six months or so, so drink up! Servings and Yield are approximations only.

2 (4-inch) cinnamon sticks
1/2 teaspoon whole black peppercorns
2 to 3 whole cloves
3 to 5 whole cardamom pods
5 coin-size pieces fresh ginger
2 (1-inch) strips fresh orange peel
2 (1-inch) strips fresh lemon peel
5 cups cold water
4 bags orange-pekoe tea
3 cups apple cider
1 orange, juiced

Steps:

  • Lightly crush the cinnamon, peppercorns, cloves, and cardamom pods in a mortar and pestle or on a cutting board with the bottom of a saucepan. Transfer to a medium saucepan, add the ginger, citrus peels. Put the crushed spices in a medium saucepan and add the water. Bring to a boil, reduce the heat, and simmer, partially covered, until aromatic, and the cinnamon stick opens a bit, about 10 minutes. Add the tea bags, immediately remove from the heat, and steep for 3 to 4 minutes.
  • Remove the tea bags, and add the cider and juice of 1 orange. Return the pan to a medium heat and warm, taking care not to let the tea boil. Serve hot.

1 teaspoon whole cloves
12 cups water
12 tea bags
1 cup packed brown sugar
1 cup cranberry juice
1/2 cup orange juice
1/4 cup lemon juice

Steps:

  • Place cinnamon sticks, allspice and cloves on a double thickness of cheesecloth. Bring up corners of cloth; tie with a string to form a bag. , Place water and spice bag in a large saucepan; bring to a boil. Remove from the heat. Add tea bags; cover and steep for 5 minutes. Discard tea bags and spice bag. Stir in brown sugar until dissolved. Add juices; heat through. Serve warm.

SPICED ORANGE TEA, HOT OR COLD

I found this recipe in a book I picked up at a thrift shop. I'm not really a tea drinker so like to find ways to get those good anti-oxidants without the tea taste. This is all orange & spice so I quite liked it. I didn't have whole cloves so made mine with a dash of ground cloves instead. I had one cup warm & then put the rest in the fridge to have iced, it was nice both ways.

1 1/4 liters boiling water
50 g sugar
10 cloves
2 small cinnamon sticks
4 tea bags
4 tablespoons orange juice
2 1/2 tablespoons lemon juice
1/4 orange, rind of (try not to get the pith as this will make it bitter.)
honey
cinnamon stick, to serve

Steps:

  • Combine water, sugar, cloves & cinnamon in a saucepan, mix & bring to the boil.
  • Remove from heat & add tea bags, infuse for 4 minutes.
  • Strain & stir in remaining ingredients.
  • Place over a low heat to keep warm but do not boil.
  • Discard orange peel & add honey to taste, (I added about 1 tsp per cup).
  • Serve with long cinnamon sticks as mixers.

8 orange spice tea bags
2 quarts boiling water
2 cups water
2 cups sugar
1 1/2 cups lemon juice
3 cups orange juice
1 cinnamon stick
1 teaspoon whole cloves, tied in cheesecloth
sugar (optional) or Splenda sugar substitute, as and if desired (optional)

Steps:

  • Pour 2 quart boiling water over the 8 teabags.
  • Brew 5 minutes, remove tea bags, set aside.
  • While doing the above boil 2 Celsius each water and sugar together for10 minutes, or until sugar is disolved, to make syrup.
  • Add remaining ingredients.
  • Bring backto boil and simmer 20 minutes.
  • Remove cloves and cinnamon.
  • Serve hot.
  • Allow each person to sweeten as they choose.

- 1 tbsp. whole allspice
- 1 tbsp. whole cloves
- 2 cups crisp dried apple chips or dried apples
- 12 sticks (2 1/2 to 3 inch each) cinnamon
- 16 white and/or green tea bags

Steps:

  • Divide ginger, allspice and cloves among the infusers of four glass teapots.(If teapots don't have infusers, cut four 7 to 8 inch squares of double thick cotton cheesecloth. Divide ginger, allspice and cloves among cheesecloth squares. Tie closed with clean kitchen string.) Divide apple chips and cinnamon sticks among teapots. Cover; attach 4 tea bags and serving instructions to each gift. Makes 4 gift mixers, 4 servings per mix. Top: Look for apple chips with no added oils or sugar. 1 teaspoon loose-leaf Darjeeling tea
1 star anise
1 cinnamon stick

6 ounces chopped chocolate (recommended: Godiva dark chocolate)
1 teaspoon pure vanilla extract

Steps:

  • In a small saucepan, heat water to a boil. Drop in tea leaves, turn off heat, and steep for about 5 minutes. Strain tea back into pan and add star anise, cinnamon stick, ginger, and heavy cream. Heat over medium heat until cream scalds, watching carefully so that cream does not spill over.
  • Put chocolate in a medium bowl. Strain hot cream mixture into bowl with chocolate. Add vanilla and whisk until chocolate is melted. Transfer to mugs and serve warm or chilled.
  • *Cook's Note: The spices may be increased, to taste, if your preference is spicier.

Steps:

3 small cinnamon sticks
2 t. whole cloves
12 cups water
12 tea bags (an orange-spice tea is nice)
1 cup brown sugar, packed
1 cup cranberry juice
1/2 cup orange juice
1/4 cup lemon juice

Steps:

  • Combine allspice, cinnamon, and cloves with the water in a saucepan and bring to a rolling boil. Remove from heat and add tea bags. Cover and steep for about 5 minutes. Stir and strain. Strain a second time to clarify (a coffee filter is handy here). Add sugar and stir until dissolved. At serving time stir in juices pour into a glass or stainless steel pan, and reheat before serving time.
