Thanks to Daryl Hayden, who worked with me in a real estate office in Charlotte some years ago. This was his "signature" game day creation and a favorite for our office pot luck lunches.

1 (6 ounce) can lump crabmeat
2 (8 ounce) packages cream cheese
1/2 cup mayonnaise
1 tablespoon powdered sugar
1 small finely diced onion
1/4 teaspoon garlic salt
1 teaspoon dry mustard
1 dash salt
1/2 teaspoon Worcestershire sauce

Steps:

  • Mix all ingredients and bake at 350 degrees until bubbling, about 15 minutes.
  • Can be assembled and frozen in baking dish before baking.
  • Serve warm with assorted crackers, or in hollowed out round bread loaf.

This is from the Pasadena, CA Jr. League cookbook. It is a wonderful way to eat a California favorite...Dungeness Crab.

4 tablespoons butter
1 tablespoon oil
3/4 cup onion, finely chopped
1/2 cup celery, finely chopped
3 tablespoons flour
1 1/2 cups milk
1 cup light cream
1 1/2 teaspoons dry mustard
1/8 teaspoon Tabasco sauce
1 teaspoon Worcestershire sauce
1/4 cup dry sherry
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley, chopped
3 eggs, hard-boiled and chopped
1 lb dungeness crabmeat, flaked
salt
pepper
1/2 cup parmesan cheese, grated

Steps:

  • In a 10 - 12" skillet combine 3 tablespoons butter and the oil and saute the onion and celery over low heat for 4- 6 minutes or until soft. Add the flour, a little at a time and cook stirring for 3 - 4 minutes. Meanwhile, heat milk and cream in a small saucepan. Add the heated milk gradually to the onion mixture, stirring constantly.
  • In a small bowl combine the dry mustard, Tabasco, Worcestershire, sherry, lemon juice, and parsley. Add this mixture to the onion mixture in the skillet, stirring well. Bring to a simmer and stir until the sauce thickens, about 3 - 4 minutes. Add the chopped eggs and crab. Taste for seasoning, adding salt and pepper to taste.
  • Divide the mixture between 6 scallop shells or ramekins. Dot them with the remaining butter and cover with the cheese. Place them in a pre-heated 375 F oven for 15 minutes or until they are lightly browned and bubbling. Serve as a first course. Note: This can also be served as a main course by placing the crab mixture in a shallow casserole and accompanying it with Sourdough Bread and a fresh spinach salad!

My mom makes these every year at Christmas time! Yummy! She got the recipe from one of her dear friends Barbara Radant and it can also be found in the Southern Living Annual Recipes 1983. These are excellent at a Christmas party or wedding or baby shower!

1 (5 ounce) jar sharp processed cheese spread
1/4 cup butter or 1/4 cup margarine, softened
1 1/2 teaspoons mayonnaise
6 English muffins, split and cut into quarters
1 tablespoon paprika

Steps:

  • Combine first 4 ingredients and mix well.
  • Spread onto each muffin quarter.
  • Broil 3 minutes or until lightly browned.

This is one of our favorite dips, especially when it is crab season, like it is now. From ''Everyday Celebrations'' by Donata Maggipinto *NOTE* This recipe was adopted in a whirlwind open adoption in September of 2006. I haven't had the opportunity to make this recipe but when I do I will update!

2 tablespoons unsalted butter, plus
3 tablespoons unsalted butter, melted
1 large yellow onion, finely chopped
1 green bell pepper, seeded, deribbed, and finely chopped
3 stalks celery, finely chopped
3 cups fresh breadcrumbs
1/2 cup whole milk
1 lb fresh lump crabmeat, picked over for shell
1/2 cup minced fresh flat-leaf parsley (Italian)
2 tablespoons fresh lemon juice
1 teaspoon dry mustard
1/8 teaspoon cayenne pepper
salt & freshly ground black pepper
cracker, for serving

Steps:

  • Preheat oven to 375 degrees.
  • Butter a 6-cup baking dish.
  • In a medium skillet or saute pan, melt the 2 tablespoons butter over low heat.
  • Add onion and cook until softened, about 3 minutes. Add bell pepper and celery and cook, stirring, for 2 minutes more. Remove from heat.
  • Put 2 cups of the bread crumbs in a large bowl and gradually stir milk into crumbs. Mix well.
  • Let stand for 5 minutes, stirring occasionally to make sure crumbs are moistened evenly.
  • Add crabmeat, onion mixture, parsley, lemon juice and dry mustard. Mix well. Add cayenne, and salt and black pepper.
  • Spoon mixture into baking dish. Place remaining bread crumbs in a bowl and stir melted butter into the crumbs.
  • Toss bread crumbs to coat with butter. Sprinkle evenly over crab mixture.
  • Bake until lightly browned, 25 to 30 minutes. Serve with crudités or crackers.
