Growing up in snowy Canadian winters, my mom would always make my brothers and me hot cocoa after a night of tobogganing. When I got older - and had long since abandoned real cocoa for the instant variety - I had a craving one night for a more wholesome treat. Here's my recipe for a creamier, homestyle cup of cocoa. Perfect for those snowy winter nights!

½ cup white sugar
⅓ cup unsweetened cocoa powder
⅛ teaspoon ground cinnamon
1 pinch salt
⅓ cup boiling water
3 cups milk
1 cup half-and-half, divided
¾ teaspoon vanilla extract
8 large marshmallows

Steps:

  • Whisk together sugar, cocoa powder, cinnamon, and salt in a saucepan; stir in boiling water. Whisk until sugar is dissolved.
  • Bring cocoa mixture to a simmer over medium-high heat, stirring constantly, about 2 minutes; stir milk and 1/2 cup half-and-half into water mixture. Cook and stir just until hot, about 2 minutes. Remove saucepan from heat; stir in remaining half-and-half and vanilla extract.
  • Divide cocoa into mugs, top with marshmallows, and serve.

1/2 cup sugar
1/4 cup baking cocoa
Dash salt
1/3 cup hot water
4 cups milk
3/4 teaspoon vanilla extract
Miniature marshmallows, sweetened whipped cream or cinnamon sticks, optional

⅓ cup unsweetened cocoa powder
¾ cup white sugar
1 pinch salt
⅓ cup boiling water
3 ½ cups milk
¾ teaspoon vanilla extract
½ cup half-and-half cream

Steps:

  • Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil! Remove from heat and add vanilla. Divide between 4 mugs. Add the cream to the mugs of cocoa to cool it to drinking temperature.

1-1/3 cups powdered nondairy creamer

1 cup boiling water
3 cups scalded milk
2 cinnamon sticks (about 3 inches each)

  • In the top of a double boiler, stir together cocoa, sugar and salt. Gradually add boiling water. Place over direct heat and boil for 2 minutes, stirring constantly. Add milk and cinnamon sticks and place over boiling water. Stir and heat 10 minutes. Remove sticks and stir in vanilla. Beat with a wire whisk to froth milk. Serve immediately.

Just had to post this wonderful recipe. My brother always told me his wife couldn't boil water if her life depended on it. We came from a family where every female loved to cook. My poor baby brother married someone who had never cooked. Boy did he enjoy family dinners, lol...... Anyways, I wrote this recipe on a piece of paper for my SIL as a joke and recently her and my dearly departed brother's daughter, my niece, gave me the little piece of paper I wrote it on. In memory of my baby brother, here is my recipe for boiled water :)

1 cup ice cube

Steps:

  • Place water in large enough pot to hold 3 cups without boiling over.
  • Add ice cubes.
  • Turn burner on high.
  • Do not watch pot or it will take forever.
  • Do not leave unatended or you will burn the house down.
  • Bring to a boil.
  • Remove pot from burner.
  • Turn burner off.
  • Use immediately or you will have to repeat recipe.
