"THERE'S NOTHING that warms a body on a cold winter day like a steaming cup of cocoa, and my mother's was extra-special. She would put a small piece of cinnamon in to add more flavor. Mmm-m-m, it was good."

Number Of Ingredients 7

1/4 cup baking cocoa
1/4 cup sugar
1/8 teaspoon salt
1 cup boiling water
3 cups scalded milk
2 cinnamon sticks (about 3 inches each)
1 teaspoon vanilla extract

Steps:

  • In the top of a double boiler, stir together cocoa, sugar and salt. Gradually add boiling water. Place over direct heat and boil for 2 minutes, stirring constantly. Add milk and cinnamon sticks and place over boiling water. Stir and heat 10 minutes. Remove sticks and stir in vanilla. Beat with a wire whisk to froth milk. Serve immediately.

This cocoa gets extra heat from ancho chile powder, while a touch of cinnamon rounds out the flavor. Serve with marshmallows for traditional and satisfying flourish.

1/2 cup unsweetened cocoa powder
1/2 cup sugar
1/4 teaspoon ground cinnamon
1/2 teaspoon ancho chile powder
Coarse salt
Marshmallows (optional), for serving

Steps:

  • In a medium pot, whisk together milk, cocoa powder, sugar, cinnamon, chile powder, and pinch of salt over medium-high until combined. Bring to a boil, then reduce heat and simmer 5 minutes. Pour cocoa into four mugs and serve immediately with marshmallows if desired.

Cooking spray
3 cups white rice flour
1 1/2 cups tapioca flour
3/4 cup potato starch
1 tablespoon xanthan gum
1 1/2 teaspoons salt
1 cup maple sugar powder
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup plus 2 tablespoons chocolate chips
1/3 cup canola oil
1/4 cup unsweetened cocoa powder
1 teaspoon ground cinnamon
3/4 teaspoon cayenne pepper, or to taste
3 large eggs, at room temperature

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8-inch square baking pan with gluten-free cooking spray.
  • For the flour blend: Whisk together the rice flour, tapioca flour, potato starch, xanthan gum and salt in a large bowl. Reserve the remaining flour blend for another use.
  • For the brownies: Whisk together the sugar, baking powder, salt and 1/2 cup of the gluten-free flour blend in in a small bowl. In a medium microwavable bowl, combine the chocolate chips, oil, cocoa powder, cinnamon, cayenne and 3 tablespoons water. Microwave on medium power until the chips are almost melted, about 30 seconds. Whisk until smooth. Let cool to room temperature, about 3 minutes.
  • Whisk the eggs into the chocolate mixture until the batter is smooth and shiny. Whisk in the flour mixture just until blended. Spread the batter evenly in the prepared pan. Bake until set, about 30 minutes. Let cool completely on a rack.

Something special to warm up on a cold evening -- rich, creamy and comforting, this hot cocoa has a hint of cinnamon, chocolate bits and whipped cream. Personally I like an extra sprinkle of cinnamon on the whipped cream instead of the chips.

1 teaspoon(s) ground cinnamon
1 cup(s) sweetened whipped cream
1/4 cup(s) miniature semisweet chocolate chips
4 - cinnamon sticks

Steps:

  • Combine milk and syrup in 1-quart microwave-safe bowl.
  • Microwave on high (100%) power for 5 minutes or until hot.
  • Stir in ground cinnamon.
  • Pour into 4 large mugs; garnish with whipped cream, morsels and cinnamon sticks.
