This is one of our favorite cake recipes, originally published in Cooking from Quilt Country by Marcia Adams. I modified the caramel sauce a bit and increased the amount of the sauce since it is so wonderful! The cake keeps well and can be reheated briefly in the microwave. Extra caramel sauce is divine over ice cream!

1/2 cup pecans, chopped finely
2 1/2 cups cooking apples, chopped medium coarse (such as Granny Smith or Northern Sprys)
1/2 cup butter, softened
1 cup granulated sugar
1 egg
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon grated nutmeg
1 cup flour
3/4 cup butter
1 1/2 cups brown sugar
3/4 teaspoon salt
1 1/2 teaspoons vanilla
3/4 cup heavy cream

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, cream the butter.
  • Add the sugar and beat until fluffy.
  • Add egg and beat until blended, then mix in the baking soda, salt, cinnamon, and nutmeg.
  • Add the flour and stir just until blended.
  • Stir in the apples and nuts.
  • Pour into an oiled 9 inch round cake pan (I use a glass pie plate) and bake for 30 minutes or until the top springs back when touched lightly in the center.
  • Prepare sauce.
  • In a saucepan, melt the butter, brown sugar, and salt.
  • Bring to a boil, stirring with a whisk, then remove from heat and whisk in the vanilla and the cream.
  • (The sauce can be made ahead of time and reheated over hot water.) Serve the cake warm with the hot caramel sauce and a dollop of whipped cream.
  • The cake gets better as it ages, keeps for a week in the refrigerator, and also freezes well.
  • It can be reheated in the microwave.

Everyone loves banana splits. But, hey, when the bananas are grilled to caramelized perfection and then topped with goodies -- watch out! This recipe is from"Emeril at the Grill" by Emeril Lagasse.

6 firm-ripe unpeeled bananas, halved lengthwise
6 tablespoons honey
12 tablespoons (3/4 cup) packed light-brown sugar
Vanilla ice cream, for serving
Hot Fudge Sauce, for serving
Rum Caramel Sauce, for serving
2 cups lightly sweetened whipped cream, for serving
Finely chopped roasted lightly salted peanuts, for serving
6 maraschino cherries, for serving

Steps:

  • Preheat a grill to high, and lightly oil the grill grate.
  • Place the banana halves, cut side up, on a baking sheet and drizzle the honey evenly over them. Sprinkle with the brown sugar. Place the bananas, cut side up, directly on the grill, arranging them so they are perpendicular to the grill grate. Close the grill cover and cook until the bananas are caramelized around the edges and the fruit is beginning to pull away from the peel, 3 to 5 minutes.
  • Carefully transfer the grilled banana halves (still in their skins) to a small baking sheet. Using two small forks or a long, thin spatula, carefully remove the banana halves from their skins and place 2 pieces of banana on each dessert plate. (This is a little tricky because the bananas are now very soft.) Top each banana with 1 or 2 scoops of vanilla ice cream. Drizzle with the Hot Fudge Sauce and Rum Caramel Sauce. Top with dollops of whipped cream and sprinkle with chopped peanuts. Garnish each banana split with a maraschino cherry, and serve immediately.

I love anything with apples. If I were on a desert island and I had to choose 1 desert it would be apple pie. This recipe ain't apple pie and I have many favorite apple deserts, but it's a close second to apple pie. The caramel sauce is out of this world good. It's up to your taste if you want to add the pecans or not to the sauce. I like it both ways.

1/2 lb butter, unsalted, at room temperature (2 sticks)
1 cup sugar
2 large eggs, at room temperature
1 1/2 cups all-purpose flour
1/4 teaspoon ground nutmeg
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
3 medium tart apples, peeled, cored and finely chopped (about 1 1/4 pounds)
3/4 cup chopped pecans (about 3 ounces)
1 teaspoon vanilla
1 quart vanilla ice cream, for serving
4 tablespoons unsalted butter
1/2 cup pecan halves
1 cup firmly packed dark brown sugar
1 cup whipping cream

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Grease and lightly flour a 9 x 2" cake pan.
  • Beat butter and sugar in a large bowl with an electric mixer on high speed until light and fluffy, about 2 minutes. In a separate bowl, mix together flour, spices, baking soda and salt; set aside. Beat in eggs on low speed, one at a time, until well blended. Add flour mixture beating just until incorporated. Mix in apples, nuts and the vanilla.
  • Spoon batter into prepared pan. Bake for 35 - 45 minutes or until top is golden and cake tester inserted near center comes out clean. Remove to rack and cool. Turn cake out of pan by inverting onto rack after 10 minutes.
  • NOTE: If desired, the cake may be stored at room temperature, well wrapped overnight or it may be frozen. Defrost at room temperature for several hours or overnight. Reheat in 350 degree oven for 10 minutes or until warm.
  • Caramel Pecan Sauce:.
  • Melt butter in a medium size saucepan. Add nuts. Cook, stirring constantly, over moderately high heat, until nuts are toasted and butter is lightly browned. Add brown sugar and cream and continue to cook, stirring constantly, until sauce boils and sugar dissolves and turns deep golden brown.
  • NOTE: the sauce maybe refrigerated for several days. Reheat before serving.
  • To Serve: place a wedge of warm cake on a dessert plate. Serve with a scoop of vanilla ice cream and spoon hot Caramel Pecan Sauce over all.

1/2 cup pecans
5 medium apples to yield 2 1/2 cups chopped (use firm cooking apples like Northern Spy or McIntosh)
1/2 cup butter at room temperature
1 cup granulated sugar
1 egg
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 scant teaspoon ground nutmeg
1 cup all-purpose flour
1/2 cup butter
1 cup light brown sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup evaporated milk
Sweetened whipped cream and fresh unpeeled apple slices

Steps:

  • To make the cake, preheat the oven to 350 degrees. Place the pecans in the workbowl of a food processor and process until fine. Set aside. Peel, core and quarter the apples and place them in the workbowl of the processor and process until they are in medium-coarse shards, about the size of almonds. Set aside.
  • Place the butter in a large mixer bowl, add the sugar and beat until fluffy. Add the egg and beat until blended. Add the soda, salt, cinnamon, nutmeg and mix quickly. Add the flour and just blend, then the apples and nuts.
  • Pour the mixture into a greased 9-inch-round cake pan and bake for 30 minutes or until the top springs back when touched with a finger. Cool slightly. Center may sink somewhat.
  • For the caramel sauce, melt the butter, brown sugar and salt in a small saucepan over medium heat. Bring to a boil, stirring with a whisk. Remove from the heat and add the vanilla and milk. Stir again with the whisk.
  • To serve the sauce with the apple cake, cut the cake into eight wedges. Ladle a large spoonful of the hot sauce onto each of eight dessert plates. Place a wedge of cake on top of the sauce. Garnish with a dollop of whipped cream and two apple slices.

Rum-Caramel Sauce

Steps:

  • For crust:
  • Blend ground cookies and both sugars in processor. Add butter and process to blend. Divide cookie mixture among ten 4 1/2-inch-diameter springform pans with 1 1/2-inch-high sides (about 1/2 cup packed per pan). Press crust onto bottoms and up sides of pans.
  • For filling:
  • Position racks in top and bottom thirds of oven; preheat to 325°F. Boil rum in small saucepan until reduced to 1/4 cup, about 1 minute. Cool.
  • Using electric mixer, beat cream cheese in large bowl on low speed until smooth. Gradually beat in sugar. Add eggs 1 at a time, beating on low speed just to blend after each addition, occasionally scraping sides of bowl. Beat in spices, then cream, vanilla, and cooled rum just to blend. Divide filling among prepared crusts (about 1 cup per pan).
  • Place cheesecakes on 2 rimmed baking sheets. Bake until tops appear set, puffed, and golden at edges but still move slightly in center when shaken, reversing sheets after 20 minutes, about 40 minutes total. Cool 5 minutes.
  • Meanwhile, prepare topping:
  • Whisk sour cream, sugar, and vanilla in large bowl. Divide topping among hot cheesecakes, about 1/4 cup each, spreading to meet edges of crusts. Bake 10 minutes. Run knife around each cake to loosen crust from pan. Place hot cheesecakes directly in refrigerator.
  • Chill uncovered overnight. (Can be made 2 days ahead. Cover; keep chilled.) Serve with Rum-Caramel Sauce.

This sauce makes great teacher and/or Christmas gifts (pour in 1/2 pint jars and tie with festive ribbon). Remind them it needs to be refrigerated!

1/2 cup very finely chopped pecans
1/2 cup firmly packed brown sugar
1/2 cup English toffee bits or 1/2 cup milk chocolate English toffee bits
1 cup sugar
4 (8 ounce) packages cream cheese, softened
4 eggs
1/4 cup English toffee bits or 1/4 cup milk chocolate English toffee bits
1/4 cup finely chopped pecans
1/4 cup butter
2/3 cup firmly packed brown sugar
1/3 cup heavy whipping cream
1/4 cup light corn syrup
2 (1 ounce) bittersweet chocolate pieces or 2 (1 ounce) semisweet baking chocolate, coarsely chopped
1 teaspoon vanilla

Steps:

  • Heat oven to 300°F Lightly grease sides only of 10-inch springform pan. Stir together all crust ingredients except 1/2 cup toffee bits in medium bowl. Press crumb mixture evenly on bottom and 1-inch up sides of prepared pan. Bake for 10 to 12 minutes or until edges are lightly browned. Remove from oven; immediately sprinkle 1/2 cup toffee bits on hot, partially baked crust.
  • Meanwhile, combine 1 cup sugar and cream cheese in large bowl. Beat at medium speed, scraping bowl occasionally, until creamy. Add eggs; continue beating until well mixed. (DO NOT OVER BEAT.)   • Loosen cheesecake from side of pan by running greased knife around inside of pan. Immediately sprinkle 1/4 cup toffee bits and 1/4 cup chopped pecans on top. Cool 1 hour on cooling rack at room temperature. Refrigerate in pan, uncovered, until thoroughly chilled (3 to 4 hours). Cover; refrigerate until serving.
  • Meanwhile, melt 1/4 cup butter in 2-quart saucepan over medium heat; stir in 2/3 cup brown sugar, whipping cream and corn syrup. Cook, stirring occasionally, until mixture just comes to a boil (2 to 3 minutes). Boil 3 minutes. Remove from heat.
  • Add chocolate; stir until melted and smooth. Stir in vanilla. Cool slightly; place in microwave-safe bowl. Cover; refrigerate until serving time.
  • Just before serving, microwave sauce on HIGH, stirring every 30 seconds, until warm (30 seconds to 1 1/2 minutes).

I have been making this recipe for years. This is a super moist and delicious dessert with a rich caramel sauce. It originates from Marcia Adams cooking show she use to have on PBS TV station back in the 80's. This cake makes a wonderful after dinner dessert with a cup of coffee.

½ cup pecans or walnuts, finely chopped
2 large cooking apples cut into small cubes (2-1/2 cups)
1 stick unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon baking soda
¼ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon nutmeg
1 cup all-purpose flour
whipped cream
caramel sauce:
1 stick unsalted butter
1 cup brown sugar
½ teaspoon salt
1 teaspoon vanilla extract
½ cup evaporated milk

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Peel, core, and chop apples to equal 2½ cups; set aside.
  • 3. Lightly oil a 8 or 9 inch cake pan: set aside.
  • 4. In a large mixing bowl, cream the butter and sugar; beat until fluffy. Add in the egg and beat until blended.
  • 5. Mix in the flour, baking soda, salt, cinnamon, and nutmeg, mixing until combined. Stir in the apples and nuts. ( Mixture will be thick).
  • 6. Spoon the apple mixture into the lightly oiled cake pan. Bake for 30-35 minutes.
  • 7. Prepare Caramel Sauce:
  • 8. In a small saucepan, melt the butter, brown sugar, and salt. Bring to a boil; stirring with a whisk.
  • 9. Remove from heat and whisk in the vanilla and evaporated milk.
  • 10. To serve, ladle 1-2 tablespoons of the hot Caramel sauce onto serving plates. Place a wedge of cake on top of Caramel sauce. Drizzle a little more sauce over the cake. Garnish with a dollop of whipped cream. Enjoy!
  • 11. Note: The sauce can be made ahead of time and then reheated in the microwave. You can also spoon out a tablespoon or 2 on a saucer, and reheat that amount up for a single serving. The cake should be served warm, or at least room temperature for the best flavor. :)

1 t vanilla
Sauce--
1/2 c butter
1 1/4 c packed lt brown sugar
2 T lt corn syrup
1 c half-and-half
1 t vanilla

  • 1. Preheat the oven to 350F. 2. In a large mixing bowl, combine the flour and sugar. Cut in the butter so the mixture resembles fine crumbs. Add the pecans and blend. Press 1 1/4 c of the mixture firmly into an ungreased 9x9 inch pan; set aside. 3. To the remaining crumbs, add the rest of the ingredients and mix well; pour evenly over the cookie base. Bake 40 minutes, or until the crust is firm and a tester comes out clean. 4. Meanwhile make the sauce: In a saucepan, melt the butter over medium-low heat. Add the brown sugar and corn syrup. Bring the mixture to a boil and cook until the sugar dissolves, stirring frequently, for about 5 minutes. Add the half-and-half, return to a boil, and remove from the heat. Stir in the vanilla. Serve the warm gingerbread, but into squares with the hot caramel sauce over the top.

Be careful when working with hot caramel; never touch or taste it until it has cooled fully.

1 cup suger
1/2 teaspoon salt
1 tablespoon water
6 tablespoons (3/4 stick) butter, cold, cut into small pieces
1/2 cup heavy cream, gently heated

Steps:

  • Heat sugar, salt, and water in a heavy-bottomed pan over high heat until the mixture starts to color around the edges. Lower heat to medium and swirl mixture until it turns light brown. Remove pan from heat, and whisk in butter, then the cream, in small amounts. (Be careful: the cream may spatter.) Let cool, then transfer to a heat-proof serving dish. Store sauce in the refrigerator.

  • Bake for 30-40 minutes or until cake is done and toothpick comes clean when inserted in cake.
  • Cut in squares when cool and serve with hot caramel sauce (recipe follows).
  • To make caramel sauce melt butter in saucepan over low heat and then add remaining ingredients. Bring to a boil, stirring constantly. Continue stirring for 5 minutes or until sauce thickens.
  • Remove caramel sauce from heat and serve over apple cake squares.
