HOT AND SPICY CHOLULA SEA BASS CEVICHE WITH ROASTED PEPPERS, GRILLED MASA CAKES, ROASTED CORN, AND CITRUS MARINADE

- In a large bowl, combine the sea bass, lime juice, lemon juice, orange juice, and onion. Mix all of these ingredients together and let marinate for 4 hours, covered, in the refrigerator.
- Preheat a grill.
- Once the fish has marinated, add the cilantro, roasted peppers, corn, and season with salt and pepper.
- To make the masa cakes, combine the masa flour, eggs, and add a tablespoon of water at a time and form a paste. Make sure the paste is firm and not too watery. Form small pancake shapes and grill on each side for approximately 2 minutes.
- To serve, place the masa cakes on the plate and top with the sea bass ceviche. Drizzle the top with the hot pepper sauce for added heat.

- Combine the cornmeal, sugar and salt in a saucepan.
- Pour boiling water over, stirring constantly with a whisk. Cook, stirring, about two minutes and let cool. Add the egg yolks.
- Sift together the flour and baking powder and stir it into the batter. Add the milk and oil.
- Beat the egg whites until stiff and fold them in.
- Lightly oil a griddle. Ladle about a third of a cup of the batter for each pancake. Cook until browned on one side. Turn and cook on the other side. Continue until all the batter is used.
- Serve with syrup, preserves, jams or jellies.

- Mix all-purpose flour, buckwheat flour, and baking powder together in a bowl. Cut in shortening with 2 knives or a pastry blender until the mixture resembles coarse crumbs.

BANANA-OATMEAL HOT CAKES WITH SPICED MAPLE SYRUP

- In a small saucepan, combine the maple syrup, cinnamon stick and cloves. Place over medium heat and bring to a boil. Remove from heat and let steep for 15 minutes. Remove the cinnamon stick and cloves with a slotted spoon. Set the syrup aside and keep warm. In a large microwave-safe bowl, combine the oats and water. Microwave on high until the oats are creamy and tender, about 3 minutes. Stir in the brown sugar and canola oil. Set aside to cool slightly. In a bowl, combine the flours, baking powder, baking soda, salt and ground cinnamon. Whisk to blend. Add the milk, yogurt and banana to the oats and stir until well blended. Beat in the egg. Add the flour mixture to the oat mixture and stir just until moistened. Place a nonstick frying pan or griddle over medium heat. When a drop of water sizzles as it hits the pan, spoon 1/4 cup pancake batter into the pan. Cook until the top surface of the pancake is covered with bubbles and the edges are lightly browned, about 2 minutes. - Preheat a griddle or nonstick skillet over medium heat.
- Prick sausages with a fork and place in a large skillet then add 1-inch of water to the pan. Add 2 tablespoons extra-virgin olive oil to the pan then bring water up to a boil then reduce the heat to medium. Let the sausages cook until the liquid evaporates 10 minutes. Work on the corn cakes, see below. Move the sausages off to 1 side of the pan to allow the casings to crisp and brown. Add peppers to the other side of the pan, season with salt and pepper and let them cook until just tender. Add hot peppers to sweet peppers and combine and douse the pan with a splash of pepper juice, just before you serve them.
- For the cakes, combine muffin mix with egg and 2 tablespoons of the butter ¿ heat it in the microwave on high for 15 seconds, with the milk, rosemary, chopped prosciutto and a few grinds of black pepper. Rub the griddle with remaining butter nested in a paper towel to lightly coat the cooking surface. Form 6 small cakes, 2 to 3 inches and cook cakes until golden on each side, then repeat with remaining mixture.
- Serve sausages with peppers on top and the cakes alongside drizzled with honey.
BANANA HOT CAKES

- In a small bowl, beat butter and honey until smooth. Stir in pecans; set aside. , In a large bowl, combine the flour, sugar, baking powder, salt and cinnamon. In a small bowl, whisk the egg, milk, bananas, oil and lemon juice; stir unto dry ingredients just until moistened., Pour batter by 1/4 cupfuls onto a greased hot griddle. - 1. For the Cakes, preheat oven to 350°F. Generously spray 8 (6-ounce) oven proof coffee cups or ramekins with no stick cooking spray with flour or grease and flour cups. Place on large baking sheet.
- 2. Mix flour, 2/3 cup of the granulated sugar, 4 tablespoons of the cocoa powder, baking powder, red chili powder, cinnamon and salt in large bowl. Stir in milk, oil and vanilla. (Batter will be stiff.) Spoon evenly into prepared cups. Mix remaining 1/3 cup granulated sugar and 2 tablespoons cocoa powder in small bowl. Sprinkle evenly over batter. Spoon 2 tablespoons boiling water into each cup. (Do not stir.)
- 3. Bake 15 to 20 minutes or until tops are dry to the touch. Cool cups slightly on wire rack.
- 4. For the Cocoa Whipped Cream, beat cream and confectioners' sugar in medium bowl with electric mixer on high speed until soft peaks form. Add cocoa powder and vanilla or Kaluha; beat until stiff peaks form. Serve cakes in coffee cups while still warm. Dollop with Cocoa Whipped Cream. Sprinkle with additional cinnamon, if desired.
- 5. Tips Make Ahead: Prepare and bake cakes as directed. Store in refrigerator overnight. To reheat cakes, microwave on HIGH 30 to 60 seconds or until heated through. GRANDMA CADDELL'S HOT CAKES
This recipe came from my grandmother, who made us hotcakes every Sunday morning. These are very lite and sweet enough to eat without syrup. She made these grapefruit-size. You could also put fruit on these and serve with no syrup as a desert. This is the only recipe our family has ever used. I made them for a friend once, and she liked them, but said they were sweet and tasted more like a crepe. Anyhow, they are quick and easy to make.

- Mix all dry ingredients in a med. size bowl.
- Then add enough milk and stir until smooth.
- Add eggs.
- Add vanilla.
- Stir again.
- If needed, add more milk. The batter should be a bit on the thin consistency side.
- Let these set for about 5 min, and they will thicken a little.
- Drop batter on either a ungreased griddle, or a non stick fry pan on medium heat. The first pancake is always the test to see if your pan is on the right heat. You can make these any size you want, but grapefruit size is the way grandma always made them.
- This recipe can also be halved. And, these freeze up great! I freeze them for my family for a quick breakfast, or after school snack.

POTATO HOT CAKES WITH CHEDDAR CREAM AND SALSA VERDE
As comforting and substantial as these potato cakes are when served plain, they also support the theorem that most dishes are improved by the addition of a fried egg. - Heat oven to 450 degrees.
- Arrange potatoes, cut side down, on a large parchment-lined baking sheet. Bake for 35 minutes or until crisp and golden-brown on the outside and soft inside; cooking time will vary depending on the size of your potatoes, but you want the flesh to be soft enough to mash.
- Make the Cheddar cream: In a small bowl, combine Cheddar and sour cream. Add freshly ground black pepper to taste.
- Make the salsa: In a bowl, mix the herbs, capers and garlic with about 1/3 cup/60 milliliters of oil and a generous pinch of salt.
- Once the potatoes are cool enough to handle (about 15 minutes), peel away and discard (or eat) the skins, being careful not to lose too much flesh. Use a potato masher to mash the flesh until smooth or chunky, as you like. Transfer about 1 1/4 cups/230 grams of the mashed potatoes to a mixing bowl. (Save any extra mash for another use.)
- Add lemon zest, beaten eggs, 1/4 teaspoon salt and a few grinds of black pepper and mix until eggs are completely incorporated. Your batter will look like glossy, runny mashed potato.
- Fry the hot cakes: Add 2 tablespoons of oil to a large nonstick frying pan and place over medium-high heat. Spoon about 1/4 cup of batter per hot cake into the pan and fry for 4 to 5 minutes, turning over once, until crisp and golden on both sides. Set aside on a paper towel-lined plate and keep warm. If you have more batter, add a final tablespoon of oil to the pan and fry the remainder in the same way. You may want to turn the heat down for the second batch if the oil is getting too hot.
- When ready to serve, fry the eggs in the same pan, using additional oil if necessary.
- Stir lemon juice into salsa. Divide the hot cakes between plates and top with the eggs, the Cheddar cream and then salsa verde; the salsa should cover a bit of the cream but not all of it. Sprinkle with the mustard seeds (if using) and serve.

CINNAMON HOT CAKES
These are the best pancakes that we've ever tried. It was originally just a pancake recipe passed down from my mother which we have enjoyed for a number of years. The only change we have made was adding cinnamon. We love to eat them hot with butter melting over them and smothered in Aunt Jamima's pancake syrup. Awesome for Saturday morning breakfast. And it only takes about 15 minutes! Fry up some bacon or Breakfast sausage to make it even better.

- Preheat oven to 425°F. Spray six 3/4-cup custard cups with nonstick spray. Using electric mixer, beat eggs in medium bowl at high speed until thick, about 3 minutes. Gradually beat in 2/3 cup sugar; beat until thick and pale yellow, about 1 minute longer. Beat in 1/2 teaspoon vanilla. Add flour and beat 30 seconds. Bring milk and butter just to boil in small saucepan, stirring until butter melts. Add hot milk mixture to batter; beat until blended and smooth, about 30 seconds. Divide batter among prepared cups. Place cups on rimmed baking sheet.
- Bake cakes until tops rise (tall rounded peak will form in center of each), turn pale golden, and are firm to touch, about 16 minutes. Cool in cups at least 20 minutes. DO AHEAD: Can be made 8 hours ahead. Cool completely in cups, then cover and let stand at room temperature.
- Toss strawberries and remaining 1/2 cup sugar in medium bowl to coat; let stand 20 minutes for juices to form. Using electric mixer, beat cream, powdered sugar, and remaining 1/4 teaspoon vanilla in another medium bowl until peaks form.
- Remove warm or room-temperature cakes from cups and transfer to bowls. Cut off rounded top of each cake. Spoon some of berries and juices over. Cover berries with tops of cakes. Spoon whipped cream over, garnish with remaining berries and juices, and serve.

- In a large bowl, mix together the whole-wheat flour, unbleached white flour, buckwheat flour, oat bran or wheat germ, brown sugar, baking powder, baking soda and salt.
- In a second bowl, combine the milk or yogurt, egg white and egg. Beat until frothy, then add the vegetable oil and beat to mix. Using a rubber spatula, fold this mixture into the large bowl. Stir only until ingredients are incorporated - do not overbeat. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
- Remove batter from refrigerator. Heat a nonstick griddle or skillet. Apply an additional swab of oil if necessary. Using a 4-ounce measuring cup, pour the batter for one cake onto the griddle and cook for about 3 minutes, or until the top is full of bubbles. - Put the fish fillet in a food processor with the fish sauce, curry paste, lime juice, garlic, kaffir lime leaves, salt & pepper, and egg white and process until a smooth paste forms.
- Stir in the cilantro and quickly process again until mixed. Divide the mixture into 8-10 pieces and roll into balls, then flatten to make round patties and set aside.
- For the dip, halve and seed the chili, then chop finely. Place in a small pan with the remaining ingredients and heat gently, stirring constantly, until well blended. Adjust the seasoning to taste.
- Pan-fry the fish cakes in batches for 3-4 minutes per side until golden brown. Drain on paper towels and serve hot on a bed of green salad leaves with the chili-flavored peanut dip.

- 1. Strawberries: Sprinkle sugar over strawberries and mix lightly. Pour orange juice over mixture and let it sit at room temperature about 30 minutes. Take out about 1/2 the mixture and puree it. Add pureed mixture back with the strawberries and refrigerate until ready to use.
- 2. Pancakes: Mix dry ingredients together in medium sized bowl. In a separate bowl whisk together egg yolks, ricotta cheese, milk, lemon juice, and lemon zest until smooth and creamy. Make a well in bowl with dry ingredients; pour liquids into well and stir gently just until dry ingredients are combined. In another bowl, beat the egg whites with a dash of salt until soft peaks form. Right before cooking, very gently fold and blend whites into the rest of the batter, being careful not to over-blend (batter will get thinner.)
- 3. Preheat electric grill to 375 F or stove-top grill to medium/medium-high heat (depending on your stove) - until drops of water dance across grill. Getting grill to the right temperature is the hardest part. If the grill is too low the pancakes will absorb the oil and be tough. If the grill is too hot, the outsides get burnt and the inside is either not done, or too dry. Once the grill is hot enough, coat it very lightly with olive oil and then a small pat of butter, spreading with a spatula to coat the entire surface. Test Grill Temperature: Start by pouring just a tablespoon of batter onto grill to make sure grill is at the right temperature. In about 1-1/4 minutes, you should see several bubbles rising to the top of the batter and popping. Flip the pancakes and cook another 1 minute until the other side is lightly browned. Remove to platter and slice in half to check doneness. Insides should be light, fluffy, and slightly moist all the way through and outsides should be lightly browned. Adjust grill temperature up or down as needed and repeat test until grill temperature yields a perfect cake. You won't want this batter to go to waste! Once the grill is set, pour about 1/4 cup batter onto grill for each cake and cook as directed above. Try different shapes and sizes if you like. I made the ones in the photos on Valentines Day so of course I had to make hearts. Cover cooked cakes with foil to keep warm until serving.
- 4. To serve, spoon chilled strawberries over pancakes and top with whipped topping.

- 1. NOTE: I use a 1/3 cup measure to make my husbands pancakes so they would be larger, and used a 1/4 cup measure for my daughter and I. These pancakes may require a bit more work than your average pancakes, but they taste so much better too.

- 4. Add about half of the flour mixture into the sour cream mixture, and beat until blended, then add in remaining flour mixture and beat again. Add in the softened butter and beat for about half a minute or until well blended. Add in the vanilla Bean Paste, & blend till mixed together.
- 5. Using a clean beater, beat egg whites at room temperature until stiff peaks form.
- 6. Fold egg whites into batter, by carefully stirring with a wide spatuala from bottom of bowl to top, all the while you turn the bowl. Repeat until all of the egg whites have been incorporated into the pancake batter.
- 7. Heat griddle iron or skillet until hot, spray with non stick cooking spray, then pour about 1/4 cup of batter onto grill. Flip when the top is covered with bubbles and brown the other side.
- 8. Remove and add butter between each pancake while pancakes are still hot, and drizzle with your favorite syrup. Serve & enjoy.
MAMA'S SOUR CREAM EGGY HOT CAKES
Another recipe from my Great Aunt's collection. She clipped this from the Chicago Tribune on July 5,1972, where it had won the weekly "$5 Favorite Recipe Prize." Makes a small batch. While the original version called for only 2 Tbsp of flour, I found they needed a bit more. These are very eggy pancakes - their texture and taste is quite different from a more floury pancake. They can be a little tricky to turn- make sure you keep the heat low enough not to burn them, and wait to flip until the surface really is riddled with air bubbles. Recipe doubles well.

- Combie dry ingredients, then mix in eggs, beating until smooth.
- Blend in sour cream.
- Pour 1/4-1/3 cup ladlefuls of batter on a well greased hot griddle (medium heat) until many small bubbles appear on the surface, flip over and brown the other side.
- Repeat until all battter has been used.
- Serve hot with butter and syrup or powdered sugar, if desired.
