HORSERADISH VODKA
Steps:
- Peel horseradish, and cut into fine shreds with a vegetable peeler. Uncap vodka, pour off 1 cup and reserve. Using a funnel, add celery seeds and peppercorns to bottle. Add horseradish, then top off bottle with reserved vodka. Let stand at room temperature for 24 hours.
- Strain vodka through fine sieve to remove celery seeds and fine particles. Chill completely before serving.

Try this in your Bloody Marys. You can use this infused liquor any time you wish, but the longer you let it steep, the more mellow the horseradish flavor will be. Peel your horseradish in a very well-ventilated area. Steeping time not included in preparation time.

Steps:
- Pour vodka into a large glass jar.
- Peel horseradish and slice into 1/2" thick slices; add to vodka.
- Seal bottle or container and let steep a least one week and up to one month. (Taste every once and awhile. When the strength of the horseradish flavor is as much as you like, either remove horseradish slices or strain vodka into a clean container.).
