1/2 cup warm water
1 tablespoon butter or 1 tablespoon canola oil
3 tablespoons honey
1 egg
1/2 teaspoon vanilla
1 cup whole wheat flour
1 1/4 cups bread flour
1 small banana, sliced
1 1/2 teaspoons poppy seeds
1/2 teaspoon salt
1 1/2 teaspoons dry yeast

Steps:

  • Makes 1 1/2 pound loaf Add all ingredients to bread pan in order given.
  • This recipe was created using the"Basic Bread" setting.

This banana bread is bursting with bananas, perfectly moist, and has the ideal sweetness. It's the best banana bread I have ever tasted, and it's healthy!

1 ¼ cups walnuts
1 ½ cups whole wheat flour
½ cup all-purpose flour
1 teaspoon ground cinnamon
¾ teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground nutmeg
1 ½ cups mashed overripe bananas, or more to taste
½ cup raw honey
2 eggs, lightly beaten
¼ cup plain yogurt
¼ cup coconut oil, melted and cooled
2 tablespoons butter, melted and cooled
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread walnuts onto a baking sheet.
  • Toast in preheated oven until nuts start to turn golden brown and become fragrant, 10 to 15 minutes. Coarsely chop walnuts.
  • Place walnuts in a large bowl. Add whole wheat flour, all-purpose flour, cinnamon, baking soda, salt, and nutmeg; mix until combined.
  • Mix mashed bananas, honey, eggs, yogurt, coconut oil, butter, and vanilla extract together in another large bowl. Add banana mixture to flour mixture, mixing with a wooden spoon or rubber spatula until batter is just blended.
  • Grease a 9x5-inch loaf pan. Pour batter into prepared pan.
  • Bake in the preheated oven until edges and top are golden brown and a toothpick inserted into the center comes out clean, 50 to 60 minutes.

This recipe is mixed in the bread machine and baked in the oven, but I suppose you could make it completely in the bread machine. (you may want to reduce yeast to 2 t. if you do this)

2/3 cup water
1 tablespoon butter
1/8 cup honey
1 egg
1 1/2 cups whole wheat flour
1 1/2 cups unbleached flour
2 small bananas, sliced
1/2 teaspoon salt
1 tablespoon yeast
1 tablespoon vital wheat gluten

Steps:

  • Put all ingredients in bread pan in the order recommended for your machine. Select the dough/pasta cycle and press start.
  • When dough is finished, turn out onto a lightly floured board and knead out all bubbles, adding more flour to board as necessary.
  • Shape into loaf about 1 foot in length and place on parchment paper lined cookie sheet. Let rise for 15-20 minutes.
  • Meanwhile pre-heat oven to 375 degrees.
  • When loaf in risen, bake in pre-heated oven for 20-25 minutes.
  • Cool on wire rack.

2 1/2 cups whole wheat flour
1/3 cup brown sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
3 tablespoons vegetable oil
1 tablespoon honey
1/2 cup buttermilk
1 1/4 cups mashed bananas (2 or 3)
1/2 cup chopped walnuts
1/2 cup chopped dates

Steps:

  • Preheat oven to 350 degrees F. Grease a 9 inch loaf pan.
  • Mix all ingredients except for walnuts and dates. Fold these in after all other ingredients are combined. Pour batter into loaf pan. Bake for 55-60 minutes or until a toothpick comes out clean. Cool slightly before removing from pan.
