These Honey Soy Chicken drumsticks are oven baked in an amazing honey, soy and garlic sauce and thus transforming into a tender, fall-of-the-bone delicious dinner!

- Prepare the chicken: In a 9x13-inch casserole dish, whisk all the ingredients together, excluding the chicken. Add chicken and toss making sure each piece is coated with the marinade. Next, cover with plastic wrap and marinate for a couple hours. I kept mine in the fridge overnight.
- Preheat the oven: To 375°F degrees.
- Bake the chicken: Remove the plastic wrap and transfer the dish to the oven. Bake the drumsticks for 45 minutes or until a meat thermometer registers 175°F. Make sure to turn them over half way through. This way they will get nice color all around.
- Garnish and serve: Aim for garnishing the chicken with parsley and serve with the additional sauce.

BALSAMIC CHICKEN DRUMETTES

- Combine the balsamic, honey, brown sugar, soy sauce, rosemary sprigs, and garlic cloves, in a large, re-sealable plastic bag. Shake and squeeze the contents of the bag to dissolve the honey and the brown sugar. Add the chicken drumsticks to the bag and seal with as little air as possible in the bag. Place in the refrigerator and marinate for 2 hours.
- Preheat the oven to 450 degrees F.
- Place the chicken drumsticks on a foil-lined baking sheet. Bake until the skin is caramelized and very dark in spots, about 30 to 35 minutes.
- Meanwhile, place the marinade in a small saucepan. Bring the marinade to a boil (in order to kill bacteria). Reduce the heat to simmer and cook over low heat until thick, about 15 minutes. Reserve.
- Use a pastry brush to brush some of the cooked marinade on the cooked chicken. Place the chicken on a serving platter. Sprinkle with the sesame seeds and the chopped parsley.
- Cook's note: I like the rosemary and garlic flavors in the background. Brushing the cooked drumettes with the reduced marinade helps the flavors along. Also, re-moistening helps the parsley and the seeds to adhere.
HONEY, SOY AND GINGER DRUMETTES
Sticky soy drumettes are a real crowd-pleaser, whether for finger food or as a more substantial meal with rice and greens. I've dressed these up a little with some shaved raw shiitakes - which take on the sauce and are warmed through with the heat of the chicken - and a good sprinkling of crushed peanuts that add texture and a flavour punch. Add heat by introducing some chilli to the sauce or sprinkle over some very finely sliced chillies at the end.

- 1. Preheat the oven to 180C fan-forced (200C conventional). 2. Add all the ingredients, except the shiitake, peanuts and extra sesame seeds, to a large, flameproof baking dish. Combine well, then bring to a simmer over medium heat. Transfer to the oven and roast for 30 minutes. 3. Increase the temperature to 200C fan-forced (220C conventional) and roast for about 10 minutes until the drumettes are browned and the sauce is sticky. 4. Transfer the chicken to a serving plate, then drizzle the juices over the top. Scatter over the shiitakes, peanuts and extra sesame seeds and serve.

- Wash and pat dry the drumsticks with a kitchen towel. Place in a 10.6 x 7 inch baking dish and season with salt and pepper. Preheat oven to 375F.
- In a medium bowl, combine all marinade ingredients. Pour over chicken and massage for 5 minutes. Cover the baking dish with aluminum foil and leave 30 minutes to marinate.
- Remove aluminum foil and place the baking dish in the middle of the oven. Cook for 40 minutes until drumsticks are nicely brown.
- Remove from the oven and garnish with green onions and sesame. Serve with the pan juices and your favorite side dish.

- In 12x8-inch (2-quart) baking dish, combine honey, soy sauce, chili sauce, hot pepper sauce, ginger and dry mustard; mix well. Add drumettes; turn to coat. Cover; refrigerate 1 hour to marinate.
