Whenever I visit my family in Minnesota, I can't wait to get my hands on a bag of Dot's Homestyle Pretzels. They're coated in a top-secret seasoning mix that I crave! This recipe recreates the flavor of Dot's, using butter-flavored pretzels mixed with ranch seasoning, so now we can satisfy that craving year-round. The pretzel mix is the perfect coating for chicken fingers that are fried till crispy then served with a punchy-sweet dipping sauce.

1/3 cup yellow mustard
2 tablespoons Dijon mustard
3 tablespoons brown sugar
1/4 cup honey
1 teaspoon fresh lemon juice
3 cups plain or butter-flavored pretzels (about 6 1/2 ounces)
1 tablespoon ranch dressing mix or 1/2 teaspoon each onion powder and garlic powder
3 large eggs
Kosher salt and freshly ground black pepper
1 pound chicken tenders (7 to 8 pieces) or 1 pound boneless skinless chicken breast cut into 7 to 8 strips
1 cup all-purpose flour
Vegetable oil, for frying

Steps:

  • For the dipping sauce: Whisk together both mustards with the brown sugar, honey and lemon juice in a small bowl. Cover and set aside until ready to use.
  • For the chicken fingers: Pulse the pretzels in a food processor until finely ground but pea-sized bits remain. Transfer to a medium bowl and stir in the ranch dressing mix or onion powder and garlic powder and 1 teaspoon salt.
  • Beat the eggs with 1 teaspoon salt and a few grinds of black pepper in another medium bowl.
  • Whisk the flour with 1 tablespoon salt and a few grinds of black pepper in a third medium bowl.
  • Set a wire rack in a rimmed baking sheet. Dredge 1 chicken piece at a time in the seasoned flour, shaking off the excess, then dip into the egg to evenly coat, and finally evenly coat in the pretzel crumbs. Transfer to the prepared wire rack.
  • Heat 1/2 inch oil in a 12-inch cast-iron skillet over medium-high heat. Test the temperature of the oil by dropping a pinch of leftover flour in the oil. When it sizzles and rises to the top, the oil is ready for frying. Add half of the chicken to the skillet and fry until golden brown, flipping once, 1 1/2 to 2 minutes per side. Transfer with tongs to a paper towel-lined plate. Season with a sprinkle of salt. Repeat the frying process with the remaining chicken.
  • Serve the chicken fingers warm with the mustard dipping sauce.

1 1-pound package of chicken tenders
Salt and pepper
1/4 cup honey
1/2 cup Dijon mustard
1 5-ounce bag pretzels
any shape
1 tablespoon fresh thyme
chopped
Olive oil cooking spray
1 tablespoon olive oil or canola oil
1/4 cup grated onion
2 large cloves garlic
finely chopped or grated
3 tablespoons cider vinegar
3 tablespoons Worcestershire sauce
1/4 cup Acacia or clover honey
1/3 cup Dijon mustard
1 cup tomato sauce
Coarse black pepper
to taste
Hot sauce
to taste
2 tablespoons cider vinegar
Juice of 1/2 lemon
3 tablespoons grated onion
3 tablespoons honey
Acacia or light clover
3 tablespoons vegetable or canola oil
1 teaspoon celery seed
Salt and pepper
1 small to medium jicama root
peeled and cut into thin sticks
1 large Honeycrisp apple
peeled and cut into sticks
2 ribs celery and leafy tops
cut into matchsticks
1 carrot
cut into matchsticks

Steps:

  • Preheat oven to 375°F
  • Season the chicken tenders liberally with salt and pepper
  • In a shallow dish, whisk together the honey and Dijon mustard until smooth
  • Put pretzels into the bowl of a food processor and pulse to medium-sized crumbs
  • Place crumbs into a shallow dish and add chopped thyme
  • Coat chicken tenders first in the honey mustard and then with the crushed pretzels
  • Place the breaded chicken tenders on a sheet tray lined with a cooling rack
  • Spray the chicken tenders with cooking spray and place into the oven for 20 minutes or until crispy and brown
  • For the barbeque sauce, heat oil in a small pot over medium-high heat
  • Add onion and garlic, stir 1-2 minutes, then add vinegar, Worcestershire, honey, mustard, tomato sauce, and pepper
  • Simmer to thicken over low heat, about 15 minutes
  • Add hot sauce to taste
  • Serve chicken with barbeque sauce and Jicama and Apple Slaw alongside
  • For the Jicama and Apple Slaw: In a large serving bowl, whisk together vinegar, lemon juice, onion honey, oil and celery seed
  • Add jicama, apple, celery and carrot; toss to coat and chill

1 pinch kosher salt

3 tablespoons Happy Belly Onion Powder
½ teaspoon cayenne pepper
1 tablespoon Happy Belly Celery Salt

3 cups whole pretzel twists
Happy Belly Vegetable Oil, for frying

Steps:

  • In a medium bowl, whisk together Happy Belly Honey Mustard, Greek yogurt, Happy Belly Large Eggs, a pinch of salt, and a pinch of black pepper until smooth. Add the chicken tenders and toss to coat completely in the honey mustard mixture. Cover the bowl with plastic wrap and marinate in the refrigerator for 2 hours, or overnight.
  • In a separate medium bowl, stir together the garlic powder, Happy Belly Onion Powder, cayenne, Happy Belly Celery Salt, remaining 2 teaspoons of black pepper, and the Happy Belly Paprika.

4 boneless skinless chicken breasts
1 egg
1/2 teaspoon crushed garlic
1 cup finely grated parmesan cheese
1 cup panko breadcrumbs or 1 cup fresh breadcrumb
1 teaspoon dried oregano
1/2 teaspoon salt
pepper
1/2 teaspoon paprika
1/4 cup butter, melted
1/3 cup light mayonnaise
2 tablespoons Dijon mustard
1 tablespoon liquid honey

Steps:

  • In small bowl, stir together mayonnaise, Dijon and honey.Cover and refrigerate up to 3 days.
  • Between sheets of plastic wrap, pound chicken with flat side of meat pounder or with rolling pin until 1/2-inch thick.
  • Cut lengthwise on diagonal into 4 x 1-1/2-inch strips.
  • In bowl, whisk eggs and garlic.
  • I used Egg Creations to replace the eggs.
  • In shallow bowl, combine cheese, bread crumbs, oregano, salt, pepper and paprika.
  • One at a time, dip chicken strips into eggs, letting excess drip back into bowl. Dredge in cheese mixture, coating generously and pressing to adhere.
  • Arrange on greased baking sheets; drizzle with butter.
  • Bake in 425°F oven until golden, crispy and no longer pink inside, about 15 minutes. Serve with dipping sauce.

4 boneless skinless chicken breasts
3/4 cup Dijon mustard
1/4 cup mayonnaise or 1/4 cup plain yogurt
2 tablespoons honey
1/8 teaspoon cayenne pepper, to taste
2 garlic cloves, minced
1 minced green onion, both white and green part (green onion = scallion)
salt
fresh ground black pepper
1 cup crushed pretzel

Steps:

  • Preheat oven to 350 degrees F.
  • Pound/flatten chicken breasts until about 1/4 inch thick - and here's an easy way to pound a chicken breast: put it in a Ziplock bag first, then flatten with the mallet or whatever you're using. It keeps splatters at a minimum. (Flattening the breasts makes them even more tender!).
  • Combine mustard, mayonnaise, honey, cayenne pepper, garlic, green onion, and salt and pepper to taste.
  • Set half of mixture aside to be used as dipping sauce.
  • Coat chicken completely in remaining mustard mixture, and then dredge in pretzel crumbs.
  • Place coated chicken on baking sheet and bake for about 30 minutes or until chicken is cooked through and juices run clear.
