HONEY-LEMON-GARLIC BRINED CHICKEN BREASTS
These incredibly moist, juicy chicken breasts are brined in a mixture of honey, lemon and garlic, with sea salt, thyme and black pepper. Then they're baked and basted with more honey, lemon juice and pan juices to really bring out the flavor. Absolutely delicious! Prep time includes brining time.

Steps:
- In a large plastic bag placed in a large, deep pot (a stockpot is good) combine the water, salt, honey, dried thyme, garlic halves, black pepper and sliced 1/2 lemon.
- Add chicken breasts to brine and tie up bag tightly.
- Allow chicken to brine in the refrigerator, covered, for at least 12 hours, preferably no more than 18 hours.
- When brining time is up, remove chicken from brine (no need to rinse) and place in a baking dish.
- Bake chicken, covered, in a 375 degree F oven for one hour.
- After one hour, remove cover, sprinkle the juice of 1/2 lemon over chicken breasts; drizzle each chicken breast with just over a tablespoon of honey; gently spoon some pan juices over them, and season to taste with black pepper.
- Return to oven for 20 more minutes, or until breasts are nicely browned a little.

SEARED LEMON CHICKEN WITH GARLIC, HONEY & BALSAMIC VINEGAR
A tasty, lemony, low fat dish. Needs to be marinated for 30 minutes. Accompany with rice and a green vegetable.

Steps:
- Place the chicken breasts side by side in a shallow dish. Mix together the lemon juice, garlic, honey, balsamic vinegar, 1 tbsp olive oil & 1 tbsp chopped parsley and pour over the chicken. Turn the breasts over until well coated. Leave in the fridge to marinate for 30 minutes.
- Brush a non stick griddle pan with the remaining oil and heat until very hot. Lift the chicken breasts from the dish (reserve the marinade) and add them to the pan.
- Sear quickly for 1-2 minutes on each side until the chicken browns, lower the heat and cook for about 10 minutes or until the chicken is done, turning the breasts over once or twice.
- Pour the reserved marinade over the chicken, remove from the pan and arrange on serving plates. Grate over the lemon zest and scatter with the rest of the parsley. Cut the lemon into wedges and serve with the chicken.
GARLIC, LEMON & HONEY CHICKEN
Before this recipe, I had never thought to try these trio of ingredients together with chicken. I haven't tried it yet, but I can't wait to. Let me know what you think!

- Combine the garlic, wine, Worcestershire sauce, 1 Tbs of the oil, and lemon juice and marinate the chicken for at least 15 minutes, preferably a bit longer and up to 1 day.
- Heat the remaining oil or a mixture of oil and butter in a large skillet. Mix together the flour, salt and pepper in a shallow pie pan or something similar. Take the chicken from the marinade (but save the marinade!) and dredge it in the flour mix. Saute the chicken in the oil/butter mix until browned on all sides, about 8-10 minutes.
- Mix the honey in with the marinade. Pour this over the chicken, cover, and simmer 20-25 minutes, until the chicken is done.
- Serve over pasta or rice for a more filling meal.
HONEY, LEMON, GARLIC CHICKEN
Steps:
- 1. Preheat oven to 360°F | 180°C.
- 2. Place chicken thighs in a large shallow dish and season with salt; set aside.
- 3. In a large mixing jug, whisk together the honey, lemon juice, soy sauce, vinegar and minced garlic. Pour about 1/4 cup of the sauce over the chicken (or just enough to lightly coat each thigh) and rotate each thigh to coat evenly in the sauce.
- 4. Heat an oven-proof skillet over medium high heat; sear the chicken skin side down first until golden for about 5 minutes. Turn and repeat on the other side. Drain most of the excess oil from the pan, leaving about 1 tablespoon for added flavour.
- 5. Arrange chicken skin-side up in the pan; add the whole garlic cloves between the chicken; pour half of the remaining sauce over each thigh (about 1-2 tablespoons per thigh) and bake for 40-45 minutes until the chicken is cooked through and the juices run clear. The skin should be crispy and sticky.
- 6. While the chicken is baking, pour the remaining sauce into a small pot (or saucepan), and bring to a boil over medium-high heat. Reduce heat down to low and allow to simmer while occasionally stirring; lifting the pot off of the heat when the sauce bubbles up to the rim of your pot, and repeat the process until the sauce has sightly reduced and thickened (about 6 minutes).
- 7. Serve with the remaining sauce, lemon zest and slices, and sliced green onions (optional).
