STICKY HONEY-CHILI GARLIC GRILLED CHICKEN WITH CUCUMBER SALAD

- In a small saucepan, combine the chili garlic sauce, honey, rice vinegar, sugar, soy sauce and garlic. Bring to a low simmer over medium heat. Reduce the heat to low and cook about 10 minutes. Spoon 1/4 cup of the mixture into a small bowl, whisk in the cornstarch until combined and then whisk back into the saucepan. Let simmer an additional 10 minutes to thicken. Let cool completely.
- Salt and pepper both sides of the chicken and place in a 9-by-13-inch pan. Pour half of the chili garlic mixture over the chicken and toss to coat; reserve the remaining sauce. Cover with aluminum foil and refrigerate for 4 hours.
- Preheat the oven to 350 degrees F.
- Bake the chicken, covered in foil, for 35 to 45 minutes.
- Meanwhile, preheat the grill to medium high.
- Remove the chicken from the oven and grill, basting with the reserved sauce, until the skin is crispy, a few minutes per side. (Alternatively, the chicken can be finished under the broiler. Remove the foil from the pan and put under the broiler for a few minutes until the skin is crispy.)
- Transfer the chicken to a serving platter, spoon the remaining reserved sauce over the top and garnish with cilantro. Serve with the Cucumber Salad.
- In a medium bowl, whisk the vinegar and honey until emulsified. Add the cucumbers and cilantro and toss to coat. Season with salt and pepper. Refrigerate until serving time.

- Honey Garlic Chicken Kabobs: Spray grate of outdoor grill with PAM® Grilling for Grill Spray. Preheat grill to medium-high heat.
- Evenly thread chicken, red pepper, green pepper and onion onto 8 skewers. Brush each skewer with VH® Honey Garlic Sauce.
- Grill kabobs, turning occasionally, for 15 to 18 minutes or until chicken is cooked through.
- Grilled Mushroom and Goat Cheese Rotini: Preheat grill to medium-high heat. Season mushrooms with salt and pepper; spray with PAM® Olive oil or PAM® Original. Grill mushrooms for 3 to 5 minutes per side or until grill-marked and tender. Let cool slightly and slice.
- Cook Catelli Bistro® Rotini according to package directions; drain, reserving 1/4 cup (60 mL) cooking water.
- Meanwhile, in large, deep skillet, heat Aylmer® Accents® Italian Seasonings Chunky Stewed Tomatoes over medium heat until simmering. Simmer for 10 minutes. Toss with reserved cooking water, rotini and sliced mushrooms. Top with goat cheese and parsley before serving.

We cook out all four seasons, so, I'm always in search of new marinades. We've been making these marvelous kabobs for years. They're a family favorite.

- In a small bowl, combine oil, lemon juice, garlic, honey, thyme, red pepper flakes, pepper and salt if desired. Reserve half of marinade for basting; cover. , Cut chicken into 1-in. wide strips; weave on skewers. Place in an 11x7-in. glass baking dish. Pour remaining marinade over chicken. Cover and refrigerate for at least 4 hours. , Drain and discard marinade. Grill kabobs, uncovered, over medium heat for 5-7 minutes on each side or until chicken juices run clear. Brush frequently with reserved marinade.

- 1. About an hour before grilling, in a small bowl, mix the ketchup, honey, garlic, sesame oil and soy sauce. Refrigerate for an hour, this gives the garlic time to flavor the sauce.
- 2. Have your grill good and hot, I turn mine on medium. Salt & pepper chicken. I then spray with olive oil cooking spray so doesn't stick to grids. Grill chicken on one side for about 5 minutes, then begin basting as you turn - often, until chicken is completely cooked. Make sure you keep basting as you turn. Once done I give it one more coat. Plate and serve. Delish!

- Lay chicken breasts on a piece of waxed paper. Gently pound, flattening slightly.
- In a small bowl, stir orange juice concentrate with soy, honey, lemon pepper and garlic.
