2 large eggs
3/4 cup 2% milk
1 cup dry bread crumbs
1/2 cup finely chopped onion
2 teaspoons salt
2 pounds ground beef
4 garlic cloves, minced
1 tablespoon butter
3/4 cup ketchup
1/2 cup honey
3 tablespoons soy sauce

Steps:

  • In a large bowl, combine eggs and milk. Add the bread crumbs, onion and salt. Crumble beef over mixture and mix well. Shape into 1-in. balls. Place on greased racks in shallow baking pans. Bake, uncovered, at 400° for 12-15 minutes or until meat is no longer pink., Meanwhile, in a large saucepan, saute garlic in butter until tender. Stir in the ketchup, honey and soy sauce. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Drain meatballs; add to sauce. Carefully stir to evenly coat. Cook for 5-10 minutes.

This is an easy recipe made even easier if your meatballs are pre-made ahead of time which makes this a perfect weekday meal served with cooked rice ---I have listed the chili flakes as optional you may adjust to suit taste or omit, my family likes extreme heat so I use 1 teaspoon --- the meatballs must be pre cooked before adding to the sauce, you may use frozen cooked store bought meatballs or use your own favorite recipe, you may double the sauce recipe if desired, prep time does not include preparing and cooking the meatballs.

3/4-1 lb prepared small meatballs (fully cooked, or use as many meatballs as desired)
cooked white rice (use as much as desired)
2 tablespoons vegetable oil
3 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes (optional or to taste)
1 cup canned chicken broth (room temperature or cold)
2 tablespoons cornstarch
3 tablespoons soy sauce
1 1/2 tablespoons white vinegar
1 tablespoon brown sugar
1/2 cup liquid honey

Steps:

  • In a bowl whisk together chicken broth with cornstarch until no lumps remain.
  • Add in soy sauce, vinegar and brown sugar; mix to combine; set aside.
  • In a medium saucepan heat oil over medium heat.
  • Add in fresh garlic and chili flakes; saute for 2 minutes.
  • Add in the broth mixture with 1/2 cup honey; bring to a simmer stirring continuously until bubbly and thickened (about 3 minutes).
  • Reduce the heat to low and add in cooked meatballs, simmer until heated through.
  • Serve with cooked rice.

Who doesn't love meatballs?!? They are fun to eat, bite-sized appetizers. I kick in more garlic, the family loves garlicky dishes!

3/4 c buttermilk
1 c bread crumbs, dry
1/2 c sweet onion, finely chopped
2 tsp kosher salt
2 lb ground beef
4 clove garlic, minced (i usually add more)
1 Tbsp butter
3/4 c ketchup
3/4 c honey
4 Tbsp soy sauce

Steps:

  • 1. In a large bowl, combine eggs and buttermilk. Add the bread crumbs, onion and salt.
  • 2. Crumble beef over mixture and mix well. Shape into 1-inch balls.
  • 3. Place on greased wire racks over a shallow baking pans to catch the drippings.
  • 4. Bake, uncovered at 400 degrees for 12 to 15 minutes or until meat is no longer pink.
  • 5. Meanwhile, in a large saucepan, saute garlic in butter until tender. Stir in the ketchup, honey and soy sauce. Bring to a boil. Reduce heat, cover and simmer for 5 minutes.
  • 6. Drain meatballs and add to the sauce. Carefully stir to evenly coat the balls.
  • 7. Cook for 5 to 10 more minutes. Place on a serving platter with green garnishes, and festive toothpicks.
