HONEY BANANA TEA SANDWICHES
The combination of honey and banana promotes great help with anemia (thanks for that info, Rita!). It also makes a great spread for a tea sandwich! You could use toasted white bread, but I have found that the combo spread on whole wheat bread or pumpernickel is WONDERFUL! It also gives a bit more nutritious value to what you're eating. I don't normally toast the wheat bread for these little treats, but you could. It's also a great recipe to serve to younger tea party guests.

Steps:
- Cut the bread into decorative shapes with a knife or cookie cutter. If the bread is very crumbly, heat the honey just slightly to make it easier to spread.
- Spread both the top and bottom slices with honey and fill with the bananas.
- Trim the crust and cut into fourths.

- spread peanut butter and honey onto all 8 slices of bread.
- combine 2 pieces of bread to make a sandwich (peanutbutter sides IN).
- on a grill pan or skillet heated to medium heat, place the sandwiches on, when one side is light brown, flip it and heat on other side until light brown.
- cut crust off sandwiches, and cut in half.

- Combine the peanut butter, mascarpone, honey and vanilla extract in a medium bowl. Using a rubber spatula, mix everything together until smooth and evenly combined.
- Spread 10 slices of pound cake with 1 tablespoon of the peanut butter mixture. Then spread with 1 teaspoon grape jelly. Complete the sandwiches with a second slice of pound cake. Use a 1 1/2-inch fluted round cutter to cut out little finger sandwiches.
