Antipasto with Pasta image

Great side dish for a BBQ. I found this awhile back on a recipe card I got in the grocery store. Enjoy!

Number Of Ingredients 11

- 16 oz rotini pasta
- 1/4 cup white wine vinegar
- 6 tbsp olive oil, divided
- 1/3 cup fresh chopped basil
- 2 tbsp capers
- 1 garlic clove, minced
- 6 oz mozzarella cheese, sliced or cubed
- 1/2 lb hard salami, sliced or cubed
- 1/2 jar pepperoncini peppers, drained
- 1/3 cup black olives, chopped
- 1 cup grape tomatoes, halved

Steps:

  • Boil pasta in salt water until fully cooked; drain and let cool. Add vinegar and 2 tbsp of olive oil. Cover and refrigerate. Wisk together in a bowl remaining 4 tbsp of oil, basil, capers, and garlic; set aside.Combine mozzarella, salami, pasta,and olives in large bowl. Drizzle with more oil; about another tbsp. Toss well. Add peppers on top for a garnish.Cover and refrigerate at least 30 minutes before serving.
