LAVENDER HONEY GLAZE:
1-1/2 teaspoons lavender blossoms, dried
1/2 cup honey, warmed
1 tablespoon fresh orange zest
1/2 cup orange juice, fresh squeezed
FRUIT SALAD:
4 cups California blue-black seedless grapes
3 cups blackberries
3 cups dark, sweet cherries (such as Bing), pitted
2 cups black-skin plums, sliced
12 fresh lavender blossom sprigs, for garnish

Steps:

  • 1. In a small bowl, whisk together lavender honey glaze ingredients until well combined.
  • 2. In a large bowl, combine fruits for salad.
  • 3. Pour lavender honey glaze over fruits and toss gently to coat.
  • 4. Garnish with fresh lavender blossom sprigs.
  • Lavender, which is used in many Provencal French dishes, adds a fragrant note to this fruit salad. Sage or thyme also works well.

1 cup raw honey (local if you can get it)
5 cups pure water
1 Tbsp. dried, organic culinary lavender (or 1/4 cup fresh lavender blossoms, crushed)
1 cup fresh-squeezed, organic lemon juice, strained
Ice cubes
Lavender sprigs for garnish

Steps:

  • Bring 2 1/2 cups water to boil in a medium pan Remove from heat and add honey, stirring to dissolve. Add the lavender to the honey water, cover, and let steep at least 20 minutes or up to several hours, to taste Strain mixture and discard lavender Pour infusion into a glass pitcher Add lemon juice and another 2 1/2 cups of cold water. Stir well. Refrigerate until ready to use, or pour into tall glasses half-filled with ice, then garnish with lavender sprigs. Sit on the porch a spell and enjoy!

Yummy fresh fruit, warm lavender flavors and sweet agave nectar sauce with crisp mint leaves to put that edge on the whole salad really come together to make a really wonderful salad! And although I made the salad with agave necter, you can actually use honey if you would like and if you can not find lavender - no worries! Just substitute 1/4 cup coarsley shopped fresh mint.

2 tablespoons honey or 2 tablespoons agave nectar
3/4 teaspoon dried lavender
1/8 teaspoon fresh ground pepper
1 tablespoon fresh lime juice
1 peach, -sliced into 1/2-in . thick wedges
1 nectarine, sliced into 1/2-in . thick wedges
1 large plum, sliced into 1/2-in . thick wedges
1 cup raspberries
1 cup blackberry
3/4 cup blueberries
1 tablespoon small whole mint leaf

Steps:

  • 1. Make sauce: Combine agave nectar or honey, 1/3 cup water, lavender, pepper & a pinch of salt in a small saucepan. Bring to a simmer over medium heat, stirring until agave/honey has dissolved. Remove from heat and cover. Let steep for about 15-20 minutes. Strain into a bowl and discard lavender and stir in lime juice.
  • 2. Add peach, nectarine, and plum to sauce and toss well. Add berries and mint and toss gently to combine. Refridgerate 1 hour or until chilled.
  • 3. Serve & enjoy!
