This is a nice rich mac and cheese. Serve with a salad for a great meatless dinner. Hope you enjoy it.

8 ounces uncooked elbow macaroni
2 cups shredded sharp Cheddar cheese
½ cup grated Parmesan cheese
3 cups milk
¼ cup butter
2 ½ tablespoons all-purpose flour
2 tablespoons butter
½ cup bread crumbs
1 pinch paprika

Steps:

  • Cook macaroni according to the package directions. Drain.
  • In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
  • Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

1-1/2 cups cooked elbow macaroni
1 cup shredded sharp cheddar cheese
1/2 cup whole milk
1 large egg, lightly beaten
1/2 teaspoon salt

  • Preheat oven to 350°. In a medium bowl, combine macaroni, cheese, milk, egg and salt; mix well. Pour into a greased 1-qt. shallow baking dish; dot with butter. Bake, uncovered, until a knife inserted in the center comes out clean, 30-35 minutes.

1 package (16 ounces) spiral pasta
3 tablespoons butter
3 garlic cloves, minced, optional
3 tablespoons all-purpose flour
1/8 teaspoon pepper
Dash salt
4 cups 2% milk
5 cups shredded sharp cheddar cheese, divided
1 cup shredded Asiago cheese

Steps:

  • In a Dutch oven, cook pasta according to package directions. , Meanwhile, in a large saucepan, melt butter over medium heat. Add garlic if desired; cook and stir for 1 minute. Stir in flour, pepper and salt until blended; cook and stir until golden brown, about 5 minutes. Gradually whisk in milk, stirring until smooth. Bring to a boil; cook 2 minutes longer or until thickened. , Remove from heat. Stir in 4 cups cheddar cheese and Asiago cheese until melted. Mixture will thicken. , Preheat oven to 350°. Nonstick cooking spray
2 cups orecchiette pasta
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup milk
1 cup shredded sharp white Cheddar
1 cup shredded gruyere cheese
Salt and ground black pepper
8 slices crispy cooked bacon, finely chopped

Steps:

  • Preheat the oven to 375 degrees F and lightly spray a 2-quart oven-safe casserole dish with nonstick cooking spray. Set aside.
  • Bring a large pot of water to a boil and cook the pasta until al dente, following the directions on the pasta package. (You'll want it to still have a bite to it because it will finish cooking in the oven.) Drain well.
