1 pound lean ground turkey
2 teaspoons garlic powder
1-1/2 teaspoons fennel seed, crushed
1-1/2 teaspoons sugar
1 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon pepper

Steps:

  • In a bowl, combine the turkey, garlic powder, fennel seed, sugar, salt, oregano and pepper. Cover and refrigerate for at least 8 hours or overnight. Shape into eight patties. Cook in a nonstick skillet coated with cooking spray for about 3 minutes on each side or until a thermometer reads 165°. Or crumble turkey into a nonstick skillet coated with cooking spray. Cook and stir for about 4 minutes or until meat is no longer pink.

2 1/2 pounds turkey meat, diced
1/2 cup chopped garlic
6 teaspoons chili powder
4 tablespoons paprika
2 teaspoons cayenne
2 teaspoons ground cumin
2 teaspoons salt
1 teaspoon crushed red pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon freshly ground black pepper
2 teaspoons onion powder
1/2 teaspoon garlic powder

Steps:

  • Prepare the smoker. In a large mixing bowl, add the turkey. In a small mixing bowl, combine the remaining ingredients together. Mix well. Toss the turkey with the seasoning blend and mix well. Cover and refrigerate for 24 hours. Grind the meat twice in a meat grinder fitted with a 1/2-inch die. A food processor could also be used to grind the meat. Stuff half of the mixture into 1 1/2-inch casings, forming 6-inch links. Form the remaining into 3 (1/2 pound) patties. You can either use the sausage fresh or smoke the sausage. For the smoked sausage: Place the sausage in the smoker and cook for 10 to 15 minutes.

1 teaspoon dried rubbed sage
3/4 teaspoon salt
3/4 teaspoon ground black pepper
1/2 teaspoon dried thyme
1/4 teaspoon garlic powder
1/8 teaspoon ground allspice
1 lb 93% lean ground turkey
1 tablespoon olive oil, divided use

Steps:

  • Whisk together the fennel seed, sage, salt, pepper, thyme, garlic powder and allspice in a small bowl.
  • Place the turkey in a medium bowl, then sprinkle the seasoning blend over it.
  • Use your clean hands or 2 forks to gently work the seasoning into the meat, being careful not to overmix.
  • It's OK if they are not absolutely evenly distributed throughout.
  • Form the mixture into 8 (3 inch) patties. May be refrigerated to meld flavors or frozen for future use.
  • Heat half the oil in a medium skillet over medium high heat. Once the oil shimmers, add half the patties; cook until nicely browned on the outside and cooked through, about 3 minutes per side.
  • Transfer to a plate; repeat with the remaining oil and patties.

I cooked these this morniing and wanted to find ot the nutritional value. They are actually very tasty. After viewing some recipes that advise to cover and refrigerate before cooking, I will prepare again, using that method. My daughter and I enjoyed them. Hope you will too. And as with all of my recipes, there is no salt added. Unfortunately, the site does not recognikze Mrs. Dash, so the sodium levels are alway incorrect.

1 lb 93% lean ground turkey
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
1/2 teaspoon Mrs. Dash table blend seasoning
1/2 teaspoon cayenne pepper
1/4 teaspoon red pepper flakes
1 garlic clove, minced
1 tablespoon pure maple syrup
1 pinch nutmeg
cooking spray
1 teaspoon olive oil

Steps:

  • Combine ground meat with all ingredients, up to and including the nutmeg. Cover the bowl and refrigerate for at least 1 hour or overnight. Form the mixture into 8 patties or links if you prepfer. Two ounc each. When ready to cook. Spray a skillet with cooking spray and heat over med-high heat. Add the oil. When the pot is hot, add the patties and cook for about 4 minutes. Spray the top of the patties and flip, to cook the other side. Cook for an additional 4 minutes or until done. Transfer the patties to a plate lined with paper towel to drain. Serve and Enjoy. 1 serving equals to patties.

1/2 cup apple, peeled & shredded
1/2 teaspoon dried sage, crushed
1/4 teaspoon black pepper
1/8 teaspoon salt
1/8 teaspoon paprika
1/8 teaspoon ground red pepper
1 dash ground nutmeg
8 ounces lean ground turkey
nonstick spray coating

Steps:

  • In a large bowl combine bread crumbs, apple, sage, black pepper, salt, paprika, ground red pepper and nutmeg.
  • Add turkey and mix well.
  • Shape mixture into 4 patties (1/2 inch thick).
  • Spray the unheated rack of a broiler pan with nonstick cooking spray.

1/4 cup dried apples (dried are better than fresh) or 1/2 cup fresh apple, finely chopped (dried are better than fresh)
1 egg white, beaten
3 tablespoons quick-cooking oats
2 tablespoons fresh parsley, finely chopped
1/2 teaspoon salt
1/2 teaspoon ground sage
1/4 teaspoon pepper
1/4 teaspoon nutmeg
1 dash red pepper
1/2 lb ground turkey

Steps:

  • Lightly coat a 10-inch skillet with cooking oil spray and set aside.
  • Place 3 or 4 paper towles on a plate and set aside.
  • In a medium bowl, combine onion, apples, egg white, oats, parsley and spices.
  • Add the ground turkey and mix well.
  • Shape mixture in eight 2-inch wide patties.
  • Preheat the skillet over medium heat.
