1 lb lean ground beef
1/4 c beef stock or water
SPICES
1 Tbsp chili powder (i like hot)
1/2 tsp hungarian paprika
1/4 tsp cayenne pepper
2 tsp ground cumin

1/4 tsp garlic powder
1 tsp salt, kosher variety, or to taste
1 tsp freshly ground black pepper, or to taste
1/4 c yellow onion, finely chopped

Steps:

  • 1. Gather your ingredients.
  • 2. Mix all the dry spices together.
  • 3. Chop up the onions.
  • 4. Place the ground beef in a mixing bowl.
  • 5. Add the dry spices, the onion, and 4 tablespoons of beef stock or water.
  • 6. Mix the ingredients together.
  • 7. Chef's Note: You don't have to go too crazy with the mixing. Just get them combined. They will have plenty of time in the slow cooker to get to know each other.
  • 8. Add the mixture to the slow cooker, and then add the remaining beef stock, or water.
  • 9. Set your slow cooker to low, and set a timer for two hours.
  • 10. After two hours open the slow cooker, and breakup the taco meat.
  • 11. Return the cover to the slow cooker, and set the timer for an additional two hours.
  • 12. After two hours, open slow cooker and again break the meat apart.
  • 13. Chef's Tip: You might want to have some additional beef broth on hand, just in case the taco meat begins to dry out.
  • 14. Close the lid, and set the timer for the last two hours.
  • 15. At the end of six hours total time, remove that wonderful smelling taco meat from the slow cooker.
  • 16. Chef's Note: If there is any grease, absorb it with a few paper towels. However, if you use lean ground beef, you probably won't have this problem.
  • 17. What you do at this point is totally up to you. It goes good on a taco salad, stuffed shells; just plain old tacos, or anything else you can come up with. Enjoy.
  • 18. Keep the faith, and keep cooking.

The cook times vary: 3 - 9 minutes depending on brand. Finish prepping condiments and toppings while meat mixture simmers down to almost no liquid but is still moist. If you shop online, you can go to Amazon, and type in "Weck Jars" and you will find a ton of them. Dry spices should be kept in a cool space, away from sunlight (spice cabinet), and sauces, in most cases, should be stored in the fridge. If properly stored, this taco spice should last 6 - 8 months.

Years ago I used to buy those packets of taco seasoning mix, and at first they really weren't too bad. Not at all. Then through the years they got worse and worse, and I'd have to doctor them more and more until I finally just got fed up. They became VERY expensive little flour and salt packets with almost no flavor at all. Sooo, I've come up with my own starting from several that I found and incorporating my own ideas and tastes. 2 tsp. - seasoning salt, i always use johnny's
1/4-1/2 - tsp. cayenne, to taste for heat preference
1 tsp. - onion powder
2 tsp. - good dark chili powder (just not the el cheapo orangey stuff)

2 tsp. - cumin
1 cup - beef bouillon, i always use superior touch better than bouillon beef base using 2 tsp.

2 Tbl. - dried minced onion

1/2 tsp. - sugar
1 Tbl. - ketchup
1 1/2-2 - cups beer, can sub water but use less as needed
2 lbs. - meat (ground beef, cubes of beef or pork, chicken cubes or strips)
- chopped jalapenos, fresh or jarred, optional

Steps:

  • Cook meat with or without jalapenos. Drain grease. Mix all dry seasonings and flours and whisk or shake in jar to mix. Sprinkle evenly over meat, toss meat to coat. Add bouillon, beer and ketchup. Stir til mixed. Heat to boiling, reduce heat and simmer til thick. (About 15-20 minutes.)*If using beer, don't worry, it doesn't taste like beer and most of the alcohol will cook out. This is especially good when using beef or pork cubes because beer is a natural meat tenderizer. When I make pork tacos, I simply use pork loin chops and cut them into bite-sized cubes.
