HOMEMADE FLOUR TORTILLAS
Traditional flour tortillas - homemade and much better than store bought. Do not substitute vegetable oil or shortening for the lard.

Steps:
- Whisk the flour, salt, and baking powder together in a mixing bowl. Mix in the lard with your fingers until the flour resembles cornmeal. Add the water and mix until the dough comes together; place on a lightly floured surface and knead a few minutes until smooth and elastic. Divide the dough into 24 equal pieces and roll each piece into a ball.
- Preheat a large skillet over medium-high heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side. Place the cooked tortilla in a tortilla warmer; continue rolling and cooking the remaining dough.

SOFT SHELL TACO RECIPE WITH CLASSIC GROUND BEEF & SPICY TACO SEASONING

Steps:
- Heat a large-sized cast-iron skillet on the stovetop over medium heat. Once preheated, add 1 Tbsp of olive oil.
- Once your olive oil is hot, toss in your diced onion, fresh garlic, and bell pepper. Cook, occasionally stirring until your onion is translucent and the veggies are soft.
- Remove the ground beef from its package and add it into the skillet. Use a large spoon to break down the meat into smaller pieces and cook until the beef browns.
- Carefully drain the excess grease from your pan before you add your seasonings. Pour the oil into a container for easy disposal - do not pour it down your drain!
- Add in your beef seasonings - chili powder, cumin, red pepper flakes, Mexican oregano, and salt.
- Cook for 2-3 mins, then taste and adjust seasonings as needed.
- Scoop out some ground beef and place it on your taco shell, then top with all your favorites - tomatoes, grated cheese, and sour cream.
- Serve and enjoy this easy soft taco recipe!

- In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. HOMEMADE TACO SHELLS #1
These are so good, you may NEVER buy taco shells again! But be prepared to be the last one to have a chance to sit down and eat. As soon as I sit down to eat my first taco, my guests are needing their 3rd or 4th or 5th one cooked...But, it is well worth it to hear that these are the best tacos they have ever had!

Steps:
- Preheat a dry skillet over medium/high heat.
- Mix the ingredients well.
- The batter will be runny.
- Drop by large utensil spoonful onto skillet, quickly spreading the batter in a circular motion, working from the inside out.
- Each side only takes about 1 minute of cooking.
- The shells are not supposed to brown.
- When the shells are removed from the pan, they can be molded into"taco shell shape" by placing, half-curled, between two objects, such as coffee cups.
- I like to serve them to each guest directly from the pan without molding them, however, becuz I find that they dont crack while still hot and pliable.
- Fill with all the taco stuffin's and enjoy!
GROUND BEEF SOFT TACOS

- Heat a non-stick, medium size sauté pan over medium-high heat; on the stove top. Place raw ground beef into pan and brown (approximately 5 minutes); then drain. Place drained cooked beef back into the non-stick sauté pan, add taco seasoning and water. Continue to cook until water is gone and beef is thoroughly mixed with seasoning. Reserve warm.
- Fill each tortilla with approximately ¼ cup of reserved taco meat, top with 1 tablespoon of lettuce, 1 tablespoon of pico de gallo and 1 tablespoon of shredded cheese.

these are homemade soft taco shells my mom would make when we were growing up, we always loved them. I don't know where she got the recipe i don't think she even knows, she's a great collector of recipes. My husband even likes these and he's not a big fan of soft taco shells!
