HOMEMADE SLOPPY JOES
Despite the name of this iconic retro dish, the secret to a great sloppy joe is a thick, rich, almost dry consistency, which allows the sandwich to be eaten with your hands. Serve on hamburger buns.

Steps:
- Place ground beef and onion in a large skillet. Turn heat to medium and cook and stir the mixture constantly until the beef is browned and forms small crumbles, about 10 minutes.
- Stir in garlic and green bell pepper; cook and stir until softened, 2 to 3 minutes. Add 1 cup water and stir, scraping the pan to dissolve any brown flavor bits from the bottom of the skillet.
- Mix in ketchup, Worcestershire sauce, brown sugar, Dijon mustard, salt, and black pepper. Add 1 more cup water and return mixture to a simmer. Reduce heat to low and simmer, stirring occasionally, until the liquid has evaporated and the mixture is thick, about 40 minutes.
- Season with salt , black pepper, and cayenne pepper to taste.

I never really liked store bought sloppy joes because of the onions. So when I was teenager I came up with my own version without them. Over the years I have fiddled with the recipe to make it even more delicious. My dad uses it as his hot dog chili. Each to their own.

- 1. In frying pan, brown ground beef til no longer pink, breaking up into very small pieces as you cook. (If you leave it in larger pieces/chunks, the meat won't all get coated as much, and won't be as good. Will also fall off the bun more easily.) Drain grease. Add rest of ingredients, stir well to mix. Simmer over low heat for 5-10 minutes or so, stirring ocaisionally. Serve on warmed hamburger buns or hawaiian rolls with a little american cheese if desired. *If using as a bbq sauce, simmer ingredients in a small saucepan over low heat for about 10-15 minutes, stirring ocaisionally. Grill meat (chicken, etc.) til just done or almost done. Baste well with sauce and cook 3-5 minutes longer. Turning and basting. **If baking instead of grilling, the bbq-style sauce can be added to the raw meat and baked the entire time at 350 degrees til done. (*Boneless skinless chicken breasts from Walmart take 30 minutes at 350. Uncovered.) I like the ones from Walmart the best, they seem to be the juiciest for whatever reason! HTH! :D

- 1. I doubled this recipe, and the directions stated you should get 8 sandwiches from 1 pound of ground beef, NOT IN MY HOUSE. I USED 93% LEAN GROUND TURKEY INSTEAD OF GROUND BEEF. I used 2 1/2 pounds. THIS IS MY VERSION OF THE RECIPE FOUND ON THE HEINZ BOTTLE. From now own I will be looking for the recipes on the back of the Ketchup bottles. This one was awesome.
- 2. Heat oil in large skillet over medium high heat, Add the chopped onions and peppers and sauté about 5 minutes.
- 3. Then add the Ground Turkey, & cook until it is browned and no pink remains. Drain any excess liquid through a strainer or colander. Then add the meat back into the pan.
- 4. Measure catsup into a 4 cup measure, then add the Worcestershire sauce and Brown sugar, stir to blend, then pour into skillet, add diced drained tomatoes and turn heat to medium low, stir to blend ketchup mixture with meat mixture, and continue to cook, add salt and pepper if desired. Stir occasionally to prevent sticking, and allow to continue to cook for at least 10 to 15 minutes, and mixture has thickened.
- 5. Serve on Sandwich buns as desired, toasted or untoasted, with additional condiments if desired.
- 6. This is what we had left from the original 2 1/2 pounds of ground turkey.
"BETTER THAN A CAN" HOMEMADE SLOPPY JOES
I've had this recipe for many years and I used to make it on a regular basis when I was a newly-wed and made it often for the kids when they were itty bitty. It is a great recipe and one well worth making from scratch. Due to a crazy work and life schedule, I weened off of making it but I'm placing it back on my repertoire. I originally got this recipe from an old foodnetwork show called "Chef DuJour" where a different chef was featured daily. This particular day, Lauren Groveman was the chef who presented this recipe.

- To start the sauce: Heat a 2 1/2-quart nonreactive saucepan over medium heat and, when hot, add the oil.
- When the oil is hot, stir in the onion, green and red pepper, celery and garlic. Cook until the vegetables are softened and fragrant, 4 to 5 minutes.
- Stir in the tomato puree, tomato paste, ketchup, vinegar, molasses and Worcestershire sauce. Bring the mixture to a simmer, reduce heat to very low and simmer with the cover ajar for 1 hour.
- To sauté the mushrooms: Heat an 8 - 10 inch skillet over high heat and, when hot, add the olive oil. When the oil is hot, add the chopped mushrooms and cook, stirring frequently, until the mushrooms are golden, 2 to 3 minutes. Remove from the heat and set aside.
- To finish the sauce: After the sauce has simmered 1 hour, add the sautéed mushrooms, chopped plum tomatoes, oregano, "Better Than Bouillon" seasoning and some freshly ground black pepper. Return to a simmer and cook with the cover ajar for 30 minutes more. (Refer to Note below).
- To brown ground meat: Heat a 10-inch non-reactive deep-sided skillet over medium heat. When hot, add the ground meat and break it up with a wooden spatula. Cook the meat until separated and no longer pink, about 4 minutes. Then remove from the stove and drain out any excess fat from skillet. Return skillet to the stove, over low heat. Stir in the sauce and bring the mixture to a gentle simmer, uncovered. Cook gently until the flavors mingle and the mixture is piping hot throughout, about 10 minutes. Add some more freshly ground black pepper and serve immediately.
- To assemble Sloppy Joes and serve: While the sauce is simmering, open the hamburger buns and spread both opened sides lightly with butter. Lay the buns, buttered sides up, on a shallow baking sheet. Broil the buns until the buttered sides are nicely toasted. Spoon the ground beef mixture lavishly over buns and serve hot.
- NOTE: If serving for 8 [could serve 10 for skimpier sandwiches], you will need 2 cups of sauce and 2 lbs of ground beef. If serving 4, you will need 1 cup of sauce and 1 lb. of ground beef. The remaining sauce can be frozen for later use and ease. Freeze cooled sauce in tightly sealed containers.
