3 (1/4 cup) scoops vanilla ice cream, or to taste
2 almonds, chopped
1 fresh strawberry, sliced
1 banana, sliced
3 maraschino cherries
2 tablespoons whipped cream, or to taste
2 tablespoons strawberry syrup, or to taste

Steps:

  • Place ice cream scoops in a row in an oblong dish. Sprinkle almonds around the ice cream, then strawberry slices, and then banana slices. Place 1 cherry on top of each ice cream ball except the middle one. Put whipped cream on the middle ice cream scoop and top with remaining cherry. Drizzle with strawberry syrup.

Summer celebrations with my family aren't complete until I dish out tasty homemade ice cream. This recipe from my mom is a favorite.

Yield 1-1/2 quarts.

3/4 cup plus 2 tablespoons sugar
1 cup water
1 cup milk
2 cups miniature marshmallows
4 teaspoons lemon juice
1 can (8 ounces) crushed pineapple, undrained
2 medium ripe bananas, finely chopped
1/2 cup chopped maraschino cherries, drained and patted dry
1 cup heavy whipping cream, whipped
Chocolate syrup

Steps:

  • In a heavy saucepan, bring the sugar, water and milk to a boil. Reduce heat; cook until sugar is dissolved. Add marshmallows and stir until melted. Remove from the heat; cool for 15 minutes. Stir in lemon juice. Cover and refrigerate for 8 hours or overnight., Stir in the pineapple, bananas and cherries. Fold in whipped cream. Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. Refrigerate remaining mixture until ready to freeze. Allow to ripen in an ice cream freezer or firm up in the refrigerator freezer for 2-4 hours before serving. Serve with chocolate syrup.

I work at an ice cream parlor, and I can honestly say this ice cream will give any store-bought ice cream a run for its money! From start to finish this recipe takes about a day to make, however most of that time is for the ice cream base to chill before freezing in your ice cream maker as well as freezing it before serving.

1 pint heavy whipping cream
⅓ cup white sugar
½ teaspoon salt
3 egg yolks
1 banana, mashed
1 teaspoon vanilla extract
½ (5 ounce) jar maraschino cherries, chopped
1 tablespoon strawberry jam, or to taste
1 tablespoon chocolate syrup, or to taste

Steps:

  • Combine heavy cream, sugar, and salt in a saucepan. Heat over medium heat until steaming, 3 to 4 minutes.
  • Whisk egg yolks in a bowl. Whisk in 1 cup of the hot cream. Pour egg and cream mixture back into the saucepan; cook and stir until mixture coats the back of a spoon, about 4 minutes. Mix in banana and vanilla extract.
  • Transfer mixture to the refrigerator; chill until very cold, at least 2 hours.
  • Freeze cold mixture in an ice cream maker according to manufacturer's instructions. Transfer to a freezer-safe container; fold in maraschino cherries, strawberry jam, and chocolate syrup.
  • Freeze ice cream until firm, about 4 hours.

Get out the chocolate syrup and SURE.JELL Fruit Pectin and get ready to knock their socks off with this 30-minute strawberry-banana split freezer jam.

Yield Makes about 6 (1-cup) containers or 96 servings, 1 Tbsp. each.

Number Of Ingredients 7

2 cups crushed strawberries (about 1 qt. fully ripe strawberries)
1/2 cup mashed banana (about 2 small bananas)
4 cups sugar, measured into separate bowl
2 Tbsp. lemon juice
2 Tbsp. chocolate syrup
3/4 cup water
1 box SURE-JELL Fruit Pectin

Steps:

  • Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
  • Combine exactly 2 cups crushed strawberries and 1/2 cup mashed bananas in large bowl. Stir in sugar and lemon juice; let stand 10 min., stirring occasionally. Add chocolate syrup; mix well.
  • Mix water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Boil and stir 1 min. Add to fruit mixture; stir 3 min. or until sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.
