4 cups miniature marshmallows
8 ounces white baking chips (about 1-1/3 cups)
1/4 cup butter, cubed
6 cups crisp rice cereal

Steps:

  • In a Dutch oven, combine marshmallows, baking chips and butter. Cook and stir over medium-low heat until melted. Remove from heat. Add cereal; stir to coat., Transfer to a greased 13x9-in. pan; gently press mixture evenly into pan. Cut into bars.

These Speical K Bars are super chewy, gooey, no-bake cereal bars loaded with peanut butter, chocolate, and sprinkles!! Like scotcheroos, but with Special K!

Number Of Ingredients 10

5 to 6 cups Special K cereal (less cereal results in gooier bars)
1/2 cup unsalted butter
1 cup light brown sugar, packed
1 cup light-colored corn syrup
heaping 1/2 cup peanut butter
1/2 teaspoon vanilla extract
1/4 teaspoon salt
one 12-ounce bag semi-sweet chocolate chips
1/4 cup unsalted butter
holiday sprinkles, as desired

Steps:

  • Line a 9×13-inch pan with aluminum foil for easier cleanup and spray with cooking spray; set aside.
  • To a large bowl, add the Special K; set aside.
  • To a medium, high-sided stockpot, add the butter and heat over medium-high heat to melt.
  • After the butter is mostly melted, add the brown sugar, corn syrup, and whisk to combine. Boil for 3 minutes, stirring intermittently.
  • Remove the pot from the heat, add the peanut butter, vanilla, salt, and whisk to incorporate.
  • Pour mixture over the Special K and using a spatula, stir to toss and coat evenly.
  • Turn cereal out into prepared pan, lightly pressing it with a spatula; set aside while you make the topping.
  • To a medium microwave-safe bowl, add the chocolate chips, butter, and heat in 3-second bursts until chips and butter have melted and can be stirred smooth.
  • Turn the chocolate topping out over the cereal, smoothing the top lightly with a spatula to distribute it.
  • Evenly sprinkle with the sprinkles and allow bars and chocolate to set up before serving, about 2 hours. If you're in a rush, you can put the pan in the fridge to save time.

Peanut Butter and Chocolate Cereal Treats image

Nonstick cooking spray, for the parchment and spatula
6 tablespoons unsalted butter
One 10-ounce bag mini marshmallows
One 18-ounce box peanut butter crunch cereal, such as Peanut Butter Cap'n Crunch
1 cup honey-roasted peanuts
6 ounces semisweet chocolate chips, melted

Steps:

  • Line a 9-by-13-inch baking dish with a piece of parchment paper, leaving 1 inch of paper hanging over each side of the dish. This will help with removing the treats later. Spray the parchment paper with nonstick spray.
  • In a 6-quart Dutch oven over medium heat, melt the butter. Add the marshmallows and cook, stirring continuously, until the marshmallows are melted and the butter is incorporated, 3 to 5 minutes. Reduce the heat to low and quickly add the cereal and peanuts; stir to combine. Transfer the cereal mixture to the prepared baking dish. Lightly coat a spatula with cooking spray, then use it to spread out the cereal mixture evenly.
  • Put the melted chocolate in a plastic sandwich bag (or pastry bag), cut off one corner and drizzle over the top of the cereal treats. Refrigerate, uncovered, until set, 1 to 1 1/2 hours.
  • Remove the cereal treats using the parchment paper and cut into 24 bars.

1 1/2 cups creamy peanut butter
6 cups Cocoa Puffs cereal
1 1/2 cups red and green m&m candies

Steps:

  • Spray bottom and sides of a 13 x 9 inch pan with cooking spray.
  • In a 2-quart saucepan, heat sugar and corn syrup to boiling over med-high heat, stirring constantly.
  • Remove from heat; stir in peanut butter until melted.
  • In an extra-large bowl, stir cereal and peanut butter mixture with wooden spoon until cereal is evenly coated; stir in 1 cup of the candies.
  • Press cereal mixture in pan, immediately sprinkle with remaining 1/2 cup candies; press in lightly with fingers.
  • Let stand about 30 minutes until cool; cut into 6 rows by 6 rows.

1 jar (7 ounces) marshmallow creme
2 tablespoons baking cocoa
1 teaspoon vanilla extract
6 cups crisp rice cereal

Steps:

  • In a heavy saucepan over low heat, melt butter and chocolate; stir until smooth. Stir in the marshmallow creme and cocoa; cook and stir until smooth. Remove from the heat; stir in vanilla and cereal. Pat into a 13-in. x 9-in. pan coated with cooking spray. Cool before cutting.
