STEAK WITH HORSERADISH AND DIJON MUSTARD CRUST image

*1/2 cup chopped fresh horseradish
*3/4 cup water
*6 10-ounce New York sirloin steaks, trimmed of excess fat
*6 teaspoons Dijon mustard
*1-1/2 cups fresh white breadcrumbs
*4 tablespoons vegetable oil

Steps:

  • Preheat oven to 350 degrees. Puree horseradish and water in blender until smooth. Transfer horseradish mixture to strainer and drain excess water. Sprinkle steaks with salt and pepper. Spread 1 teaspoon mustard, then 1 tablespoon horseradish atop each steak. Press 1/4 breadcrumbs into each steak. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add 3 steaks, crumb side down. Cook until brown, about 4 minutes per side. Transfer steaks to baking sheet, crumb side up. Repeat with remaining 2 tablespoons oil and steaks. Bake steaks in oven until tester inserted into center registries 135 degrees for medium-rare, about 6 minutes.
