Number Of Ingredients 12

1 small onion, chopped
1 teaspoon canola oil
2 garlic cloves, minced
1 can (15 ounces) black beans, rinsed and drained
1/2 cup diced fresh tomato
1/3 cup picante sauce
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 cup shredded reduced-fat Mexican cheese blend or cheddar cheese
1/4 cup minced fresh cilantro
1 tablespoon lime juice
Tortilla chips

Steps:

  • In a large nonstick skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add beans; mash gently. Stir in the tomato, picante sauce, cumin and chili powder. Cook and stir just until heated through. Remove from heat; stir in cheese, cilantro and lime juice. Serve warm with chips.

This layered dip is always a hit! Great at parties or as an appetizer. Sometimes if I can't find raspberry salsa in the market I'll use my favorite salsa with fresh or frozen raspberries. It's also great the next day...Enjoy!

1 (15 ounce) can black beans, drained
1 (8 ounce) package cream cheese, thinly sliced
1/2 onion, diced
1 (8 ounce) jar raspberry salsa
2 cups monterey jack cheese, shredded

Steps:

  • Layer ingredients in a square 9x9 greased baking dish as follows, starting with black beans on the bottom and ending with cheese on top:.
  • black beans, thinly sliced cream cheese, onion, salsa, and then top with cheese.
  • Bake 350 degrees uncovered for 30 minutes until bubbly!

Number Of Ingredients 12

2 tablespoon olive oil
One medium onion, finely chopped
6 cloves garlic, minced
2 15 oz. cans black beans,rinsed and drained
1 cupcorn kernels
1 cup rotel,w some juices(you can use hot rotel if u like it more spicy), 2 teaspoons dried oregano
2 teaspoons ground cumin
1 teaspoon ground coriander
1/2 teaspoon Spanish smoked paprika
1/2 teaspoon ground chipotle powder
salt to taste
1 cup shredded low fat cheese of your choice

Steps:

  • Preheat oven to 350 degrees Heat oil in a large skillet. Saute onions and garlic for 1-2 minutes until onions are softened. Add black beans and cook another minute or two until warmed. Mash lightly with the back of a large spatula. Add corn,rotel,oregano,cumin,coriander,smoked paprika,chipotle powder, and salt to taste. Cook for 2-3 minutes until vegetables are warmed through Spoon contents of pan into a pie pan. Sprinkle with cheese on top Bake until cheese is melted about 15 minutes serve with corn chips and crackers
