Hawaiian Green Papaya Salad image

This is my own version of a local favorite, papaya salad. It is wonderful to take to potluck or other gatherings, because it gets better with a few hours of resting time. 'Tis very nice with fresh ahi sashimi, brown rice, and a glass of icy Gewurztraminer. The sweetness of the wine softens the heat of the salad. Serve garnished with edible flowers or roasted sesame seeds.

Number Of Ingredients 9

2 medium (blank)s red bell peppers, chopped
1 large tomato, cut into wedges
1 large cucumber, cubed
3 tablespoons coconut vinegar
3 tablespoons sesame oil
1 tablespoon soy sauce
1 tablespoon sea salt
4 medium green papaya, peeled and cut into chunks
sea salt to taste

Steps:

  • Place bell peppers, tomato, and cucumber in a ceramic or glass bowl. Add vinegar, oil, soy sauce, and 1 tablespoon salt. Let marinate while you prepare the papayas.
  • Chop papayas using a food processor.
  • Pour papayas into a large bowl and sprinkle with more salt; let sit for 5 minutes.
  • Transfer marinated vegetable mixture and extra marinade to papayas and mix well. Taste and adjust oil, vinegar, or soy sauce as needed. Refrigerate for 30 minutes for flavors to blend.
