1/2 loaf (1-pound size) Italian or French bread
1/4 cup butter or margarine, softened
3 tablespoons chopped fresh parsley
1/4 teaspoon garlic powder

Steps:

  • Heat oven to 400°F. Cut bread diagonally into 1-inch slices.
  • Mix remaining ingredients. Spread butter mixture over one side of cut surfaces of bread; reassemble loaf.
  • Wrap loaf securely in heavy-duty aluminum foil. Bake 10 to 15 minutes or until hot.

Crusty Herbed Italian Bread image

This Italian bread recipe has a delightful crusty texture and herb seasoning. This recipe is so simple that anyone can easily make a crusty herb bread!

3 cups all-purpose flour
1 package yeast (rapid-rise recommended)
1 tsp sugar
1 1/4 cups warm water
2 tbsp extra virgin olive oil
1 1/2 tsp garlic salt
1 tsp dried oregano
1 tsp dried basil
2 tsp Italian seasoning
1 tsp dried parsley

Steps:

  • In a large bowl, combine the olive oil with water, yeast and salt. Let it sit for five minutes. Mix the herbs and sugar into the flour.
  • Stir in the flour mixture until the dough is stiff enough to knead. Add the flour a little bit at a time. Three cups flour is an approximate amount, your exact amount may vary. slightly
  • Knead the dough until it is smooth and elastic-just a few minutes.
  • Place dough in a greased bowl; cover and let rise until the dough has doubled. (about 45 minutes)
  • Form the dough into an oval free-form style loaf and place on greased baking sheet. (Dust baking sheet with flour first if desired and make slits in the top of the loaf for a nice finish when done.) Place immediately in a 375º F oven. Do not preheat the oven, the bread will rise some more as your oven heats up. Bake for 30-40 minutes.
  • Note: if you use fresh herbs, triple the amounts shown in the ingredient list

SUSAN'S HERBED ITALIAN BREAD



Susan's Herbed Italian Bread image

I used a bread machine to mix this, but took it out before baking, and let it rise a second time. I wanted to shape it into long loaves like traditional Italian bread.

11 oz lukewarm water
1 tsp sea salt
1 1/2 Tbsp extra virgin olive oil
2 c king arthur white whole wheat flour
1 1/2 c bread flour
2 Tbsp vital wheat gluten
1/4 c grated romano cheese
1 Tbsp dried parsley
2 tsp sugar
2 tsp dried onion flakes
1/2 tsp dried basil leaves
1/2 tsp crushed dried rosemary
1/2 tsp ground dried garlic
2 tsp active dry yeast (for bread machines)

Steps:

  • 1. Place the ingredients into the bread machine in the order given. Turn on bread machine and process according to manufacturer's directions for "dough only" use. Do not bake in the machine.
  • 2. When dough has completed its first rising, turn it out into a large oiled bowl, punch down and knead 5-10 strokes. Cover and let rise in a warm place for 1 hour.
  • 3. When rising is complete, punch down again and divide into 2 parts. Shape each part into a loaf by rolling each ball into a long log. Make 3-4 diagonal slices across the top of each loaf with a very sharp knife, cutting down about 3/4". Put loaves on a large baking sheet that has been dusted with cornmeal. Place pan in oven, with a pan of boiling water on the bottom shelf. Let rise, uncovered, about 20 minutes.
  • 4. After 20 minutes, leaving pan in the oven, set oven to 425 degrees. Bake for 25-30 minutes, until loaves sound hollow when tapped on bottom. Cool on racks.
