8 ounces cream cheese, at room temperature
10 1/2 ounces montrachet or other mild goat cheese, at room temperature
1 1/2 teaspoons minced garlic (2 cloves)
1/2 teaspoon minced fresh thyme leaves
3 tablespoons minced fresh parsley
5 to 6 tablespoons milk, half-and-half or heavy cream
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 loaves 7-grain bread, thinly sliced
1 hothouse cucumber, not peeled

Steps:

  • For the spread, place the cream cheese, goat cheese, garlic, thyme, parsley, 5 tablespoons milk, salt and pepper in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until well mixed. Add an additional tablespoon of milk if the spread is very thick. To make the sandwiches, spread each slice of bread with the goat cheese spread. Slice the cucumber into thin rounds and arrange on half of the bread slices. Top with the remaining bread. Press slightly, trim off the crusts and cut the sandwiches into halves, thirds or triangles. Make these sandwiches in the morning, then cover with damp paper towels and plastic wrap and refrigerate. Cut just before serving.

11 ounces soft goat cheese, room temp
1/2 cup watercress, leaves washed,dried and chopped
16 slices date bread or 16 slices whole wheat bread, crusts trimmed,thin slices
5 tablespoons unsalted butter, room temp
3/4 cup pecans, toasted and finely chopped (almost ground)
watercress (for garnish) (optional)
salt (optional)
white pepper, to taste (optional)

Steps:

  • Place chopped pecans on plate.
  • Mix cheese and watercress in a bowl.
  • Season with salt and a dash of white pepper.
  • Spread mixture evenly over 8 bread slices.
  • Top with remaining bread.
  • Cut sandwiches diagonally in half.
  • Butter all 3 edges of each sandwich triangle.
  • Dip buttered edges of sandwiches into pecans.
  • Arrange sandwiches on platter.
  • Garnish with watercress sprigs.
  • These can be made up to 8 hours ahead.
  • Cover sandwiches tightly; chill until ready to serve.

4 ounces cream cheese, at room temperature
2 ounces fresh goat cheese, at room temperature
3 tablespoons butter, at room temperature
2 tablespoons grated Parmesan
2 teaspoons freshly squeezed lemon juice
1 small clove garlic, crushed
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh dill, plus sprigs for garnish
Kosher salt and freshly ground black pepper
6 slices crustless white sandwich bread, cut into quarters
1 Persian cucumber, thinly sliced
4 breakfast radishes, thinly sliced

Steps:

  • Combine the cream cheese, goat cheese, butter, Parmesan, lemon juice and garlic in a small food processor and process until very smooth and light. Transfer to a medium bowl and stir in the chives, parsley and dill. Season with salt and pepper. Refrigerate until chilled but still spreadable, about 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Spread the bread on a baking sheet and bake, flipping the pieces once, until lightly toasted but not colored, about 10 minutes. Let cool.
  • To serve, spread the cheese mixture on the toasts. Top with the sliced cucumber and radishes and garnish with dill sprigs.

10 ounces chevre goat cheese, at room temperature
1/2 cup chopped, salted, roasted pecans
1 tablespoon honey, preferably mesquite or wildflower
8 slices square, firm cinnamon-raisin bread

Steps:

  • Combine the goat cheese, pecans and honey in a medium bowl and, using a rubber spatula, blend thoroughly.
  • Cut the crusts from the bread and set aside for another purpose.
  • Using 2 slices of the bread, make a sandwich, taking care to spread the goat cheese in an even layer all and the way to the edges of the bread. With a large serrated knife, cut the sandwich diagonally in both directions to create 4 equal triangles. Repeat with the remaining bread and spread to make 16 tea sandwiches.
