I've taken this creamy spread to many holiday gatherings and parties- and there's never any left to bring home! Well-seasoned with a blend of herb flavors, this cheesy treat tastes great on slices of French bread, too.

1 cup butter, softened

Steps:

  • In a large bowl, beat the cream cheese, butter and seasonings until well blended. Cover and refrigerate for at least 2 hours. Serve with crackers.

The author Bill Buford spent years in Lyon, France, researching French cuisine for his book "Dirt." He picked up this recipe from a modern Lyonnaise bouchon, Le Bouchon des Filles. The simple, savory mixture of fromage blanc with shallots, garlic and other seasonings is a mainstay in Lyon, where it often appears with the cheese course. (Or it may be the cheese course.) The name means silk worker's brain, a mysterious reference to the days when silk weaving made Lyon rich. This version is set apart by its lavish use of fresh herbs.

1 pound fresh, whole-milk, full-fat fromage blanc (ideally from a farm)
1 small shallot, peeled and roughly chopped
2 tablespoons chopped fresh herb leaves (such as dill, tarragon, chives, chervil and parsley)
1 1/2 teaspoons extra-virgin olive oil
1 teaspoon red wine vinegar
1/2 small garlic clove
3/4 teaspoon salt, plus more as needed
1/4 teaspoon freshly ground pepper, plus more as needed

Steps:

  • If using farm-fresh cheese, line a sieve with two layers of cheesecloth and place over a bowl. Add the fromage blanc and let it strain at room temperature for at least 3 to 4 hours to eliminate excess liquid.
  • Combine fromage blanc with all remaining ingredients in a food processor and blend until the shallots are finely chopped and the texture begins to resemble cottage cheese, about 30 seconds.
  • Empty into a bowl and whisk; season to taste with salt and pepper. Serve chilled; eat with a spoon or serve with baguette.

1 cup balsamic vinegar
1/4 cup extra-virgin olive oil

1 cup sundried tomatoes, soaked for 15 minutes in hot water
8 ounces creamy goat cheese
1/4 cup sour cream
2 tablespoons chopped fresh oregano leaves
2 tablespoons chopped fresh basil leaves
2 tablespoons chopped fresh thyme leaves
1 pound foccacia bread

Steps:

  • Combine the chicken breasts, vinegar, olive oil, and garlic. Season with salt and pepper. Marinate for at least 4 hours or overnight.
  • Preheat the grill.
  • Remove the chicken from the marinade. Place the chicken on the grill and grill for 4 minutes per side, or until the juices run clear. Remove the chicken from the grill and set aside.
  • In a food processor, combine the sundried tomatoes, goat cheese, sour cream, oregano, basil and thyme. Process until well blended. Season the cheese mixture with salt and pepper. Set aside.
  • Slice each chicken breast half in half. You should have 18 pieces that are each approximately 2 ounces. Cut focaccia into 18 (3-inch by 3-inch)squares. Cut each square in half horizontally. Spread the sundried tomato goat cheese spread on the bottom half of each piece of focaccia. Top the spread with a piece of chicken. Place the top piece of bread on top of the chicken. Serve at room temperature.

2 cups cashews
1 cup warm water
1/4 teaspoon probiotic powder
1 tablespoon light miso
1 tablespoon pine nuts, chopped
1 green onion, chopped
2 tablespoons cilantro, chopped
2 tablespoons chives, chopped
1 clove garlic, chopped finely
1 tablespoon nutritional yeast
Fresh ground pepper, to taste

Steps:

  • Mix probiotic powder with water and stir. Add probiotic mixture to blender, add cashews. Blend at low speed and gradually increase speed and blend until smooth. Spoon mixture into a nut bag or cheesecloth. Squeeze and place in strainer and leave to ferment for up to 8 to 12 hours. Time required to ferment will differ depending on how warm it is. Do not ferment beyond 12 hours as it may become rancid. Once fermentation process is complete, spoon cheese from nut bag into bowl. Add remaining ingredients, stir well together. Place in mini 4.5 inch spring form pan. Press well and leave in fridge for at least 6-8 hrs to mold to the spring form and so flavours are more enhanced. Turn upside down, release from pan and sprinkle with dried herbs. Nut cheese is very dense with the nuts, so only use a little for portions. Cashew cheese is also delicious used when making wraps, spread some cashew cheese spread over the wrap or lettuce leaf, add vegetables and sprouts, perhaps a little salsa.
