2 pounds beef stew meat, cut into 1-inch cubes
2 tablespoons canola oil
3 cups water
1 large onion, chopped
2 teaspoons pepper
1 to 2 teaspoons salt, optional
1-1/2 teaspoons garlic powder
1 teaspoon rosemary, crushed
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon ground marjoram
2 bay leaves
1 can (6 ounces) tomato paste
2 cups cubed peeled potatoes
2 cups sliced carrots
1 large green pepper, chopped
1 package (9 ounces) frozen cut green beans
1 package (10 ounces) frozen corn
1/4 pound mushrooms, sliced
3 medium tomatoes, chopped

Steps:

  • In a Dutch oven, brown meat in oil. Add the water, onion, seasonings and tomato paste. Cover and simmer for 1-1/2 hours or until meat is tender. , Stir in potatoes, carrots and green pepper; simmer 30 minutes. Add additional water if necessary. Stir in remaining ingredients; cover and simmer 20 minutes.

1 medium onion, chopped
1 tablespoon olive oil
2 garlic cloves, minced
1/3 cup cider vinegar
2 tablespoons dry red wine or beef broth
1 can (29 ounces) tomato sauce
1 cup water
1/3 cup chopped roasted sweet red peppers
3 bay leaves
3 tablespoons brown sugar
3 teaspoons beef bouillon granules
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1/3 cup uncooked long grain rice
1/2 pound cubed cooked roast beef
2 cups chopped fresh spinach
Sour cream and grated Parmesan cheese, optional

Steps:

  • In a Dutch oven, saute onion in oil until tender. Add garlic; saute 1 minute longer. Stir in vinegar and wine. Bring to a boil; cook until liquid is almost evaporated., Add the tomato sauce, water, peppers, bay leaves, brown sugar, bouillon and seasonings. Bring to a boil. Stir in rice. Reduce the heat; cover and simmer until rice is tender, 15-20 minutes., Discard bay leaves. Add beef and spinach; cook and stir until heated through and spinach is wilted. ¼ cup canola oil, divided
1 large yellow onion, finely chopped
1 teaspoon ground turmeric
1 ½ pounds boneless chuck roast, cut into 1 1/2-inch cubes
1 ½ cups finely chopped spinach
1 cup finely chopped green onions (green part only)
½ cup finely chopped Italian flat-leaf parsley
¼ cup finely chopped cilantro
¼ cup finely chopped chives
¼ cup finely chopped fenugreek leaves
1 ½ cups water, or more as needed
salt and ground black pepper to taste
1 lemon, juiced
4 dried Persian limes (limoo amani), or more to taste
1 (15 ounce) can red kidney beans, drained and rinsed

Steps:

  • Heat 2 tablespoons oil in a large pot over medium-high heat. Add onion; cook and stir until deep golden brown, 10 to 15 minutes. Stir in turmeric for 1 to 2 minutes. Add chuck cubes; cook until coated in turmeric and browned on all sides, 8 to 10 minutes.
  • Heat remaining 2 tablespoons oil in a separate pot over medium heat. Add spinach, green onions, parsley, cilantro, chives, and fenugreek leaves; cook and stir until deep dark green in color, 5 to 10 minutes.
  • Stir spinach mixture into the onion and chuck mixture. Pour in enough water to create a slurry consistency. Season with salt and pepper. Pour in lemon juice. Reduce heat, cover, and simmer stew until greens soften, about 1 hour.
  • Pierce dried limes with a fork and add to the stew. Continue simmering until chuck is tender, 30 minutes to 1 hour. Stir in red kidney beans. Cook until flavors combine, about 30 minutes. Discard dried limes before serving.

Ground black pepper
2 tablespoons all-purpose flour
2 tablespoons olive oil
3 cups thickly-sliced mushrooms (about 8 ounces)
3 cloves garlic, minced
1/2 teaspoon dried marjoram leaves, crushed OR 1 1/2 teaspoon chopped fresh marjoram leaves
1/2 teaspoon dried thyme leaves, crushed OR 1 1/2 teaspoon chopped fresh thyme leaves
1/2 teaspoon dried rosemary leaves, crushed OR 1 1/2 teaspoon chopped fresh rosemary leaves
1 bay leaf
1 3/4 cups Swanson® Beef Stock
3 cups fresh or frozen whole baby carrots
12 whole small red potatoes

Steps:

  • Season the beef with the black pepper. Coat the beef with the flour.
  • Heat the oil in a 6-quart saucepot over medium-high heat. Add the beef in 2 batches and cook until it's well browned, stirring often. Pour off any fat.
  • Add the mushrooms, garlic, herbs and bay leaf to the saucepot and cook until the mushrooms are tender. Stir in the stock and heat to a boil. Reduce the heat to low. Cover and cook for 45 minutes.
  • Increase the heat to medium-high. Stir in the carrots and potatoes and heat to a boil. Reduce the heat to low. Cover and cook for 30 minutes or until the beef is fork-tender. Remove and discard the bay leaf.

Here's a meaty, cold-weather stew laden with white beans, sweet Italian sausage, rosemary, thyme, cumin and garlic. It is deeply flavored and complex, but quite easy to make. Pan-fry the sausages in a bit of olive oil, then sauté the vegetables with cumin and tomato paste in the drippings. Add plenty of water and the dried beans that, wait for it, you did not have to soak. Simmer until the house is fragrant and the windows fog up (about 2 hours).

1 pound sweet Italian sausage, sliced 3/4-inch thick

2 garlic cloves, finely chopped
1 pound dried great Northern beans, rinsed and picked through

Steps:

  • Heat oil in a large stockpot over medium-high. Add the sausage and brown until cooked through, about 7 minutes. Using a slotted spoon, transfer to a plate lined with a paper towel.

1 large onion, sliced thin
2 lb stew beef, cubed
1 can(s) tomatoes, diced (italian is good), undrained
1/4 c green bell pepper, diced
1 1/2 tsp jalapeno pepper, diced,
2 c beef broth
1/4 tsp sugar (i used splenda)
1 tsp cayenne pepper
1 1/2 tsp ginger, freshly minced (i used powder)
1 lb spinach, fresh
salt and pepper, to taste
cooking spray

Steps:

  • 1. Spray crock pot with cooking spray.
  • 2. Place all ingredients, except spinach, in crock pot in order listed. Cook on low for 6.5 - 7 hours.
  • 3. Rinse spinach well to remove any trace of grit or dirt. One hour before the end of cooking time, add spinach to crock pot and stir in thoroughly. Continue to cook on low for 30 minutes - 1 hour until spinach is done to desired tenderness.
  • 4. Serve with white rice and crusty bread. Plate and enjoy!

3 tablespoons extra-virgin olive oil, plus more for serving
1 sweet onion, such as Vidalia, thinly sliced (1 1/2 cups)
3 cloves garlic, thinly sliced
12 ounces fresh spinach, tough stems removed, cut into 2-inch pieces (6 cups)
12 ounces spaghetti
1 cup fresh or frozen peas

This is the best beef stew I have ever tasted and I am a huge fan of stew and have eaten a ton of it over my life. I found this recipe in a Light and Tasty catalog several years ago while at the dentists office. Of course I couldn't steal the recipe out of it but I immediately went on the hunt for it as soon as my root canal had calmed down and it was well worth the hunt. Everyone who tastes this stew begs for the recipe. I hope you all enjoy it as much as we do.

1 teaspoon paprika
1/4 teaspoon pepper
1 1/2 lbs beef stew meat, cut into 1 inch cubes

  • In a large resealable plastic bag, combine 4 tablespoons flour, paprika and pepper.
  • Add beef, a few pieces at a time, and shake to coat.
  • In a Dutch oven, brown beef in oil over medium heat.
  • Add the water, tomato paste, bouillon, 1 1/2 teaspoons basil, 3/4 ts thyme, 3/4 ts garlic powder and bay leaves.
  • Bring to a boil.
  • Reduce heat; cover and simmer for 1-1/2 hours or until meat is almost tender.
  • Add potatoes, onions and carrots, Cover and simmer 30 minutes longer or until the meat and vegetables are tender.
