ASPARAGUS SOUP WITH HERBED GOAT CHEESE

Steps:
- Goat cheese: Line a small baking sheet with parchment paper. Set aside.
- Using a fork, in a small bowl, combine the goat cheese and basil until smooth. Season with salt and pepper, to taste. Using a 1/2-ounce cookie scoop or a round tablespoon measure sprayed with vegetable oil cooking spray, scoop the goat cheese into balls and arrange on the prepared baking sheet. Refrigerate for 30 minutes.
- Soup: In a Dutch oven or large saucepan, heat the butter over medium heat. Add the leeks and cook, stirring constantly until softened, about 3 to 4 minutes. Add the broth, asparagus and basil. Season with salt and pepper, to taste. Increase the heat to high and bring the mixture to a boil. Reduce to a simmer and cook until the asparagus is tender, about 15 minutes. Using an immersion blender, blend the soup until smooth. Season with salt and pepper, to taste. Keep the soup warm over low heat.
- To serve: Ladle the soup into shallow bowls and garnish with the herbed goat cheese.
- Cook's Note: The soup can also be pureed by ladling, in batches, into a food processor or blender and blended until smooth.

- 1. Cook orzo according to directions on package. Chop mushrooms and asparagus into bite-sized pieces. Chop each herb into small pieces (I use parsley/chives/thyme/basil). In skillet, sprayed with cooking spray, saute mushrooms and asparagus 3 minutes. Remove from heat; set aside.
- 2. When orzo has completed cooking, add the olive oil and stir (taste as you add-start out using only a little then add more-until you get the right taste for you), make sure you don't get too much olive oil. Add mushroom mixture; stir. Add herbs; stir. Top with crumbled feta or asiago if desired

- Bring a large pot of salted water to the boil and cook the broad beans for 5-6 mins until tender. Immediately plunge into a bowl of ice-cold water. Squeeze the broad beans from their pods and transfer to the bowl of a food processor with the olive oil, feta, honey, lemon juice and dill fronds. Season with black pepper and blitz to a smooth purée.

- Preheat oven to 425. Whisk oil with herbs, mustard, lemon zest, lemon juice, salt and pepper until well combined. Toss potatoes with 2 Tablespoons of oil mixture. Spread out on rimmed baking sheet lined with parchment paper. Roast for 20 mins.
- Brush 2 Tablespoons of oil mixture over salmon. Push potatoes to edges of baking sheet. Center salmon in middle. Roast for 10 mins.
- Toss asparagus with remaining oil mixture arrange along side of potatoes. Roast for an additional 10 mins or until potatoes are fork tender and fish flakes easily with a fork
- Caper aioli: Whisk egg yolks with lemon juice, water and garlic in a small non reactive bowl. Set bowl over a saucepan of simmering water(do not let the bottom of the bowl touch the water)Cook whisking constantly for 1-2 mins or till thickened. Remove bowl from heat cool 10 mins.
- Gradually drizzle oil into yolk mixture whisking vigorously until smooth and thick. Stir in capers. Plate salmon, potatoes and asparagus and serve the sauce on the side.
HERBED RICOTTA, ASPARAGUS AND PHYLLO TART
Steps:
- 1. Preheat oven to 400 degrees
- 2. Stir together ricotta, parsley, milk, thyme, garlic and 3/8 tsp salt.
- 3. Place 1 phyllo sheet on a baking sheet lined with parchment paper. (Cover remaining dough to keep it from drying out.) Lightly brush phyllo sheet with oi and top with another fhyllo sheet. Repeat layers with remaining phyllo sheets and oil, reserving 1 tsp oil to brush on asparagus.
- 4. Spread ricotta mixture on phyllo stack, leaving a 1/2 inch border. Arrange asparagus spears side by side over ricotta mixture. Brush asparagus with remaining 1 tsp oil. - Drop asparagus and onion wedges into a large saucepan of boiling water; cook 3-4 minutes.

HERBED PORK PAILLARDS WITH SUNDRIED TOMATO BUTTER AND ASPARAGUS

- For the compound butter: In a bowl, combine the softened butter with the sundried tomatoes, sage, parsley, Cajun spice, and salt. Whisk together until well blended. Transfer the mixture to a piece of parchment paper and roll into a cigar shape about 1 1/2 inches thick. Refrigerate until ready to use.
- For the pork: Slice the loin into 3/4-inch thick slices, and then one by one, cover with plastic wrap and pound with a meat mallet until each slice is flat and even (about a 1/4-inch thick).
- Season the flour with salt and pepper, and then dredge the pork in the seasoned flour.
- Heat the oil in a heavy bottom saucepan over medium-high heat. Season the pork with salt and pepper. Once the oil has heated, add the floured pork to the pan and allow to cook until browned, 1 to 2 minutes. Reduce the heat, flip, add some thyme and parsley, and repeat the process on the second side until finished cooking, 2 to 3 minutes. Once cooked, remove from the pan and keep warm. Repeat the process until all the pork is cooked.
- For the asparagus: Bring a pot of water to a boil and add salt. Trim the woody bottoms of the asparagus and peel the stalks. Blanch in the boiling water until bright green, 2 to 3 minutes. Remove from the water and season with salt and pepper.
- Place asparagus in the center of a serving plate, arrange the pieces of cooked pork on top, and top with a 1/4-inch disk of sundried tomato butter. Garnish with parsley. Store the remaining butter wrapped in plastic in the refrigerator.
