ROASTED BABY POTATOES WITH HERBS



Roasted Baby Potatoes with Herbs image

1/2 pound small red-skinned potatoes (about 1 3/4-inch diameter), scrubbed
1/2 pound small white-skinned potatoes (about 1 3/4-inch diameter), scrubbed
1 tablespoon herbes de Provence, plus extra for garnish
3 cloves garlic, minced
1/4 cup extra-virgin olive oil, plus extra for drizzling
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the potatoes into a large bowl. In a small bowl, whisk the herbs, garlic, and oil together until blended, and then pour over the potatoes. Sprinkle generously with salt and pepper and toss to coat. Transfer the potatoes to a heavy large baking dish, spacing them evenly apart.
  • Roast the potatoes until they are tender and golden, turning them occasionally with tongs, about 1 hour. Transfer the roasted potatoes to a decorative platter and drizzle with extra-virgin olive oil and herbes de Provence, if desired. Serve hot or warm.

Quick and easy recipe for roasted baby potatoes. Bake them at the same time as you cook your main dish! Can also be used as a quick appetizer! These were so good you don't even need butter or salt to taste. Made the mistake of having them done before the main dish and they were almost all gone by the time dinner started!

1 (24 ounce) bag unpeeled golden baby potatoes
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon chopped fresh rosemary, or to taste
sea salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine potatoes, olive oil, garlic, rosemary, sea salt, and pepper in a bowl. Toss until potatoes are covered and garlic is evenly distributed. Transfer to a rimmed baking sheet.
  • Bake on the bottom rack of the preheated oven, shaking every 5 minutes to prevent burning, until fork-tender, about 20 minutes.

1 pound new potatoes, assorted varieties and colors are great
6 cloves garlic, smashed
2 tablespoons finely chopped sage
Pinch crushed red pepper flakes
Kosher salt
Extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Cut the potatoes into halves or quarters, as long as they are all about the same size.
  • Place the potatoes in a large bowl and add the garlic, sage, and crushed red pepper. Generously sprinkle with kosher salt and olive oil. (The potatoes will absorb a lot of oil and salt; they will taste bland if we don't go big here.)
  • Lay the potatoes in a single layer on a sheet tray and roast in the preheated oven for 20 to 30 minutes. Check the potatoes halfway through the cooking process to rearrange so the potatoes will have even cooking time and get evenly browned. The potatoes should be nice and brown and really well flavored. Transfer to a serving bowl and serve.
  • Hot potato!

1/3 cup Dijon mustard
2 tbsp olive oil
1 clove garlic chopped
1/2 tsp Italian seasoning

Steps:

  • Parboil potatoes for 10-15 min. Mix all other ingredients in a bowl, then toss in potatoes. Place in a greased baking sheet and bake at 425 degree F for 15-25 min. Serves four.

13 russet potatoes, cut into 1-inch (2 1/2 cm) pieces
1 teaspoon baking soda
1 teaspoon salt
¼ cup olive oil
2 tablespoons garlic, minced
2 tablespoons fresh rosemary, or fresh thyme, finely chopped
1 teaspoon black pepper
salt, to taste
pepper, to taste
1 small handful fresh parsley leaf, minced to garnish

Steps:

  • Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.
  • Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
  • Combine olive oil, rosemary (or thyme), garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes.
  • Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.
  • Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.
  • Preheat oven to 425°F (220°C).
  • Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly.
  • Transfer to oven and roast, without moving, for 30-35 minutes.
  • Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.
  • Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.

My first posted recipe! I combined several recipes to create these; I was itching to make use of my herb garden but wanted to use baby potatoes. This fed six people, but as two of them were children you may want to increase the amount of potatoes. Also, this calls for 4 tbs of olive oil, but make sure you use enough to coat all the potatoes. I recommend pairing these with hamburgers and a salad.

1 1/2 lbs baby red potatoes
4 tablespoons olive oil
1 tablespoon fresh basil, chopped
1 tablespoon fresh rosemary, off the stem and chopped
1 tablespoon fresh oregano, off the stem and chopped
1 teaspoon garlic, minced

Steps:

  • Cover the potatoes in water and boil until tender, about 20 minutes.
  • While the potatoes are boiling add the olive oil, garlic and herbs to a large sauce pan and put on a low heat.
  • When potatoes are tender, drain and dry them. Rinse with cool water and then halve the potatoes.
  • Add the potatoes to the oil mixture and raise the temperature to a medium heat.
  • Cook the potatoes until the begin to brown (about 10 minutes). Be careful not to let the potatoes stick to your pan.
  • Remove from heat and transfer potatoes into serving bowl and season with salt and pepper.
