HERB BREAD LOAVES

The ladies from our church have frequent bake sales, and this bread is always a hot item. It only takes one taste to understand why that's so!

Yield 2 loaves (40 slices).

Number Of Ingredients 12

3 cups whole wheat flour
5 to 5-1/2 cups all-purpose flour, divided
2 packages (1/4 ounce each) active dry yeast
3 tablespoons sugar
1 tablespoon salt
1 teaspoon dried sage
1/2 teaspoon dried marjoram
1 small onion, minced
3 tablespoons vegetable oil
3 cups warm water (120° to 130°)
Milk
2 tablespoons grated Parmesan cheese

Steps:

  • In a large bowl, combine whole wheat flour, 1 cup all-purpose flour, yeast, sugar, salt, herbs, onion, oil and water. Beat with an electric mixer on low until moistened, then beat for 3 minutes at medium. By hand, stir in enough of the remaining flour to form a stiff dough. Place in a greased bowl, turning once to grease top. Cover and allow to rise until doubled, about 1 hour. Punch dough down. Shape into two balls and place in two greased 2-qt. casseroles. Cover and let rise until almost doubled, about 45 minutes. Brush tops with milk and sprinkle with Parmesan cheese. Bake at 350° for 40-45 minutes. Remove from casseroles to cool on wire rack.

BREAD:
4 - 5 cup(s) all purpose flour
1 package(s) active dry yeast (1/4 oz.)
1/4 cup(s) sugar
1 teaspoon(s) salt
1 1/4 cup(s) milk
1/3 cup(s) butter, cubed
2 large eggs
FILLING:
1/2 cup(s) butter, room temperature
2 clove(s) garlic, minced
1/2 teaspoon(s) onion flakes, dehydrated
1/2 teaspoon(s) basil, dried
1/4 teaspoon(s) caraway seeds
1/2 teaspoon(s) oregano, dried
1/8 teaspoon(s) cayenne pepper

Steps:

  • In a large bowl, combine 2 C flour, yeast, sugar & salt. In a small saucepan, heat milk & butter to 120 - 130 degrees F. Add to dry ingredients; beat just until moistened. Add eggs; beat until smooth. Stir in enough remaining flour to form a soft dough.
  • Turn onto a floured surface; knead until smooth & elastic, about 6 - 8 minutes. Place in a greased bowl, turning once to grease top. Cover & let rise in a warm place until doubled, about 1 hour.
  • In a small bowl, combine filling ingredients; set aside. Punch down dough; divide in half. Turn onto a lightly floured surface. Roll each portion into a 15" x 9" rectangle. Spread filling over each to within 1/2" of edges. Roll up jelly roll style, starting with a short side; pinch seams to seal & tuck ends under.
  • Place seam side down in two greased 9" x 5" loaf pans.
  • Cover & let rise in a warm place until doubled, about 30 minutes.
  • Bake at 350 degrees F. for 20 - 25 minutes or until golden brown. Cool for 10 minutes before removing from pans to wire racks to cool completely.
